As far as the Chicken stock goes - I just buy the box - easy peasy and just as good IMHO>

Thank God it is Friday. This has been a busy week. Not a bad week just busy. I am ready for tomorrow. We are going shopping. And then out to Dinner and then we are going to the Hockey game with Marty and Stephanie. On Sunday we are going to Lincoln for a baby shower for Stephanie - her first of 3. I am really excited and can't wait. A busy but fun weekend.

We are putting in pod lights in the corners of the bedroom and are almost ready for the insulation, so that is what we are shopping for tomorrow. Doug got half of the ceiling down last night and will get the other 1/2 tonight. Then it is on to the lathe and old -I mean very old insulation. No wonder that room was SO cold. Hopefully the dirty dirty part is finished. What a mess I am in, but getting excited for the pretty outcome.

Lindsay, that is my go-to chicken stock recipe. I usually remove the chickens and other stuff from the pot before straining it--makes it lighter.

The DIS seems to be running OK at the moment so I will try and show some dinner photos. This isn't a dinner photo--they are mini mushroom-goat cheese fritattas baked in muffin cups. John and I took these for breakfast all last week--yummy!

Good morning.

It's Saturday morning here and I feel like I could sleep in for the whole day. But we're back to routine. Summer vacay is nearly over and school goes back in on Wednesday. DS' activities have all kick started and we'll be doing the standard weekly run-around.

Lindsay - I normally use 2 chicken carcasses for making chicken stock. I add carrots, leeks and celery; and all the Scarborough Fair herbs and peppercorns. Very similar to Ina's recipe.
Lately, I've been buying the (frozen) stock that my chicken shop makes and sells at the Victoria Market. These I use for soup bases.
I also use the commercial packs sold in the supermarket. These I use if I'm just cooking things that need a flavour boost.


Becky - lovely food. The quiche looks great.

Marilyn - Good that you didn't have to pay for the roof. What about the inside? Is it just a paint job?

Hi my friends... Back from the surgeon and dinner.

The surgeon was very pleased with my progress. He said I can get rid of the crutches on Thursday. That will be the one month mark and 3 days prior to the cruise.

Dinner was good outback.
 
Alison - Hello my friend hope you and Fran are doing well, and all the fur babies are getting along. It is almost time for your trip are you excited?.

Yeah, it's weird and hard to think of it as a "trip" since we're so close to Disney property. But this is the first time I've stayed three nights in a one bedroom with the intent to be park commandos and no fine dining! :eek: I am also watching the weather forecast intently. We have beautiful weather now and I hope it keeps up.

The furbanoes are so cute. The younguns travel in a pack when they are not sleeping. The funniest is when I get out of the shower, I have four little faces looking up at me like "what were you doing in there mom?" :confused3

Alison ~ Was your mystery dinner any good? So glad to see you and Fran out and about.

Brandi- Nola calls Buddy "Grumpy Old Troll" like the troll in Dora. SHe told me that Dora had one so she wanted her own Troll. :lmao:The girls were going to come for a piece of cake so Marisa had the baker write Grumpy Old Troll on it :rotfl2: !

Yes, today is Dr day, I go at 4 PM, and fingers crossed...

After that David is taking me to Outback for a martini and steaks!

Today was full of tedious work. Who would have thought putting up a For Rent sign would take so much work? :confused3. I also finished replacing all the interior door knobs at our next remodel job. I had to wipe down all the doors with TSP, they were COATED with nicotine. :eek:

WFD? We are trying out a supper club and the restaurant they picked for tonight is the Napa Rose at Disney's Grand Californian. One of our favorite restaurants!

That's great news! Do you still have to keep the foot above your heart? When do you leave on the cruise? I thought it was the 8th, but it sounds like sooner.

What a Friday. I was slammed at work with meetings and such. Then, I came home. And then the fun started...

First, I made a tamale pie recipe from Sandra Lee's cookbook. The recipe called for a Jiffy cornbread mix, so what emerged from the oven was a sweet and spicy tamale pie. The Jiffy was a bad choice...it was too sweet for the spice. It would have been fine had it not been the sweet cornbread.

BUT...5 minutes before the dinner was about to come out of the oven and before I finished taking pictures for my blog, the electricity went out.

I took pictures of my food in the dark. :headache: Then we ate the food in the dark. We decided the dish was too sweet and gross in the dark. And then we all sat in the dark for another 2 1/2 hours. :eek:

It was juuuuust starting to get cold in here when the lights popped back on. But now...we don't have water. :confused3

Tonight was supposed to be our date night in. We're postponing that until tomorrow. And I think I'm going to go pout about our night. :rotfl2:

Hopefully Saturday will be better.

Omigosh! :scared1: That's awful! I hope you have multiple bathrooms! Remember each toilet has one flush left! No water is sometimes worse than no power!

Today is errand day and we will probably eat at Jason's Deli. We have a busy day tomorrow so I'm thinking about whipping up a chicken pot pie I can bake off when I get home.

Sorry to post and rush off, but my third cup of coffee is calling!

Hey, everyone. Sorry I didn't get on yesterday, but things were bad here! I mean really bad! The main sewer line into our house backed up Thursday morning, and I didn't know anything about it. Timmy and I were out running errands all day long, and then I was gone to the Scout dinner after that. By Thursday night, it was nasty! Seriously! Alan tried to fix things, but our little 30 foot snake didn't do anything. So, at about 11:00 Thursday night we had to call a plumber. He didn't get to our house until about 1:00 Friday morning, but he was able to fix the problem. He found a "block" about 50 feet out from our house. He thinks it was tree roots (we have an abundance of Aspen trees here). So, by 2:00 the flood was subsiding.

Friday was spent cleaning up the hazmat ick in the basement. Luckily, it was confined to 2 rooms, so it could have been much worse. Right now, the plumber is sending a small camera through the sewer, to make sure that things are all clear. It's been crazy around here... that's about all I have to say about it, now!

Dinner tonight will be a recipe that Jen pinned on Pinterest. Corn and bacon pie. Sounds good and comforting. The only difference is that I'm not going to be making a pie crust. I've got a couple in the freezer, and since we've got Katie's play to get to tonight, I'm taking a shortcut.

I'm also going to be making some bread again. The 7-grain bread recipe I've found is fabulous for sandwiches, and the kids love it.

I haven't read back, so I don't know if I'm missing anything really important. Just know that I'm praying for all of you!

Glynis Boy your house don't do things in halfs do you? I hope you can catch a break.

Jen Sounds like you have a grand ole time. Do you know what caused the blackout?



Mr A is finally feeling better. Hopefully all the test results come in and he can go back to school Monday.

My MIL passes away this past week. I hope to hear tonight about the arrangements. A will not be able to attend anything outside. The cold air will start up the coughing fits again. He can not afford any more time away from school.

I am hoping February brings better luck January kind of sucked.

WFD is breaded pork tenderloin red cabbage and apples and a salad of some sort.
