Things we've never done...should we do them this trip?

Fantasmic is an absolute must

It may be corny but Country Bears is fun and a great place for a cool 20 minute place to sit in the middle of the day.

We are huge fans of Lights Camera as well
 
The shows at Animal Kingdom are great. Festival of the Lion King, Wishes, and Fantasmic are three of my favorite things in wdw.

It's like a virus that can only infect those who venture to the Enchanted Tiki Room. It cannot be unheard!
 
my 9 year old grand-daughter loved expedition Everest, the Lion King, the carrousel of progress, and mission space. Flights of wonder we do every trip, be sure to sit down front near the side so the birds will fly overhead.
 

Definitely see the Lights Motor Action, Test Track, all the Mountains with a 13 year old boy... as far as the rest of your list they are all worthy of a visit except maybe Ellen. It will be tough to see them all in one trip plus hitting the headliners, I would just do them in between FP+
 
Country Bear Jamboree - this is a riot. I enjoy it. It depends on what you guys are into. He may be at the age where he thinks he's too cool for it, but I bet he'd love the humor anyway.
Space Mountain - YES
Splash Mountain - YES
Tomorrowland Speedway - this is up to you. I don't bother but I've never been a big fan of this kind of ride
Enchanted Tiki - now that it's back to normal, it's probably ok. That last few times I went it was "under new management" and was horrendous
Hall of Presidents - no --> I'm majored in history and I don't even like this attraction
Dumbo - If time allows
Carrousel - It's a carrousel. It you like them, go for it. If not, don't bother
Astro Orbitor - sure!
Carousel of Progress - Not a priority, but if you're looking to cool off while trying something new, give it a try
Tom Sawyer Island - YES!!!!!!!

Lights Motor Action Stunt - It's worth seeing once
Rockin Rollercoater - YES!!!!!!!
Tower of Terror - YES!!! Just don't do it after you eat

Expedition Everest - YES!!!
Festival of theLion King - Not too bad - Maybe check it out after eating lunch while waiting for food to settle
Nemo show - If you like the movie, you'll probably enjoy it
Flights of Wonder - Only if you really enjoy parrots and such. I've seen this sort of thing in other places. There was nothing unique but if you've never seen a bird show you may want to check it out.
Primeval Whirl - if you like the wild mouse type coaster, try this one. It's a little more fun

Test Track - worth trying once
Ellen's Energy - NO!!!!!!!! Too long and too outdated.
Journey into your Imagination - He may not want to bother with this
Either of the Inovention buildings - Yes! They are cool. First time I saw (and was able to get on) a Segway was here.
Mission Space - How's your stomach?? I love extreme rides. This one has left me feeling a little off for a few minutes. Of course, there is the Green Team experience which may not be as bad

Illuminations - YES
Light Parade - YES
Fantasmic - YES

Definitely do Carousel of Progress and Festival of the Lion King. They are 100% must-do's in my book. We only do Tomorrowland Speedway if there's a short wait, which isn't very often. Hall of Presidents and Dumbo are hit or miss- if we're in the area and have nothing we have to get to, sure.

EPCOT:
Test Track is also a must-do for us. It's been one of my favorite rides for many years. We always like to do Ellen's Energy Adventure and Journey Into Imagination for a chance to sit and rest, but if we miss it, it's not the end of the world.

I love Fantasmic, but the rest of my party aren't really fans, so if they agree to go, it's great.

Other than what I've listed, I didn't see anything that really jumped out at me as a must-do on your list. We're also Do-Everything people- do everything and then form your own opinions. Don't miss a ride or attraction just because someone on the internet told you not to do it.
 
Flights of Wonder. We ignored this for years, and now it's one of our favorite attractions.
 
Test Track, Tower of Terror, Expedition Everest are must-do's! Test Track.. Designing your own car & going 60 mph on race track.. So cool! I'd imagine a 13 yo boy would love it! We do all three of those rides at least twice each trip! Gotta do ToT once at night time. Spooky & fun! Also Expedition Everest is thrilling! We rode it two times in a row last year!
