To soon to talk turkey?


We do Thanksgiving style dinner every Thursday during November. We have already celebrated the first time this year on the 4th.

Aldi sells a boneless turkey roast that is all breast meat. Since it is not a mixture of white and dark, it is easy to cook it to a moist done rather than the usual dry turkey breast that results when cooking a whole turkey. Or we go to the Honey Baked Ham store and buy some slices of smoked turkey or some slices of ham.

For actual thanksgiving day we don’t get to cook. We have to go to the family Thanksgiving 250 miles away and eat their dry, overcooked turkey and nasty dressing.

I am thinking Covid is the perfect cover and I can bring my own food and say it is because I don’t want to eat off the communal buffet.
 
I'm starting Thanksgiving with a Friendsgiving next Friday. That will be 3 brined turkey breasts on Traeger.

Actual Tday, hubby and I will go to Seasons 52 with another couple. We both have kids that work on Thanksgiving, so its our tradition to get together if our kids are booked. Saturday will be our family Thanksgiving and I will roast one 10-12lbs in the oven and one 10-12lbs on the Traeger. He's in charge of that one.
 
I personally don't care for warm turkey, but I prepare a whole turkey for those who do like it. I spread butter over it, add salt and pepper, stick him in the oven and roast him until he looks like a dried up and wrinkled old man, always longer than the internet suggests.
 
Just ordered our 16-18 lb turkey and 5-6 lb. turkey breast from a local farm. This will be the first time in a long time we got a fresh bird. Usually I get a huge one as we usually have 50 people but since Covid we are only having a small (14 people) dinner....same as last year).

I usually brine the night before but I may try that Tyler Florence recipe above this year.
 
I bake mine, following the recipe in "Joy of Cooking". It's never let me down!

We tried a turkey in the Traeger one time, but didn't care for it so much. Dh was willing to try again, but the "Joy" method has worked so well for me, it didn't seem worth it.

I cook my stuffing separately.
 
I was just chopping celery and onions for the stuffing today! I usually do that in advance and freeze it. We put butter with poultry seasoning under the skin, stuff the bird, and roast it in the oven, with frequent basting. We use a meat thermometer to make sure the meat gets up to temp and then reposition the meat thermometer in the stuffing to make sure it gets up to temp as well. We always use Butterball turkeys and never have had a dry one.

Does anyone else like nibbling on the crisp turkey skin? We slice the turkey in the kitchen and take a platter of slices to the table. Our favorite part is nibbling on the crispy skin before the slicing.
 
I am going to research and see if I can do it like a chicken and put potatoes and carrots and onions around it. And I got the spiral ham just last Thursday. I send home left over turkey with everyone.

I use a tabletop roaster and slather the turkey in butter under and on top of the skin. The butter is seasoned with sage, thyme, parsley and garlic. Since I started doing this I have never had a dry turkey.

I also stuff the turkey.

Well we have fifteen coming to our house this year. I have ordered a turkey which I will wet brine and then smoke. I wanted to do two smaller turkeys instead of one large one as the large ones tend to dry out and not be as tender but DH vetoed that. (sigh).
 
My DH usually makes one of Gordon Ramsey's Christmas turkey recipes. It's delicious but a lot of work. He's thinking about smoking the turkey in our egg this year instead.
 
They were talking turkey before Halloween....at this point I guess its never too early to talk holidays.
 
I’ve decided I really don’t want the hassle of a whole turkey this year. It might only be my husband and I. So I’m just going to do a turkey breast in the crockpot with gravy. Nice and easy.
That sounds like a good way to prepare! I hadn't thought of using the crock pot. I usually just put it in the oven.
