DH and I always make up envelopes ahead of time and lay one out each morning. I write Mousekeeping on the front and decorate with Disney stickers. On the back I leave a different message and thanks for each envelope. We always leave $5 a day for the two of us, and have always had great sevice, towel animals, extra towels and shampoo, etc. At the end of our trip DH usually leaves the coin change he has collected during our stay ( Since the airline security frowns on spare change) and leaves a bit extra.
