Generally, the ship will adjust her time as they travel through different time zones. So, IN MOST CASES, ships time is local time. For the ports that this is not true, MANY announcements will be made (at the show, from your servers, announcements ship wide, as well as a big sign as you leave the ship) reminding you what time to be back onboard (usually ships time).
Let me make sure I'm understanding correctly. So when on the DCL website it lists for Costa Maya the ashore time as 1:00 and the all aboard time as 5:30, that would be in Costa Maya (central) time and not eastern, correct?
There will be a note in your room to remind you to change your watches/clocks the night before the time will change on the ship. There will be another note the night before it changes back. Ship time will match the local time of the port you are in then. This was also done in Alaska.
