As long as you are not on the epicenter of a major one, it's no problem. However, been there done that, and that is not an experience that I care to relive, but it would be better than a blizzard and losing power for a week!
 
hey I had a long post ready to go and then deleted it to go post on my neighborhood FB page that I thought out cat got out. I was a mess. All of us, even T were looking for her. T was saying dont cry Mom. :sad1: We found the dang cat hiding in the closet. Never a dull moment in the Formrcastmbr house!

Anyway, welcome back Nancy!

Happy Birthday Jacob! Glynis, do you have a recipe for the salmon? My Mom mad awesome salmon cakes but I never got the recipe. I know there was potato chips involved though.

I'll post the recipe tomorrow. Gotta get cookin' now! We don't use potato chips, but I'll bet they would be yummy that way! My mom taught me to make them, and so I use what she used... saltines.

I made cream puff cake. So easy, BIG reward!

Cream Puff Cake

Ingredients:


1 stick (8 Tbsp.) unsalted butter
1 c. water
1 c. flour
4 large eggs


4 c. milk
8 oz. cream cheese, softened
3 (3.5 oz) pkgs. instant vanilla pudding
1 container Cool Whip
Chocolate syrup


Preheat oven to 400 F.


In a large heavy saucepan, heat butter and water to boiling over medium-high heat. Add flour and reduce heat to low. Cook and stir until it forms a ball and pulls away from the pan. Remove from heat and transfer to a large bowl. Beat in eggs, one at a time, beating well after each egg.
Spread in bottom and up the sides of an ungreased 9x13 inch pan. Bake at 400 degrees F (200 degrees C) for 35 minutes. Cool completely.


To make the filling: In a large bowl, combine cream cheese and milk and beat until smooth. Here's the trick, to keep things smooth: start with the cream cheese, give it a good beating until fluffy. Slowly but surely (while still beating), add the milk. Voila! Once these are well combined, add pudding mix and beat until thickened. Spread over cooled shell.


Top with whipped topping, and drizzle chocolate syrup over the top. Keep refrigerated until serving.

Tonight I tried two new recipes: Chicken Saltimbocca and Greek style potatoes with oregano and lemon. Both were winners! I'll post the recipes as soon as I get them up.

So glad cat did not get out. I remember taking care of my dad's cat once and thought she got out. I thought someone had ripped my stomach out through my mouth. That was a sick feeling I don't want repeated.:hug: Poor little T:hug::hug:

For some unknown reason I decided not to sleep last night, Just a series of short cat naps.

WFD will probably be a stir fry of somesort.

Good morning y'all! It's cold out. Not snowing cold like my phone mistakenly told me yesterday, but cold nonetheless.

I have a busy day at work! But...there's only 8 more work days till Thanksgiving! :cool1:

Tonight's dinner is pineapple shrimp fried race ala Aimee!

It's me again, Margaret! ;)

WDW is awesome! The chair lift at the pool is working so I have been a swimming nut! I got a touch of a sunburn yesterday, but not too bad.

I thought you guys might like a funny. If you've been on Facebook this morning, you already know this story (by the way, friend me! Send me a PM with your name and I'll add you!) We were at Boma last night for dinner. While in the dessert line, a guy around my age asked if he could give me a hand reaching anything. I said, "No thanks, I got it!" He said, "OK, let me know if you change your mind, partner!"

Like I said on Facebook, that got me so tickled I thought I was going to explode. I don't recall ever being called "partner" by anyway. It's was just so random. The guy was really nice and it was kind of him to offer, but the "partner" thing is something me and Scott have been joking about ever since.

Boma was really good! We've been there many times for breakfast but this was our first time for dinner. We really liked it.

Well, I'm off for the day! Talk to you guys soon!

ETA: For those of you who don't know, "It's Me Again, Margaret" is a Ray Stevens song. My mom and I have joked about it for years. When we call each other and the person says, "hello," we'll respond with, "It's Me Again, Margaret." Here's a link: It's Me Again Margaret
 
Nan – We’ve been very lucky that the last few hurricane seasons have been good to us. I love NOLA but have to say that if I could move, I would. Katrina changed everything for me and I am a wreck every year. I’m so glad things are getting back to normal for y’all.:hug:

Alison – I hope Fran was able to get out of the house and enjoy it!

Janice – My back is a lot better. Not good yet but better. I can’t sit or stand in one position for very long and you know how irritable I get when I can’t get to the gym and that’s really got me frustrated. Thanks for asking.:hug:

Jen – I hope that cool air makes its way here. I like cold weather in November!!!!!

So I guess we are keeping this recipe.... :cool1:
