You guys. Crock pot cooking will change your life. If you have kids and are rushed in the evenings, please get a crockpot!! I'm at work most days until 4, and I love coming in to dinner already done. Cook up a veggie side or chop a salad and 10 mins, your healthy dinner is on the table!
Stir fries are also good go to's. You can have veggies and whatever else all chopped and ready and then you just fry it all up in very minimal oil!
 
I think it's great to be able to stick to a good healthy diet . We don't do carbs , fast food , soda , junk , boxed food of any kind and we are in the best shape ( and health) of our lives . I know people use the cost as a excuse but we go to SAMs and buy tons of fresh fruit and veggies along with chicken breast and steak ; (yep steak) . We do a lot of protein including protein shakes using soy or pea protein and in 6 months lost over 30 lbs and eat more now then I did before .
The thing is you can't just eat well you have to exercise, DH , DD and I all go to the gym and eat well and we feel better then we have in years.It is really about how much you want it .
My DD is missing nothing nutrition wise by eating better , eating no junk or fast food so I think you can have a healthy diet and it still be just fine for kids .

I'm sure you're going to get sick of me:scared: but I am no longer enamored with crock pot cooking. Oh, I've done it for years. I have decided that I don't care for the texture of meat after it's been cooked that long--especially chicken. The best foods in the crock pot are those that are meant to be braised long anyway (and most of those aren't overly healthy--thinking short ribs, pot roast, etc). I know, I know...I've always got a negative comment. But it's just the reality for me. I'm picky in a really odd way. I eat most everything but it has to be a certain way or I'm just really blllllaaaaccccchhhh:crazy2: about it.

Lol! Everyone likes what they like, that's not a crime. We cook tons of stuff in the crockpot - mostly chicken, though - and it is always moist and fall apart tender, which I love! Just letting the busy mom's out there know that it IS possible to cook healthy and have kids :o I think it just depends on how badly you want it. It takes some time, organization, and adjustment, for sure. And for some people, it isn't as important, and that's totally cool!

Yes. I often chop up the vegetables the night before and they're ready to go the next day. Or I make soups and stews in the evenings to reheat the next day.

DW uses the crockpot for things like chili or pulled chicken/pork.

I'm not sure what was funny either ? I agree 100%! Not eating fatty processed foods is NOT a diet or is it extreme .. It's just being healthy . That processed stuff is garbage and why would I feed my family garbage ? I know people say you can't eat healthy at Disney but we do without a problem :) eating greasy burgers and plastic hot cheese flavored product it's GROSS..
 
I am one who thinks this style of eating is doable in any budget or amount of time. In the amount of time it takes to cook quinoa, I can get the protein, veg, and salad done. Dinner on the table in 25 minutes. Kids are at table doing their homework while I cook.

You can start small..any move towards eating less crap is a good move..

Buy precut veggies...broccoli, cauliflower, snap peas, etc.

Make a huge batch of meatballs and freeze.

Make a huge batch of plain quinoa on Sunday and keep it in the fridge...make each nights version a little different.

Swap out romaine for tortillas. Lettuce tacos are a fave here. Or pulled pork in lettuce cups with some fresh pineapple and cilantro.

We roast a lot of veggies...

I used to use my crock pot quite often. (I'm a way better cook when I'm not already hungry!) But it turns out my kid (like lots of kids, I've come to find out) has always hated "mixed together foods" - basically casseroles, stews, anything where several components of the meal are combined into one dish...Complicate that with the fact that DH has to closely watch fats due to some health issues, and most of the things I used to make in the crock pot are out. I still occasionally do chicken, but the days of having my whole dinner waiting for me are on hold until I search out some new recipes and get really disciplined with prepping things in advance. (I agree, though, that it's so nice to come home to the house smelling yummy!)

Oh well, nobody won the Powerball yet. - Maybe I'll have a personal chef of my own before long! HaHa
 
It's hard for me to take anything public-eye people say about diet/excercise/rest lifestyle choices seriously, particularly Giselle, queen of the sanctimommies. That said, I personally do better (physically and lab vales) with limited grains/beans/legumes, high vegetable intake, and moderate animal protein. I do okay as a working mom of a toddler with a hubs who takes on his share, but I would do even better if I had a personal chef. And chauffeur. And personal trainer. And investments that could provide a living for the next 5 generations on just the dividends/interest.
 
I think the diet looks great and bet the meals are tasty - - - since it's all prepared by a personal chef. I think I could manage on the diet if someone could prepare the food in a way that was tasty and did not take me 2 hours to make. Although, I would still allow sugar and desserts in moderation.
