Long story short, Family is going to Disney in October. I was considering APs, but now I’m unsure we would have enough time off of work/school to go again before APs expire (we don’t do FL in the summer, lol). So, I was looking at buying 8 days tickets instead.

I’m clearly out of the loop because I now see only 7 day tickets are for sale? If I buy those, can I add a day when I am there? I’m starting to think I should just buy the Gold AP.....
 

The longest ticket you can buy and use in 2020 is 7 days.

And no APs are being sold. You also cannot upgrade a ticket to an AP.

You can buy up to 10-day tickets, as usual, starting in 2021.
 
The only way to do 8 days this fall is to buy 2 separate tickets = 7+1. I'd think about whether that extra day is really needed, maybe you could do a non-park day.

Thanks everyone. We actually decided to shorten our trip to 5 days in park and one rest day. :) We are DVC and are going to save some of our points for fall 2021 and hope things are better by then! :)
