To all the chefs out there.....

Made someone's salsa recipe tonight - and it's EXTREMELY hot.

Any advice on how (with common things I'd have in my kitchen) I can cool it down?

Everything I've read recommends making a second batch, without the hot ingredients, and then cutting the new "cooler" batch little by little into the "too hot" batch. Good luck.
 
Well, then, though not "authentic," you could put some in a smaller dish, add a tiny bit of sugar, and then taste it to see if that helps...
 

Do you have lime juice or lemon juice? that might help, also the sugar suggestion the pp gave is a good one.
 
Sugar will often help balance the heat... but no promises. Add a little at a time and taste as you go.
 
Sugar balances bitterness or sourness, not heat.

Can you pour out some of the liquids and add more water or tomato sauce to dilute it?
 
Spice is cut by something with fat in it. You could melt some cheese and mix it in, use some sour cream or cut in a bit of cream cheese. The fat helps to sooth the heat if you don't have the ingredients to dilute the recipe.
 
Drink milk and eat plain bread .
 
Oh yes, Alton Brown did a bunch of experiments on his show once for cutting down the heat. Sugar didn't work. Water only spread the heat around in the mouth. He did mention sour cream, milk products and the Indians use yogurts in their recipes or served as a condiment on the side.
 
Sounds crazy but vinegar. Some local restaurants even have it on the tables to counter the heat. Plain white vinegar.
 
Yogurt or sour cream. Only dairy with fat (not just any fat) will cut the heat.

What ingredients did you already use?

Maybe a rinsed can of black beans, drained can of corn and or black olives would help if you have any of those.
 
All of the above (minus making more at mild and mixing with first batch) will alter the taste of the first batch.

So things like vinager, milk, sugar, lime etc will really make the first batch taste really "off" vs what you were shooting for. This assume you put enoughy in to counter the heat.
