I am a complete "plan it" freak...and have really tried to keep it in check for our trip on TUESDAY..YEAH!!! so I am wondering, do I plan where to use our quickservice? or just walk and figure that out there...
 
I am also a planner. I make a list for each park of CS restaurants that we would like, and then, when we're hungry, we can see what we're close to.

In Epcot, for instance, we like Mexico, Germany, Morocco and Sunshine Seasons.

Planning for certain that you want to eat a particular CS restaurant is OK, but if you're across the park and it's hot, you might not have a closer backup and then you're disappointed by whatever you're left with.

This is what I do, though I don't have a formal list. I just have a enough of an idea of what is available for each park. DHS is the easy one--'cause there's nothing there I'm interested in eating. For this trip I'm planning to hop over to Epcot for lunch!
 
If you don't care if you have burgers and pizza all the time, don't worry about it.

If you wan't some variety and unique choices, review some of the CS menus to see what looks good. You don't have to PLAN, per se. But, it is always nice to be familiar with some of the menus so you feel you have more options and choice.

Cosmic Ray's has rotisserie chicken and rib dinner combos
Columbia Harbor House has Fish (kind of long john silvers)

HS
Cantina Eddie's has hot italian sandwiches

AK
yak & yeti counter option has asian cuisine
picnic in the park has various options (kind of like Boston Market meals) and a keepsake canvas bag. Order in the morning for later pick up

EPCOT the most counter service variety.
Each of the countries has some counterservice that is unique to that type of food.
Good ones are Tangeine Cafe in Morocco
Cantina in Mexico
Pastry shop in France

A lot of the Resorts have some unique counter service options as well
POFQ has beignets for dessert or snacks
The Polynesian has stir fried noodles, flatbreads, pulled pork and dole whips

Down Town Disney has excellent choices as well
Wolfgang Puck Express is notorious for Quality and value and has lots of menu options including spaghetti and meatballs with organic beef, amazing salads, 4 cheese mac and cheese, and of course gourmet pizza
Earl of Sandwich also has delicious sandwiches!

Just scan the menu page and you will find a lot of great options for a yummy CS trip.
 

I usually plan my CS meals because my DD is a vegetarian and not every CS restaurant has a meal that she will eat. Especially, the kids meals.

Totally agree with DoctorK, we like to have an idea of a couple of places we'd like to eat then when we get hungry we pick one of the closer ones. It can be a pain to walk all the way across a park just to eat at a CS.
