Touring strategy - Columbus Day weekend trip

We'll be in WDW for about 3 days around Columbus Day weekend because of a conference. Unfortunately it looks like we may not be able to extend our stay to 5 days due to work conflicts. So, what would be the best strategy for touring the MK and Epcot (during Food & Wine) over Columbus Day weekend? I'm assuming rope drop will be the best option for seeing the most of the parks? Also, how bad are the crowds for MNSSHP over Columbus Day weekend?

This is the weekend we are coming as well. Wanted to do MNSSHP (never done it before), and this was the only time school had a reasonable break to make a quick trip. Everyone says avoid Epcot on Saturday, but that's when we plan to be there.
