Allison Once Fran is off the antibotics her appetite will return. Just make sure she eats something otherwise the drugs will tear her up.:sick:

She did ask what's for dinner, I told her, "heck if I know!" Although it's six o'clock so I better figure something out. Oh yeah, she said the Spinach Salad I picked up at Costco would be plenty good for her. I will need sometihng else.
 
Perhaps you might try a rice noodle instead as well, I prefer the texture of those in Asian style food to using a semolina wheat product. Oyster sauce is great! A friend of mine introduced me to that about 25 years ago and it gives a real Asian flavor to your cooking! Congrats on a new ingredient.

***My notes: The thin spaghetti didn't have enough "girth?" :lmao: for this dish. It needed a thicker noodle, either a thick spaghetti or even a linguini. Also, I found the sauce to be too thin, so I made a slurry with some of the liquid and some corn starch and added it in to thicken the sauce. I didn't have beef broth (thought I did) so I used chicken broth. It didn't seem to matter. The flavor was phenomenal. This was easy and yummy! And it was the first time I'd used oyster sauce in anything. :banana: I've expanded my ingredient repertoire! :laughing:

When my family first came to Melbourne, Asian ingredients were not exactly easy to find. My mum resorted to using spaghetti as a substitute for noodles. As Alison said...it lacked texture. For a while, we just used rice noodles instead. And then it seemed, overnight, Asian ingredients were everywhere and now even the mainstream supermarkets stock fresh noodles!


And welcome to the world of Asian condiments! :banana: I hope you won't stop at oyster sauce! :laughing:
 
Penne Puttanesca

I definitely took inspiration from this thread last weekend. What with Aimee's lasagne and this dish, we ended up with a pasta festa and I'm just catching up on posting my pictures. Today's entry was inspired from Becky's picture of John's Penne Puttanesca.

I was first introduced to this sauce when I was at university....way too many years ago. A bunch of us decided to go camping over Easter break and we were doing it the "proper" way. None of this campground with facilities luxury for us students....we were going to go bush, with shovel. Suffice to say that after 4 days, none of us smelt real nice...but that's another story.

One of my friends was Italian...Sicilian! And he decided to take charge of the cooking. Naturally pasta was going to be a feature...and he decided to educate us non-Italians with different types of sauces. He served up Sphaghetti Puttanesca on the first night. Unfortunately, he forgot to bring a colander...so our Puttanesca came value added 'con terra e erba'. :eek:

Whilst he was cooking it, he regaled the origins of the sauce. Of course the Puttanesca was the most saucy of the lot...with folklore being that it was cooked by the Ladies of the Evening (Puttana) whilst the men were 'waiting'. It was definitely 'fasta pasta' to cook!


My starting ingredients:

  • Penne pasta, about 100 g per person
  • Anchovies, 1 tin – chopped
  • Onion, medium – chopped
  • Garlic, 1 large clove or 2 medium/small cloves – minced
  • Tomato sauce or tin tomato, 1 cup or so – I had some leftover bottled sauce in the fridge. I know that most of you make your sauce from scratch but for the weekdays, we always used commercial bottled sauce because it is quicker and simpler!
  • Pitted Kalamata olives, ⅓ cup (or about 20 olives) – sliced
  • Green stuffed olives, ⅓ cup (or about 15 olives) – sliced. I use the spicy marinated ones because I always ask the server to include 2 pieces of the next ingredient for me
  • Red Chili, 1 tablespoon or to taste


Boil the pasta whilst making the sauce. Penne takes about 14 minutes to cook; so I usually time it so that the sauce is ready just after the penne is cooked and drained.


In a large pan, empty the contents of the anchovies including the oil (no point wasting that good oil). Fry on low heat for 2 – 3 minutes.

Turn the heat up to medium/hot. Add the onion, garlic and chili into the pan and cook until the onion is translucent.

Whilst I was cooking…..I noticed something sitting nearby. Do you see what I see? :rolleyes1

Okay….my ingredients included a splash of red wine too.

Maybe it was a large splash! If so, reduce for 3 – 4 minutes or so before adding the tomato sauce to the pan.

Stir to combine the sauce and then add the olives.

Cook for a further 4 – 5 minutes (by which time, the pasta should be al dente).

Add the drained pasta to the pan…

…and gently toss through the sauce.

*Ok, my Pretty Little Liars story. Before my last trip to WDW, I was told that the PLL series is a good, fun read. I was in the middle of reading The Bone Collector when I left, but downloaded the first PLL book to read when I finished. A day or so before our trip ended, I started the book and absolutely couldn't put it down. Scott was getting mad at me not talking to him while he drove and reading instead. LOL, I couldn't help it!

I loved The Hunger Games - I borrowed them from Lendle.com for my Kindle (free!). Totally not my genre usually but I couldn't put it down.

Thanks for the mention of the Pretty Little Liars - I may have to buy them!

My new stove is being installed today! I am very happy. I see some bread baking in my future. It's nothing high end but at least it will work!

It looks like the Dr. is going to extend Fran's medication out to 10 days instead of just 7. Things are improving, but she wants to make sure it goes away. I didn't feel like a zombie this morning when I woke up. For the past three days I've got up, hooked up the IV and gone back to sleep in my chair, but today I felt pretty good. I'm going to try to book a massage for tomorrow afternoon.

I'm glad there has been progress, and that you're feeling more human. Hope you can get that massage!

Without internet last night we watched a movie! We watched "Bridesmaids", which was so dumb, inappropriate and hilarious at the same time. I'd caution you if you don't like more "out there" humor, but if you're not opposed, it's a hilarious movie even though it's not the best movie out there, kwim?

I went with a bunch of church friends and we DIED laughing through it.




I had a fairly rotten encounter this afternoon - via email which is NEVER a good idea - that sort of ruined the day. Thankfully, it was Wed so I got to end on a high note. I got home and remembered how angry I was, though :laughing: Maybe tomorrow will offer a resolution...

Guess what?-----------------It's snowing. I am already tired of winter. Tonight is our Church Conference and I am worried there won't be a crowd. We have worked so hard on this, that it will be a shame if no one shows up. Oh well it is what it is.

Hey, Glynis, is this the molasses cookie you have posted in the past? If it is, I can testify that they rock!!!!! I plan on making them when I start baking for the holidays.

I will warn you, Pretty Little Liars is TOTALLY a teen read and can be a bit cheesy, if you know what I mean. It's great if you want some good "fluffy" reading.

Speaking of PLL, if anyone watches the tv show, I am in the process of growing out my hair like Aria (Lucy Hale). I'm almost there, I just need about an inch more in length, then I will get the layers done. Here's a pic: Lucy Hale

Yup! I love them! They are totally Fall and Christmas! They make the house smell so wonderful while they are baking!
 
Good morning, everyone! It's the first Thursday of the month, and that means BOOK CLUB for me!!! I'm so excited because I've missed the last 2 meetings for various reasons. I'm so thrilled to be able to go tonight!

Dinner will be Katie's fried rice. She can make it and feed the kids and Alan. Hooray! I get a night off!!!

What are you reading right now for book club? I am always looking for suggestions.

Marisa, I am sorry you are still without power, ugh....

So, John's business dinner got moved back to this evening, so I was able to make the Thai food I had planned last night after all. All the recipes are in the current Cooking Light magazine. Everything was so delicious! I made Thai sticky rice, roasted eggplant relish, and chang mai lettuce wraps. I did substitute ground turkey for the ground pork in the lettuce wraps because I don't like pork, but I made up for it by sauteeing the patties in coconut oil ;) Here is a picture of the finished platter:

I had additional fish sauce and also sriracha (not authentic but who cares) sauce out for seasoning the lettuce wraps. John demanded some of the leftovers for his lunch today :laughing:

WFD: something easy! I have some beets to use up so maybe something featuring those. Although I have been craving french onion soup lately...

The book we are discussing tonight is "Pope Joan." It was a fun read. I found the back story more interesting than the novel, but that's usually the case when you read historical fiction based on a real person.

Next up is "Looking for Salvation at the Dairy Queen." I know nothing about it, so I'm hoping it's good!

Has anyone gone to Bonefish Grill? What did you think?

I have been once, and it was a long time ago, but it was pretty good. The Bang Ban Shrimp were so good and I had a fish dish that I think may have been Rockfish. I know it had a goat cheese and spinach on it but it was really good too.

Dinner tonight is pizza, salad, wings, I have a meeting.
