Roasted Sweet Potatoes w/ Cinnamon Pecan Crunch
1/2 C Packed brown sugar (divided in 2)
2 T Orange Juice
2 t vanilla extract
1 1/2 t ground cinnamon (divided)
1/2 t salt
3 lb sweet potatoes, peeled and cut into 1 inch chunks
1 C dried cranberries
1/2 stick of butter (divided)
1/4 C flour
1 C chopped pecans (I just break them up)
Preheat oven to 400
In large bowl mix 1/4 C of brown sugar, juice, vanilla, 1 t cinnamon, and the salt. Add sweet potatoes and cranberries. Toss to coat well
Spoon into a 9x13 baking dish. Dot w/ 2 T butter. Cover w/ foil and bake for 30 min.
In a small bowl mix flour, remaining 1/4 C brown sugar, and remaining cinnamon. cut in remain 2 T butter with folk until coarse crumbs form. Stir in pecans. Remove sweet potatoes from oven and stir gently. Sprinkle w/ pecan topping.
Bake uncovered for another 25-30 min until sweet potatoes are tender and toppping is lightly browned. Makes 8 servings.
If you are bringing the dish to the host house, you can prepare the first half up to the point of the pecan topping. Finish baking at the host house
Ooooh, those sweet potatoes sound yummy! And, DH would love the bacon wrapped shrimp. However, due to my advanced pregnancy, I'm keeping things simple. We're not even having turkey (at the kids request), we're having brisket. My pumpkin pie is made, and DH told me to buy a pecan pie to save a little trouble. Everything tomorrow should be pretty simple, too. My oldest DD made jello for the kids, her first Thanksgiving dish.
