Things to do on block out days (12/30 and 12/31)

After much debating, I think I’m going to go ahead and purchase Sorcerer’s APs for our upcoming trips. (We are DVC members.). I had originally planned on getting park hoppers for the December trip and upgrading at the end to use for our June 2022 trip, but I’m hearing that Disney will no longer allow that. So that means we can’t go to the parks the first two days of our December trip (12/30 - 1/7). We were planning to avoid the parks on 12/31 anyway, so no big deal. What are some fun ideas to do those two days? My kids are grown and flown, so we can certainly do some nice dining, maybe mini golf or spa day, and Disney Springs. Any other fun ideas?

Where did you hear that Disney will no longer allow it? We did this last year.
In another thread, someone reported an apparent change in policy. A CM indicated (via chat) that tickets that have been used during a block out period cannot be upgraded to a new AP. We were hoping to do just that. Perhaps it was misinformed a CM, but it makes me nervous that the reply was in writing and I don’t want to take a chance.
 

Resort hopping is fun for a non-park day. If you want to make an ADR at a restaurant at whatever resort you'd like to visit you can drive your own car, or if you can take buses from Disney Springs.

If you take a bus to one of the resorts on the Skyliner, you can ride as many legs of the Skyliner system as you please.
 
Have you ever gone to SeaWorld during Christmas week? -- They really out do themselves (so festive -- special shows and decorations, etc. are just outstanding), and although super busy it's not the same crazy busy as Disney. Anyway, this is something I would highly recommend.

Yes, that is a great idea, especially when they’re decorated for the holidays!
Have you ever gone to SeaWorld during Christmas week? -- They really out do themselves (so festive -- special shows and decorations, etc. are just outstanding), and although super busy it's not the same crazy busy as Disney. Anyway, this is something I would highly recommend.
What a great idea! We’ve never been to SeaWorld. We should definitely consider this!!!
 
If it were me, I would:
  • take resort transportation to the TTC, then a boat to Wilderness Lodge and have a late breakfast at Whispering Canyon.
  • Then take the boat from WL to Fort Wilderness and rent a canoe or a kayak.
  • Or go horseback riding
  • Or take an archery lesson at Fort Wilderness
  • And have dinner at the Hoop Dee Doo Revue, if it's reopened.
  • and I would absolutely do a partial spa day at the GF spa, followed by a cocktail at that fancy bar that they have there (I can't remember the name...it's the one themed after Beauty & the Beast) or an ADR for lunch somewhere at GF.
