Things for grandparents to do

We will take the grandparents along on our next WDW trip, and probably not our teenagers because of the college schedule. MIL and FIL were there ten years ago, before AK was open. We plan to spend 1 or 2 days at AK. They are in their early 80's and can walk, but will need to rest every so often. They won't be riding Space Mt and TOT like they did last time. It will be a slower pace.

I'm looking for things that they will especially enjoy during the week.

I know we will ride the monorail, take a boat ride whenever possible instead of a bus, Cirque du Soleil, and have nice dinners.

What am I forgetting, especially outside of a park?

Animal Kingdom will be challenge. The layout is very wide spread ( like a wagon wheel). The walking terrain, although not "rough" is bumpy in places and there are some inclines. We push my mom around in a wheelchair when we go to AK.
I would suggest 1/2 day there to begin and take in THE LION KING performance. It's OUTSTANDING!! IF you do have wheelchairs in your party, you'll be able to sit together. The live bird show is good,too. I would also suggest the "Tough to be a Bug" inside the Tree of Life. (also very wheelchair friendly seating) If they can transfer to the regular seat, make sure they do that, there's a special surprise!!
That might be enough for one day and then possibly another trip back, but since they are older and they've never been there, I would research this one thouroughly ahead of time ( times of shows, etc).
The safari ride is great too, but the ride is very bumpy.
