We will be there on Oct. 5th. We will only be there maybe for 4 hours in the morning before going to the Disney Halloween Party! We like roller coasters (at least the majority). Any help will greatly be appreciated!
 
OK, based on your "handle" not sure if we have to take kids (and of what age) into the equation...

But as of today, here is what I would do on a Wednesday, which should be a nice slow day. (Based on teens and adults)

When entering the park, head left (south) to Ghostrider, a recently rebuilt Wooden Roller Coaster, amazing smooth, and now after the refurb, the longest and tallest wooden roller coaster on the West Coast. (And yes they add some new track to break the records). Then walk through Ghost Town to Pony Express, a fun family coaster, then keep walking down the path towards the Fountain and the train station, ride the great interactive dark ride, Voyage of the Iron Reef, just before crossing the track, make a left, and I would do both the Mine Train (believe it or not, it does technically qualify as a roller coaster, but in reality a dark ride). Then to Timber Mountain log ride. This was only the second log flume ride ever built (Bud Hurlbut, the well known ride maker came up with the idea, but since Walter Knott was dragging his feet, he built one for Six Flags.

Then head to Boomerrang, CoastRider and Xcelerator in the north west corner (all coasters)

Then head east towards Beach Blvd, and ride both Jaguar, a fun family roller coaster, and Montezooma Revenge.

Walk through Camp Snoopy (kids area) and ride Timberline Twister (kid's coaster) and Sierra Sidewinder (family coaster), then head to the Butterfield Stagecoach (All except one are original stagecoaches) and the GR&R Railroad. Also I would want to see both the Wild West Stunt Show and the Calico Saloon show, but that is based on when they are offered. Spend some time just walking through Ghost Town, have a late lunch at Mrs. Knott's Chicken Dinner restaurant (just outside the park).

Snacks in the park, a Funnel Cake covered with Boysenberry syrup, and a filled Churro (much better than what you can get at Disneyland).

That is a good plan that doesn't require too much retracing footsteps, and gets you to the main rides and all the coasters.

Just to add about the Mine Train, which recently got upgraded with new AA characters.

Why is it a roller coaster? Because it has a lift hill that is the main source of power for the vehicle. The weird thing, the lift hill is in the middle of the ride. so if you start at the lift hill, you are in the middle of the ride, and the Cavern, and work your way down the track at a slope until you get to the loading sections (unload and load are separate), and then the first part of the ride keeps going down the slope to the lift hill. The engine does have a small battery powered motor to help push for things like leaving the station, but has no real impact on the travel of the train. They use battery power (which is only charged at the loading platform) to eliminate all type of exhaust inside the ride building. (The main lift hill motor is also electric). So no thrills as a roller coaster, but the ride power system is the same. Interesting little fact.

Thank you Darkbeer1! Everyone in my party likes to ride the coasters! The mine train looks neat from the pictures online.
 

Unless Silver Bullet is down, definitely one you want to do. You can't miss it at the front of the park. And you will be able to do a lot on a half-day there during the slow season -- my sister and her kids did this and after a few hours they had to force themselves to take a break because they were walking onto almost everything!

Just got back from Knott's (Monday - Labor Day Holiday)

The longest waits were for GhostRider and Voyage of the Iron Reef, both at just over 1 hour.
 
Thanks for all your help! Another Questions...do they have a box to put your small backpacks in while you ride at Knott or do you have to pay for a locker?
 
No lockers are needed, though they do have them for rent (multi-use). (Near Ghostrider)

The big rides have bins to place your stuff at the platform. Some rides you just take it with you.
