I am doing a split stay, CBR for 4 nights and then into a DVC Poly points rental for 8 nights.
If I buy 4 day hoppers with my first 4 nights, will I be able to go add on more days to these tickets once checked in so I can use them through my Poly stay as well?

Yes. Up to 10 theme park days, total, on a ticket.

If you want more than that, you can either leave some days w/o going into a theme park, or add Water Parks option and go there on the other days.

Adding- if you call, you can have the length of tickets on your first stay extended, in advance, so you are able to make park reservations
