I think those sound like fantastic choices. The only one I have not yet tried is Citricos, and that's an oversight that I mean to correct as soon as possible.
bluezoo is a wonderful restaurant that I agree will spoil you for most other restaurants at WDW. Todd English, while painfully pretentious and arrogant in my opinion, is also an extremely talented chef/restaurateur who keeps a great eye on all of his properties and his teams always do fabulous jobs with cooking, presentation, service, etc.
As far as dining too late, I think the reason many people eat earlier at WDW is because they have children who need to eat earlier. Also, people from some regions of the country eat earlier than others (when we moved to Iowa from Boston, I was stunned at how early people eat here; it apparently harkens back to the farm days). But you'll still get great food later in the evening, and I'd hardly call any of your reservations "late".
