I googled and have added it to my list of must-tries.

I will have to trick my wife into going. I just won't tell her what kind of food it is. :idea:

I took a nap. I'm feeling a bit better. We're having taco soup for dinner.

I'm going to do some sort of food craft with my students next week for Halloween. I'm trying to figure out what I can do. :dance3: I've been searching the internet for easy food crafts that don't require cooking. It's a good break for them AND me from speech therapy.

Other than that...tomorrow's Thursday. :cool1: Can't wait for the weekend to get here so I can continue to rest.

Our town's McDonald's opened today. You couldn't even get in the parking lot as I drove past this afternoon. :lmao:

I just wanted to stop in and say I probably won't be back on until we get back. If I get a chance and get some decent pics I'll try and post some. We're in countdown mode and tomorrow will be hectic. We fly out Thursday morning so y'all be good and cook some good stuff!!!:goodvibes

There is a thread about mashed potatoes and I read the whole thing so all I could think about was adding mashed potatoes and gravy to dinner. We had an apricot glazed pork, mashed potatoes and gravy, butternut squash and baby peas. Buddy had tomatoes and onions salad. I baked an apple spice crumb cake for dessert but no one had any.

:rotfl2: A whole THREAD about mashed potatoes! I wish I could eat those, but with my supposed diet. :rotfl:

Today is Wednesday and dinner was at Mum's. I'm still in-between contracts and am hoping to be placed soon. In the meantime, I'm doing the best I can to stay busy....or at least...pretend to be busy. *sigh*

Well, this week I have a solo in our choir. During rehearsal tonight (in the sanctuary), I will be mic-ed and have to sing it. I know, I know, this sounds soooooooo trivial, but the simple act of having my nails look nice will give me confidence. This girl has made me feel so bad about myself, it isn't funny. But I find joy in the little things and this is one of them. So I must get them done today. I am a self-admitted nutter butter :angel:

Have a great time in WDW :yay:, and you will knock 'em dead on your solo. It really irks me when musicians intimidate other musicians. :headache:

I'm home today. :sick: It's been a rough night and morning. I think my immune system is still weakened from the surgery. I'm never sick this much. :guilty:

I figured out what is wrong with me lately when Marisa had a "Disney Moment" at work. I am having an "I Miss Disney Week" :sad1: I cannot get off of the boards lately!

WFD: not sure. John is coming home from Germany tomorrow night (a day early, yay!), so I have to think of something that he finds especially unappealing to make for me this evening. :laughing:

We ate Souse meat and saltine crackers also, very much like scrapple. I think the Souse is chunkier than Scrapple.... We were poor growing up so we ate right off the farm, my family grew, raised, canned, and swapped for the things we needed.

I can remember going to school in the first grade and having pasteurized milk for the first time. I had never seen milk in a carton.

We went and got it from the cow and had to shake it up before drinking it so the cream would be mixed back in...

Those times were much simpler....

Wow! It's amazing how differently we have all grown up. It's great and allows us to be individuals. I was raised by a "proper" Bostonian family, everything "almost perfect" we bought our food all packaged up at the grocery store and ate all kinds of hoighty toity food. It wasn't until I moved out for college that I learned about casseroles, chicken fried steak, corned beef and cabbage, plates of food covered in gravy, chicken and dumplings, and fried bologna!

I'm still not a fan of the fried bologna, but I do know how to cook it so that it doesn't curl up into one of those little bowls! :lmao: :thumbsup2

Ok dinner tonight is grilled chic:confused3ken or meatballs. Hmmm decisions decisons.

David nixed the idea of grilled chicken so we had country fried venison steaks, roasted Brussels sprouts with creaked potatoes.

I must admit it was much better than chicken.

I usually have to buy the smaller bottles just to fit them on the shelves! Besides I have five different kinds of oil in my pantry! That doesn't include the Sesame oil that I keep in the fridge :lmao:

I don't cook every meal, just dinner most days and sometimes lunch on the weekends. But I have a family of 4 with 2 very hungry boys. And, I don't believe in making anything from a box. Everything's from scratch! So, we use a lot of spices and condiments. Sam's is the best place to get that stuff in bulk for better prices!

Aimee - I work as a management consultant; so that means I have the pleasure of working on anything that a client/company doesn't want to do or finds too hard. I've been doing a lot of project management work lately; IT and Business. Just finished up a project in a large mining organisation and at the moment, there are a couple of opportunities back in the telecommunications industry that I'm hoping will result in a contract. Australia is rolling out a new national broadband network and I'm hoping to get on that project. But in true consulting form, something else will probably come along out of left field.

So, I've pulled out two chicken breasts on the bone from the freezer and am hoping it will defrost in time for dinner. If so, I think I might just do a simple roast with lemon and thyme for DS and myself. If I make some vegies on the side, I'm sure that will qualify as 'plain' food for DH.

This is where serious relationship issues occur. I REALLY would not want to put my name on anything that comes out of a box, but I often have to cook for large parties of musicians. Fran has literally threatened divorce if I don't make "instant potatoes" :sick: I try to strive for a balance of what makes her happy and doesn't have me cooking over sodiumed, prepackaged garbage.

I read it that the chicken was for PIO and son, and the veggies on the side were the "plain food" for DH.

So, I came home from work and went nuts in my house! I did two loads of laundry, a load of dishes, and completely sorted and reorganized my closet in anticipation of the coming colder weather. After all that, it was 8 PM, so instead of making something complicated, I fell back on the good old BELT, or Spanglish (the movie) sandwich. You've seen it a bunch of times, here it is again:

So much for making something I enjoy but John doesn't like, I think this is his favorite sandwich. He'll probably want one when he gets home tomorrow haha.

DH doesn't eat chicken. As Becky figured out, the chicken was for me and DS. DH can eat the potatoes and carrots and he's put a salad together. I also found some green beans in the fridge....so I might just cook that up as well.

And in my home, there are times where "out of a box" is easier...for convenience. If I didn't take this option, we would never have peking duck at home! And that's one of DS' favourite meals.

Lemon, Parsley and Thyme Butter Roasted Chicken


My starting ingredients:

  • Chicken Breast on the bone, 2
  • Butter – softened, 2 tablespoon
  • Thyme – leaves only, 1 teaspoon
  • Parsley – chopped, 1 tablespoon
  • Lemon – rind grated and juice, about 2 tablespoon
  • Water, ½ cup


Pre-heat oven to 200 C.

Mix butter, thyme, lemon rind…..

Place the chicken breasts on a roasting tray, with the water underneath. Generously smear the butter over the skin of the chicken breast. Squeeze the juice of the lemon over the breasts.

Roast in the oven for 45 – 50 minutes, until the skin is golden brown. Remove from oven and allow to rest for 10 minutes.

In the meantime, make a sauce from the pan juices.

Scoop off excess oil and transfer to a pot. Apply high heat. I added a chicken stock cube and a little more water to the pan juices for additional flavour.

Add some corn flour mixed in water to thicken.

I served this with garlic and rosemary roasted potatoes (see below post), roasted carrot and a butter-leaf lettuce salad.

Garlic and Rosemary Roasted Potatoes


My starting ingredients:

  • Potatoes, cut into cubes
  • Garlic, about 1 clove for every 2 potatoes
  • Rosemary, a generous handful
  • Olive oil
  • Salt




Cut the potatoes into cubes, leaving the skin on. Add the garlic and rosemary and splash a liberal amount of olive oil to coat all the ingredients. Season with salt.

Cook in oven (with the chicken) for about 60 – 70 minutes, turning over the potatoes once.
