I've never been to Universal, but I'm taking my son next month to see Harry Potter. I can't decide if one day will be enough or I should get a two-day. I wondered if there was any option to buy a one-day but then upgrade at the park if we decide to stay for two days?

Yes you can upgrade at guest services before the end of the day.
