If we get a 1 day ticket and then want to come back the next day are we able to upgrade the ticket to a 2 day as long as we do it before we leave the parks ? Or do we have to do that before we enter the park for the first time.

As long as you do it before the ticket expires you are fine.

So if we go into the park and half way threw the day we decide to come back the next day we can just upgrade even though we have already entered the parks for the day ?

you can modify the ticket/ add on, when you leave the park.
