I'm looking for some recipes that the group leaders may be giving out during the meetings. Can we share them here?

I guess I will start.................

Frosted Pumpkin Bars
snacks
POINTS Value: 5
Servings: 24

Ingredients
1 2/3 cup sugar
1/2 cup vegetable oil
15 oz canned pumpkin
2 cup all-purpose flour
2 tsp baking powder
2 tsp ground cinnamon
1 tsp table salt
1 tsp baking soda
8 oz light cream cheese
1/2 cup light butter
2 cup powdered sugar
1 tsp vanilla extract
4 large egg(s)
1/2 container Mott's Original Apple sauce
Instructions

Preheat oven to 350 degrees.

Using electric mixer at medium speed, combine eggs, sugar, oil and pumpkin until light and fluffy. Stir together flour, baking soda, cinnamon, salt and baking powder. Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth. Spread the batter into a greased 13X10 inch baking pan. Bake 30 minutes. Let cool completely before frosting.

Icing:
Combine cream cheese and butter in medium bowl with a mixer until smooth. Add the sugar and mix at low speed until combined. Stir in vanilla and mix again. Spread on cooled cake. Cut into 24 bars.
 
Chicken & Dumplings

Ingredients
2 1/2 pound roasted chicken
1 cup onion(s)
4 medium carrot(s)
1 tsp table salt
1 cup Bisquick Original Baking Mix
1 tsp dried parsley
6 cup water
4 medium celery
2 tsp dried sage
1/4 tsp black pepper
1/4 cup 1% low-fat milk
1 Tbsp bouillon,any type
Instructions

Cook Chicken in water in large stockpot. Bring to a boil, reduce heat & simmer about 45 minutes. Remove chicken, bone and cube. Return to pot along with onions, celery, carrots, 1 tsp sage, salt & pepper. Cover and simmer 45-60 minutes. If broth is weak add chicken bouillion to taste. Fro dumplings, combine Bisquick, milk, parsley & sage to form a stiff batter. Drop by teaspoonfuls into simmering mixture. Cook covered approximately 15 minutes.
 
Brownie Cupcake Bites

Halloween treats don't get any sweeter. We made them mini so you can have a whole one and still have room for some candy.


Ingredients
21 oz regular brownies, dry mix
1/2 cup water
1/2 cup unsweetened applesauce
2 large egg white(s), lightly beaten
1 1/2 cup lite whipped topping
1 1/4 oz candy corn, about 24 pieces
Instructions
Preheat oven to 350ºF. Line 24 mini muffin tin holes with mini cupcake papers.


In a large mixing bowl, combine brownie mix, water, applesauce and egg whites. Mix 50 times with a wooden spoon (use 50 strokes); do not under mix. Pour brownie mixture into prepared muffin tins.


Bake cupcakes until a tester inserted in center of a cupcake comes out clean, about 12 minutes. Remove from oven and cool completely; remove cupcakes from pan. Before serving, decorate each cooled cupcake with a tablespoon dollop of whipped topping and 1 piece of candy corn. Yields 1 cupcake per serving.
Notes
If you're not a fan of candy corn, get festive with orange and black sprinkles.

Broccoli-Cheese Soup

Our cheesy broccoli soup is so creamy and delicious you'll never believe it's light.


Ingredients
2 tsp olive oil
1/2 cup onion(s), minced
16 oz frozen chopped broccoli
29 oz canned chicken broth
4 oz Kraft Velveeta Light Reduced-Fat Pasteurized Processed Cheese Product, cut into cubes, or similar product
1/2 cup fat-free skim milk
1/2 tsp garlic powder
1/2 cup water
1/4 cup cornstarch
Instructions
Heat oil in a large saucepan over medium-high heat. Add onion and cook 3 minutes, until soft. Add broccoli and broth and bring to a boil; reduce heat to medium and simmer 3 minutes, until broccoli is tender.


Reduce heat to low, add cheese and stir until cheese melts; stir in milk and garlic powder.


Whisk together water and cornstarch. Add mixture to pan and simmer 2 minutes, until thick. Serve hot. Yields about 1 1/2 cups per serving.
 
I made this one for work a couple of weeks ago and it was a HUGE hit, they couldn't believe it was a Weight Watchers recipe!

Praline-Pumpkin Cake

Take a break from traditional pumpkin pie and complete your Thanksgiving meal with this scrumptious pecan-topped pumpkin cake.


Ingredients
1 sprays cooking spray
15 oz canned pumpkin
12 oz fat-free evaporated milk
1/4 cup fat-free egg substitute
1/2 cup sugar
4 tsp pumpkin pie spice
18 1/4 oz unprepared white cake mix, 1 package
1/2 cup pecan halves, chopped
1/4 cup reduced-calorie margarine, melted
Instructions
Preheat oven to 350°F. Coat bottom and sides of a 13 x 9 x 2-inch baking pan with cooking spray.


Stir pumpkin, milk, egg substitute, sugar and pumpkin pie spice together in a medium bowl until smooth; pour into pan. Sprinkle dry cake mix over pumpkin mixture and gently press it into pumpkin mixture to moisten. Sprinkle cake with pecans and then drizzle margarine evenly over top.


Bake, uncovered, until knife inserted in center of cake comes out clean, about 50 to 60 minutes. Cool completely before slicing into 16 pieces.
