Has anyone used the "individualized" touring plans on TP? I'm so afraid to book my fastpass+ times according to the wait times and walking times they provide.

I have used it for 2 trips, including one in July with FP+. We will be using it in March as well. It worked great for us. Sometimes, TP suggests getting to an FP+ later than I like, so if we need to, we will skip an attraction, go do the FP+, and then go back and do the missed attraction. However, usually we are ahead of the TP schedules, because they are just very efficient. I don't recall having any problems with their wait or walk times, except if there's a ride break down, which they can't predict. Don't be afraid to use them. You can always try them out, and if they aren't working, go with a back up plan. We have never had or needed a back up plan with TP though.

I've just built a bunch of a recent trip. What's making you afraid?

You can always book FP for when you want, add it to the plan, and then click "optimize". It'll rearrange around you. That's what I did, and it seems to work well. Plus, you can adjust the sliders if you want to build more time for walking (or minimize walking rather than wait time). I moved mine to "relaxed" because I've got a toddler and also want to take time for photos between rides.

TP's were very efficient for me on past trips, to the point that I never even used the old FP system. This is my first time with the new FP+, but so far the planning is working well.

This is exactly what we did for our 2014 Spring Break trip. It was so efficient for us that we rarely needed our FP's except for the obvious TSMM, etc. I highly recommend using TP.

Good Luck!

I did this, too. TP will just optimize based on what FP you have. Sometimes I found they wanted me to go to x at a particular time for efficiency, but I just "optimized" until that was the last thing outstanding and moved it to the FP time and then just "evaluated." My TP look great.
