we chose a wedding at Loews Portofino Bay as we physically have more time in between parks to fit it all in (7 nights there then 7 nights GF but less to do in the non-Disney week), however we have now abandoned previous plans to have 2 nights in Cocoa Beach to do the Kennedy SC prior to boarding our Disney Cruise and are now doing 9 nights GF. My fiancé has just pointed out that this would re-open the possibility of a Disney Wedding....can I please get some thoughts on whether to switch? It would be the most basic package as only 4 guests. Thank you!

For 4 guests, Memories is the easiest route. But you would have to pay extra for his boutonniere (usually not expensive to add).
Keep in mind, there is no cake celebration or chairs allowed to be set up. And there are only 2 locations for Memories-- Conch Key Marina (the smoking area at the Grand) or Poly Beach depending on which you choose.
You do get a violinist and photographer. It's a very bare bones type of ceremony.

Yes, officiant DOES NOT count.

if i were looking at that length of stay and staying at the GF AND going on a cruise, i would look into a cruise wedding, assuming your other 2 guests (i'm thinking kids maybe?) are cruising with you? that or i might do whatever package or thing (i can't keep it all straight - not sure on memories particulars) would allow me to do some sort of in park bridal shoot (i know the rules on those keep changing too!).
