Things to do and eat outside the parks?

I'm planning to be at the Swan + Dolphin for 3 nights (4 days) not in the parks next month. I know I can get a Swan boat for free there and want to watch the night shows somewhere.

I won't have a car and am looking for other inexpensive things to do by resort hopping or in Disney Springs. I read that we can see the animals at the AK Lodge and I may do mini-golf. Is there anything else that is like $20 or less? I'm especially interested in character experiences if they have any of those.

For dining, I'm looking for quick service in the $15 or less for a meal range, character dining or dinner with shows. How does character dining work at the hotels right now for dinner?

You could spend a day at Fort Wilderness as there is so much to do. We like renting kayaks.

You can go to Grand Floridian or Polynesian via bus/monorail and watch Magic Kingdom fireworks from there. We sometimes go to GF, order a pizza from the cafe, grab a table and watch the fireworks from there.
