We booked 12/18-12/24 my family of four but my Dad is going to meet us for a day or two. He lives a hour away from Disney, my 180 plus 10 will be here in a few weeks, since he doesn't know which days he will be joining us, should o book all my ADR for 5 and change to 4 once we know?
I know that the rules are new now & just trying to get the planning done early.

If I book just 4 would I be able to increase to 5 later?

It is always better to book for the higher number of guests, and then either show up with less, or call and have the number lowered. It is never a good idea to show up with more people, unless that is your absolute last resort.

Going from 4 to 5 would mean you would need a different sized table, and that can cause issues.

Make your reservations for the maximum number of people who might be dining. It is always easier to show up at the restaurant with fewer people than try to add someone or make a new reservation later. Just let the CM at the podium know that there are only 4 of you. As long as at least 1 person shows up you will not be charged for the person who didn't come.
