Touring order: please take a look

We are super excited to be going after a few years with our tween teen kids. I am trying to make a plan to visit both universal studios parks (we have never been) and the Disney parks in march.
Are there better days for certain parks?
Is it better to arrive early and leave early or arrive before lunch and stay late in terms of lines?

Here is a tentative touring plan trying to decide if it's better to go to animal kingdom, Hollywood or Epcot. Won't have time for all 3

Sat half day: pool and dinner at the hotel
Sun: Epcot or other universal studios park
Mon: Harry Potter world
Tuesday: magic kingdom
Wednesday: hollywoodstudios
Thursday half day: Animal kingdom
