Tomato recipes please

Help buds I need tomato recipes. I've made BLT's till we're feeling BLechT. I'm thinking stewed tomatoes tonight if I can remember how. Any ideas?
 
Not really a recipe but what I do when we are swarming in tomatoes is to drop them in some boiling water so the skins come off easily (just a couple seconds), remove the seeds and then freeze them. When it's really cold outside and we make chili or spaghetti sauce we add the homegrown tomatoes. Almost makes the winter bearable!
 
Sounds great! I'll try that one. I make my own sauce so that would really add flavor to it. If I added basil, onion and oregano before freezing it could be the base for the sauce too. thanks,cgcw!

Zucchini-Tomato Casserole

Wash 2 medium zucchini and cut into 1/2-inch slices. Wash and peel 2 medium-size tomatoes and cut into small wedges. Thinly slice 1 medium-size onion. On heavy-duty foil, arrange zucchini, tomatoes, and onion wedges in 2 layers, using half of each vegetable per layer. Sprinkle EACH layer with salt and pepper to taste and 1/4 teasp. oregano leaves. Pour 1 tblsp. olive oil over top. Seal tightly and place on grill over medium-glowing coals (or medium heat for gas). Cook, shifting packet occasionally, for 25 - 30 minutes or until done to your liking

*I don't bother peeling the tomatoes.

Slice tomato, purple onion and cucumbers (basil leaves an option).

marinate in italian dressing.

Serve with sprinkled feta, goat or blue cheese.

AC, Ah Greek salad, I love it. Thanks for reminding me about toasted tomato and cheese it's an old fav I forgot about. Sometimes I add tuna to it. Reminded me of another one my DDad who used to make little pizzas at night while watching TV with english muffins as special treat for us kids.

Todays lunch is what I call my Greek sandwich. Feta cuke and tomato sandwich. I used to eat them in Greece all the time. They were cheap and I was always dieting. So hungry reading these recipes, I'm going to make it early.
 
Take an eggplant, and make cutslongwise, allowing it all to stay attached at the stem end. Brush each side of these eggplant slices with oilve oil and any spices you also like in it (garlic, and/or basil, and/or oregano, etc). Then between each slice add some sliced tomatoes and onions. Package it all in foil, folding the ends so you can check on it. Then just placeit on the grill and let it stew. Remove it when the veggies all are softened. It is really delicious and pretty easy.

Naturally it will depend somewhat on how much heat your grill produces, but on a pre-heated grill it seems like 20-30 minutes is usually enough. By folding over the ends of the foil you can peek at it and leave it longer if needed.
