"Thrill Ride" Day Trip Help!

My 7 year old has a love for all things thrill, and waited for the day when she would be tall enough for Disney "big kid rides". But by the time she did meet the height requirements, there was a new baby brother, and she's never been able to go on these. We're passholders, and I'd like to do an overnight trip with just her and I, so she can ride all the rides she's been missing. At the very least that would include all the "Mountains", Mine Train, ToT, Expedition Everest.

Any thoughts on the order of things and fastpasses if we go on a Saturday and leave Sunday afternoon?

I've not kept up with FP+ and AP, but if you can make FP+ ahead of time, I'd start there just to see what is available and when.

Will you be there for rope drop or an early EMH on Sat or will it be mid-morning/afternoon before you get there?

If you can get there, I'd start at AK's early EMH on Sat and do multiple rides on EE. Is Dinosaur on her list? Then I'd hop to HS and do ToT and RnR. RnR has a single rider line if she's up for it. If this works, you could probably get over to MK by early evening and use the parade/Wishes time to ride some of the mountains there. This way, you have Sunday for any redo's.

What about EP and Mission Space???
 
Rock n Roller Coaster.... and ask to wait for the front row! It'll be a ride she'll never forget.
 
Id do

Saturday HS/MK: fast passes in the afternoon/night for mine train, space, and big thunder. If you can't get mine train, then FP Splash. Hit HS at rope drop, go ride Rockin Rollercoaster, then ToT. Do anything else there then hop to MK

Sunday: hit AK at rope drop. Get a couple rides of EE done, maybe dinosaur or something else. Then if you want, hop to MK or HS and have fast passes set up for whatever you wanted to ride again
 

My DD and I have done this a few times. Last trip we scheduled out FPs at the last park of the day and we missed our times, so I would schedule them early. Go to MK early and use your FPs on all the mountains. Head to AK and do Everest, then to HS for TOT and RRRC, (maybe can get additional FPs?) We always add in Haunted Mansion and Dinosaur for fun! Test Track is our favorite ride but not much else very thrilling at Epcot.
 
Mine train would probably be the most necessary FP+ (and you can also choose 2 more mountains

EE, BTMRR and possibly ToT would least need FP+

RnR could be rope drop or late EMH easier.

Special trip aside, you guys need to get acquainted with rider switch.

Or just having one parent go off with the baby while the other rides the bigger rides with DD.


Next up, Universal. (their rider switch takes place inside the line, so you don't have to split up the family as early as you do at WDW)
 
Thank you all for the great tips! I'm not a huge thrill rider personally, but I'm really looking forward to this special trip!

I wish we had been able to take advantage of Rider Switch, but my husband passed before we took a trip as a family of four, so I do the single parent thing at Disney with two kids. But Now my son is old enough that I don't feel bad leaving him with a friend for a day, so watch out Disney, here we come!
