Ticket Help Please

I am visiting in October for 3 weeks - two of which are staying in a disney hotel with a 14 day hopper ticket and dining plan. The 3rd week is in lake buena vista (not a disney hotel). My question is does my ticket begin on the day I check into my hotel or can I leave the theme parks for a couple of days and use it at the end of my holiday? I understand the dning plan runs out at midnight on my check out day and I wasn't sure if the same goes for my theme park tickets?

Your ticket starts the first day you use it.
