In the midst of planning our May trip I've found myself dreaming of Christmas. Am I crazy to start planning this early? Do the on-site hotels ever offer any special deals during the holiday season?

Nope your not crazy. I went at Christmas a couple of years ago. I planned my Christmas trip at the end of May and got a really good hotel deal through Expedia. It is possible.

I've already started planning out my DD's 5th birthday trip which isn't until June next year so I think your sanity is still in check. ;)

Well I've been planning our Dec trip since Dec last year so you're fine. :)

Just warning you that Christmas is THE single most crowded time of the year. But if you read all of the tips on these boards about how to handle crowds, you should be fine still. But some people are just very against crowds. Because of the HUGE crowds, the onsite hotels never have specials (except the normal AP discount) during this season. If you want to have a trip with the Christmas decorations and much smaller crowds, early December is one of the slowest times of the year at the resort and all of the decorations are set up.
