Touring Plan Critique?

With a month away I started making some touring plans. Just quick plan of where we'll go in the park in general - nothing too rigid as far as what time we have to see stuff by. We are going in May when crowds are low so I don't know how important this will be. Third week in May still is a 3 according to UG.

If you are going in May this year, I'm not sure you'll find the crowds to be as low as normal.

As far as schedule, you always get on more attractions in the first two hours in the morning than the rest of the day combined. By 11:30AM, we usually leave MK, because the lines become bothersome. (We do the last week of April every year, which typically is not a crowded time of year.)

Most people would rather sleep in--that's why early morning is the best time in the park!!
 
We have been in May twice and the lines were still 20-25 minutes for lots of the attraction by late morning so I don't think you will get all of that done in 2-3 hours unless you are there early in the day. If you really don't mind waiting in lines then you might sleep in and get there around noon or so.

However, you might still show up early and really take your time and maybe even enjoy some of the other attractions. There are lots of fun attractions that I didn't notice on your list: Jungle Cruise, WDW Railroad, Peter Pan, Buzz Lightyear, etc.. I noticed from your signature that you are an adult only party in your mid-20's but even the "kid stuff" can be a blast for adults. DH and I started going to WDW in our mid-20's and some of our favorites rides are in Fantasyland. :)
 
The exact order of rides/attractions may change depending on showtimes, lunch, etc.
