Morning, everyone. :surfweb: :sick::surfweb::sick::surfweb::sick: I just thought I would throw that in for all of us under the weather. I'm not sick, per se, just feeling the joys of being a woman, if you get my drift. Since going off the pill 2 years ago (LONG story), periods can really knock me off my feet. My mom is coming by this morning on her way to work. If don't get with it, I am going to lay back down for awhile after she leaves.

It's leftover stew for us today. I am SO glad I don't have to cook today. Although I've been thinking about whipping up some pancakes for Scott to have with his breakfast this week. They are easy so I think I might.

Forgot to add a recipe:

Swiss Chicken


• 6 skinless, boneless chicken breast halves
• 6 slices Swiss cheese
• 1 (10.75 ounce) can condensed cream of chicken soup
• 1/4 cup milk
• 1 (8 ounce) package herb dry bread stuffing mix
• 1/2 cup melted butter

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.

2. Arrange chicken breasts in the baking dish. Place one slice of Swiss cheese on top of each chicken breast. Combine cream of chicken soup and milk in a medium bowl, and pour over chicken breasts. Sprinkle with stuffing mix. Pour melted butter over top, and cover with foil.

3. Bake 50 minutes, or until chicken is no longer pink and juices run clear.

This chicken looks yummy!

At the end of the night, the broth would have completely 'sweetened' up from the cooking. I normally like to finish with some noodles at the bottom and poach an egg....and have lots and lots of broth!

Work and a bit of shopping today. Then it's home to dinner by UncleR...she's making a meatloaf and mashed potatoes. :cloud9: Comfort food at its finest, and it's right in time, because today it's supposed to start raining and not stop for 2 days.

Lindsay - I feel for you... That was me last week, and I am sure it was what had me throwing a pity party for myself... Hoe you feel better soon.

Jen - the chicken sounds really good, for some reason I really thought that there would be bourbon in the dish.... It looks and sounds delish.

Alison - Hello my friend hope you and Fran are doing well, and all the fur babies are getting along. It is almost time for your trip are you excited?

PIO - dinner looks amazing. We had, soup, egg rolls, shrimp with lobster sauce and kung pao chicken extra spicy.

I am feeling better this morning, I usually start out strong and dwindle by the day, but I need to get started on my exercises for my foot. I go back to the Dr on Friday.
 
Morning. Well, it started snowing yesterday afternoon, and snowed all night! My kids are excited, although, as they said, it came a month too late for a white Christmas. Oh well. Jacob wasn't thrilled when it came time to shovel the driveway and sidewalks.

Dinner tonight is tuna casserole. I need something warm and comforting. I'm still not feeling well, and have to try to find time to schedule an appointment with the doctor. You know it's bad when you hear gurgling as you breathe!

PIO - your pictures made me so jealous! I wanted Chinese food like that last night! Maybe someday!

Jen - I've tried that recipe before and really liked it!

Bourbon Chicken:

Ingredients:

2 lbs boneless/skinless chicken breasts, cut into bite-size pieces
1-2 tablespoon olive oil
1 garlic clove, crushed
1/2 teaspoon ginger
3/4 teaspoon crushed red pepper
1/4 cup apple juice
1/3 cup light brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 cup water
1/3 cup soy sauce
1 tablespoon corn starch

Heat oil in a large skillet. Add chicken pieces and cook until lightly browned. Remove chicken.

Add remaining ingredients, heating over medium heat until well mixed and dissolved. Add chicken and bring to a hard boil. Remove a few tablespoons of the liquid and place in a bowl, stir in corn starch and mix well to form a slurry. Return the slurry to the skillet and mix. Reduce heat and simmer for 15-20 minutes, allowing sauce to reduce and thicken.

Serve chicken over rice.

This looks so good, but I also wondered where the burbon was. If there is no burbon why is it called that. :confused3 Just saying....:rotfl2:

I posted this exact recipe a couple of weeks ago except mine was for the crockpot. You can place it all (chicken breasts were frozen) in the crockpot and cook on low for 6 - 8 hours. Just delicious.

Jen ~ Yes it was the Tomato Basil with Parm. - so very good I even have some for my lunch today.
As far as where Doug and I are sleeping. With having 3 kids we have a 4 bedroom house - thank goodness. So we are sleeping in Matthews bedroom. We have turned one into a pantry/storage room with shelves all around and the other one we turned into a small family room. Matthews is now our spare bedroom so that is where we are.

Glynis ~ oh sweetie, feel better soon. Coughing is no fun. I really did crack a rib once coughing so hard, so please get yourself to the Dr. You know if it was one of the kids, they would have already been there. Now GO!!!!

Alison ~ Was your mystery dinner any good? So glad to see you and Fran out and about.

PIO ~ WOW - just wow!!! I really enjoyed your pictures. I would so love that kind of meal. I have never heard of it so thanks for sharing.

PIO- that looks so good.

I had Shrimp Egg Foo Young, shrimp spring rolls and egg drop soup. They ended up giving me two things of rice so I will probably make some sort of stir fry this week.

Not sure about dinner tonight, I may just have leftovers from Sunday. Hopefully my DM doesn't decide to make shrimp and alfredo noodles. My cousins girlfriend made this for New Years and it is now my DM's weekly recipe. :sad2: It's good but just not a once a week thing.

Have to get some house cleaning done this week. Our waterheater is acting weird so we are probably just going to have it replaced. I have to get the family room taken care of so that the repairman has room to move around.

This sounds awesome... So a silly question, how much does the ingredients cost versus the cost of buying it? I have not done the math but just wanted to ask, I love making things and half the time I could buy it cheaper but I still make it anyway.

I am not sure to be honest...the raw ingredients were probably more money, but the difference in taste is very marked and makes it worth it!

Re: the confusion over the bourbon chicken, after reviewing the recipe my guess is that in the original, there was 1/4 cup bourbon instead of 1/4 cup apple juice in the ingredient list, and it got switched out along the way. Lots of people don't like to cook with alcohol.

It is raining like a cow peeing on a flat rock out there. :scared1: And I had to drive home...slowly...in it.

Plus, my supervisor and my director kept me chatting AFTER work was over. So, I didn't get to shop like I was supposed to. Hopefully tomorrow.

I came home to a wonderful dinner prepared by my lovely wife! Her meatloaf is the best! She also made some potato puffs that we had gotten from Omaha Steaks. I didn't much care for those, but the meatloaf was divine!!!

Well, there's been lots of rain and flooding overnight, with us getting several inches of rain. I'm at least going in to work late, as there's several road closures around and I can't see to drive in the dark. Hopefully, this rain will let up and I can get in later. Although we're supposed to get 2-3 more inches! :scared1:

I have no idea what dinner will be. We were going to pick up some fast food, but if I don't get to work, then I won't be doing that. So, we'll see!

I bet you are right. I cook with white wine if I am cooking for Buddy and me but if Dan and Erica are here I generally use apple juice or chicken stock.They do not want alcohol in their food. I have recipes that call for those ingredients because that is how I remember them now ;)

PIO- years ago I worked in a Chinese Restaurant. One of the many highlights was Chinese New year! Our sister restaurant would close early as did we and we celebrated!!!!!!!!!!! Then one of the owners would open his home and we had a more homey meal. That was the best food we had and our cooks rocked so that was wicked good food. I loved working there! Most of our cooks lived in Boston so they went home every Sunday night and came back for dinner on Tuesday. I closed on Tuesday nights so I got to enjoy all kinds of goodies they brought back. It was also Prep night because Tuesday night was our slowest night. I ate really well there!

I worked with this old crow who refused to eat any of the food. Okay, if she did not want the chicken feet I got that. I did nto want them either, but steamed dumplings? Sesame candy? Nothing. Not one bite but she would eat the Sweet and Sour Chicken off the menu but not S&S chicken that the cooks made for us. :sad2: More for us :thumbsup2

Dinner last night was a roasted chicken, stuffing, au gratin potatoes, corn and candied carrots. Grumpy Old Troll Cake for Buddy's birthday as well as his own Blue Berry Birthday Pie.
I have the three girls today so I am making soup and will have leftovers tonight.

I am sorry that I keep falling behind. I am in the winter blahs. Not bad, just blech!

The Chinese Food story is funny, B/C my neighbors make the most amazing food, some we like some we don't but we try everything it makes the world a more interesting place.

Brandi- Nola calls Buddy "Grumpy Old Troll" like the troll in Dora. SHe told me that Dora had one so she wanted her own Troll. :lmao:The girls were going to come for a piece of cake so Marisa had the baker write Grumpy Old Troll on it :rotfl2:


The woman I worked with was :confused3 How can you work in a Chinese Restaurant, work with chefs from different parts of Asia, and then refuse to eat the food? Really????? We had three meals a day cooked for us, and like you, I liked some things others not so much. Bitter melon is something I tried once and never will touch again! Saturday night was "American" food night and that was interesting! Our head cook Nanatized everything so there was no such thing as dinner without ginger ;) I loved it!
 
Chinese New Year - First Night Dinner

On the first night of Chinese New Year, family and friends will gather together to have a big dinner. I remember lots of open houses and lots of food as a child....but in Australia, we all just congregate at my mum's.

I am normally responsible for organising the starter - a special New Year's dish that we only have at this time of year. The dish is called Yuu Sang, which literally translates to Raw Fish. It is a salad of fresh vegetables, Chinese pickled items and raw salmon; topped by a plum dressing.

When we are ready to eat, everyone grabs a chopstick and cries out "Lo Hei" and tosses the salad....effectively, the Prosperity Toss.

The word "fish" or "yuu" in cantonese/chinese with a slightly different intonation can mean abundance. So, this prosperity toss is to signify and increase in abundance for the new year.



On the warm Chinese New Year night, the salad was a great starter.

We had a lot of the standard curries that my parents like to cook whenever the family gets together...

...but there was one other dish on offer that is also considered 'special new year' fare (it is also eaten at birthdays). The Long Life Noodles, which (naturally) signifies long life to the person(s) eating them. The noodles are left as long as possible. We had them with Lobster or Crayfish, symbolising the dragon year.

We also had dessert on this night. The one that I took pictures of was the Eton Mess. We assembled it after dinner.

It's Australia day here and a public holiday. It doesn't feel any different to me because Australia Day falls on a Thursday and I don't normally work on Thursdays anyway. But there are festivities in the city and fireworks tonight. It's a gorgeous looking day outside and DH and I are keen to head in later tonight to enjoy the fireworks. I'm guessing we'll have dinner out somewhere....not sure where.
