Good morning y'all! It's cold out. Not snowing cold like my phone mistakenly told me yesterday, but cold nonetheless.

I have a busy day at work! But...there's only 8 more work days till Thanksgiving! :cool1:

Tonight's dinner is pineapple shrimp fried race ala Aimee!

Morning, all. The birthday dinner was a success. I realized that I really must love Jacob, because I hate making salmon patties! They are just a lot of time!

Anyway, it's over for another year. He was thrilled with dinner, and the donut as his cake. The rest of us enjoyed red velvet cake.

Tonight is Alan's late night at school, so I'm making something I know the kids will eat... Poor Man's Stroganoff. I'll put it over brown rice, which will not make them happy, but will make me feel more virtuous!

Here's how I make my salmon patties. This is a recipe my mom taught me, so it's more of a throw together, than a real measured recipe.

I had 4 large cans of salmon. I opened them and drained the juice into a measuring cup (you want to save this for later). Then I removed all the bones and as much of the skin as I could (you don't really have to do this, as the bones are soft, but it skeeves me out to leave them in). Mash the salmon with a fork. Next add an egg per can of salmon to the mix. Also, crush 1 to 2 sleeves of saltine crackers and add slowly as you mix the whole thing together. Sometimes you'll need all 2 sleeves, and sometimes you won't. It just depends on the consistency you like. Also use the reserved salmon liquid to help bind it all together. Add salt and pepper to taste. I like to let it sit in the fridge to help it meld together.

When you're ready to cook, heat a skillet and add a pat of butter. I use an ice cream scoop to scoop the salmon mixture into the skillet. Then I flatten them with a spatula. Now comes the hard part... you have to let them sit without messing with them for about 3 to 4 minutes until a nice crust has formed on the bottom. Then, flip them and cook until the second side is golden and crispy. Keep going with the butter and salmon patties, until you are all done. I like to put them in a warm oven while the skillet keeps cooking. It just keeps them nice and hot.

Serve with wedges of lemon or lime. I've used this same recipe to make tuna patties and crab patties. You can add some sweet relish, if you like, just for flavor. Cheese would probably be good, as well.

5 pounds sugar (10 cups)
1 shot glass whiskey
1 teaspoon pure vanilla extract

*We use Everclear, which comes in 750 ml bottles. You will need to buy two bottles of Everclear for this recipe, but you'll use only about 1 to 1 1/2 cups of the second bottle.

Peel lemons and oranges, being careful not to include any white pith or pulp. Place peels in a bowl and cover with alcohol. Soak for 1 week on the countertop.

After a week, strain lemon and orange alcohol and discard peels. Pour into a heavy-bottomed, large saucepan. Add milk, sugar, whiskey and vanilla. Bring to a boil, then reduce until just bubbling and cook for 5 minutes. Stir continuously, and keep a close eye on it so it does not boil over. Remove from heat and let cool completely. A thin film will form on top of the limoncello. Skim it off and discard, then pour thorough a fine mesh sieve.

Pour into bottles and freeze. Keep in freezer at all times. Shake before using.

Nancy- glad your back in the land of electricty.

Didn't realize I hadn't been on since Monday.

Yesterday morning was a bust. Took my godson for a follow-up with an ortho. His mom had to take her mother for cataract surgery, his dad is out of town and his other grandmother wasn't available. Turned out to be a complete waste of time. They didn't load all the MRI films onto the CD they gave them to bring to the Dr. and the radiologist hadn't read them or loaded them onto the internet. :headache:

To top it off the Dr. wasn't available so we saw his PA who said there was no fracture although the radiologist who looked at the regular x-rays said there was. :confused: They are supposed to look at the MRI's and consult with the radiologist and call his mother.

Dinner tonight will be homemade pizza. I have a Pillsbury crust in the fridge I need to use. Trying to decide what other toppings I want on it.
 
Jen – I hope that cool air makes its way here. I like cold weather in November!!!!!

Luckily, I came home to make Aimee's shrimp pineapple fried rice. :lovestruc I had made the rice yesterday, so all I had to do was dump things into the pan.

LONG day - got home after 9pm and ate leftovers. I did have lunch with a friend at a GREAT Mediterranean grill that has a lunch buffet so I really wasn't hungry until late anyways.

Tonight's dinner is cheeseburger macaroni. It's a new Pinterest recipe. Some people, who shall remain nameless in this household, have a love for hamburger helper. I won't touch that stuff with a ten foot pole. So, this is my compromise. :teeth:

Jen- I can't believe it was in the 30's by you, it was almost 70 here yesterday. I was working outside in a tshirt, granted I was splitting firewood so I broke a sweat within a second. I don't mind telling you where I work, but it's a fairly public position and I'm not comfortable posting it for the world to see. It's a seasonal job that depends on tourism.

Janice- That limencello looks like it would make great Christmas gifts, I wonder how it would be with a scoop of vanilla ice cream.

Not sure on dinner, we've been having chicken and salad for about a week now and I think the kiddo is about to revolt.

Well WFD? I think it will be Chicken and Dumplings....

I made the dumpling last night and boiled them in the broth and let it set over night, I always like them better the next day, something about them sitting in the fridge overnight...

Morning, all! Things here are good, but cold in the mornings!! Glad we have a working furnace, again!

Dinner last night ended up being soup and sandwiches. I spent most of the afternoon cleaning parts of my house. So much needs to be done before my dad gets here at Thanksgiving! He believes that every house should look unlived in, and mine definitely looks like 7 people live here. So, I'm deep cleaning my house in my "spare" time! I've got a schedule worked out, and if I stick to it (and with a little help from my family), we should be ok. The house will still look lived in, but it won't drive my dad crazy!

Dinner tonight is from Pinterest. Jen, you pinned it yesterday... the baked creamy spaghetti. I have everything on hand, and it looks yummy and easy. It's from the Plain Chicken blog, originally.

Jen - I used to love Hamburger Helper, and lived on it in college, but now it makes me shudder! Way too salty!

Kathy - Have fun at lunch today!

Robyn - Enjoy your time off from work (unless you get a year round position, and then, enjoy that!).

Hope everyone else is doing well! I'll try to pop in during the day, as I take breaks from cleaning!
 
Hey lassies, for various reasons I have not and will not be able to keep up here.
But after readin the last few pages you all seem to have gotten back to basics and are " cookin " up a storm, so I think we can all agree my " culinary " skills will not be missed !! :rotfl2:

If allowed I will pop my heid in from time to time and add my own unique tilt to things.

This is not goodbye.....I will be watching.:cool2:
