Tokyo Dining and Teppan Edo with mild Shellfish allergy?

I'm going next year with a friend who I believe has a mild shellfish allergy. She goes to sushi and Japanese steakhouses all the time and doesn't seem to have a problem so I don't think it's so bad that cross-contamination is a huge worry, but I think she has issues if she outright eats shrimp or crab. But, she also really loves sushi and Japanese food in general.

I noticed that a lot of the sushi rolls at Tokyo Dining and Teppan Edo have crab on the online menus. Is that real crab or is it the fake crab stuff that's actually fish? She can do the fake crab stuff, but not real crab? Or do I need to contact Disney somehow?

Would we be better off at Morimoto Asia or Kimono's? (as far as her having more options on the menu) or is that a wash?

List the allergy on your ADR and remind them when you arrive and check in at the restaurant. They’ll identify which items are safe and which aren’t.

From experience, most of the sushi is the fake crab. I have the opposite allergy, I’m allergic to fish but not shellfish/crustaceans. I have a tough time finding crab sushi there that I can eat.
