The What's For Dinner Thread - October'11 (recipe index in OP)

Tonight we are having beef and bean tostadas.

The kids are really excited for this...anything with beans and they are :cloud9: :confused3
 
Morning all.

I haven't had my coffee yet nor breakfast....so dinner? I have no idea what's for dinner tonight (yet)!


Two days back at work and I love being back in the routine. I'm the type of person that needs to be busy in order to get things done and I'm sad to admit this...but work is my motivation for being orderly and organised. One of the reasons why I hate being in-between assignments is that I just have so much time that I put everything off till the next day. Inherently, I'm a procrastinator. But when I'm at work and being kept busy, the attitude spills over to the rest of my life.

So, today is Thursday and I don't work (for money) on Thursdays. I get to do the SAHM thing and will be dropping DS off at school and then catching up with some of my 3D friends for coffee. And then I'm going to start my Christmas shopping; which includes shopping for cake ingredients. If I get my fruit soaking today, I'll be baking my Bourbon fruit cake at the weekend.

I've also taken out my Christmas cards out of storage and will be starting to write those as well. I usually buy my cards on 26 December last year for this year....much cheaper. Writing at christmas is my once a year data dump that I do with my friends that I don't see very often and I missed out last year because FiL passed away. I normally handwrite our news; but this year, I think I'm going to type a letter and print it out for inclusion in the card. :sad2:


Lindsay - Take care of yourself. And don't worry about the index.

Janice - I need to stick a picture of a chubby person on ALL my mirrors too!

Nancy - The US marines will be stationed up in Darwin; which is about as far from Melbourne as Chicago is from Miami. It is near the equator and very tropical in Darwin. Maybe your nephew will get to have a stint up there...and then you can come and visit him (and me)..:yay:

Ellen - 3 days till vacay? Have a great time!

Becky - I love "surf and turf" or "reef and beef" type meals but I have to admit that veal and tuna are not exactly my idea of a perfect match. I personally tend to go for meals with a large steak and shrimp or crayfish when it comes to surf and turf meals.

Dinner is up in the air. I have stuff to make gingerbread pancakes and bacon so we might do that. I don't have much appetite right now.

I would love to take credit for the cookies but they were premade. Our youth group sold them as a fund raiser. They were boxed, frozen and pre cut. So neat, cuz you can just bake a few at a time.


Well it's Wednesday and only 3 more days till I leave for vacation. WooHoo!!! I have a lot to get done - but I will prevail. I WILL!! I can't wait. Matthew will be home Saturday afternoon after he gets off at the bank. He is just as excited as we are. The girls aren't going this year - Elizabeth is too close to having the baby and Marty used all his vacation when we went to Panama. So it will be just the 3 of us. But Doug's Sister and family are going, so we will caravan down with them. Again - I can't wait!!!

I know exactly what you mean by needing work for better organization. I think I manage time better because I have to, and everything else has to be managed as well, kwim? I'm right there with ya' sister!

Today was a day full of cookie turkeys and I'm glad it's over! :lmao: But my kids had a blast. Tomorrow and Friday will be paperwork days. :headache: But, at least it's almost over.

I hit up the store again after work today. Tomorrow I need to get my mop trimmed and then I think all of my errands are done! :banana:

Mock Apple Pie

What You Need


2 cups sugar
2 tsp. cream of tartar
1-3/4 cups water
Zest and 2 Tbsp. juice from 1 lemon
1 pkg. (14.1 oz.) ready-to-use refrigerated pie crust (2 crusts)
36 RITZ Crackers, coarsely broken (about 1-3/4 cups)
2 Tbsp. butter or margarine, cut into small pieces
1/2 tsp. ground cinnamon


Make It

MIX sugar and cream of tartar in medium saucepan. Gradually stir in water. Bring to boil on high heat; simmer on low heat 5 min. or until mixture is reduced to 1-1/2 cups. Stir in zest and juice; cool 30 min.

HEAT oven to 425°F. Roll out 1 crust on lightly floured surface to 11-inch circle; place in 9-inch pie plate. Place cracker crumbs in crust. Pour sugar syrup over crumbs; top with butter and cinnamon.

ROLL out remaining crust to 10-inch circle; place over pie. Seal and flute edge. Cut several slits in top crust to permit steam to escape.

BAKE 30 to 35 min. or until golden brown. Cool.

Kat - I got some shopping done today. Still have a heap to do; but at least I got started. And I got my fruit as well. I was going to start soaking them in bourbon but it's late now and I think I'll wait til tomorrow after work.

I am feeling crud-tastic this morning. I feel a lot better during the day, but first thing in the morning, I am a coughing, drainage-y mess. I plan on going to the doctor in the morning. I had plans to make vegetable soup with mini-meatballs today but I'm just going to rest. We had enough leftover chili for Scott to have a meal so I'm not cooking today at all.

After realizing that NEXT WEEK is Thanksgiving, I really got down to business solving my breakfast problem. Here's what we're having now:

Baked French toast casserole with Maple Syrup*
Fruit salad (hee hee, ready-made from Publix; I'm cheating on this one)
Sausage patties
Coffee, tea, milk and juice (Scott, Amanda, my FIL and I all drink coffee. Kevin is loudly anti-coffee [it's really annoying] so I always make him a pot of hot tea, and milk/juice for something cold, as well as 2 things for Ryan to choose from)

I remembered that last year I had way too much food, so I decided to scale back. The casserole I can make the day before and the oven doesn't have to be on high for a long period of time. Making sausage for a group is no big deal, no to mention I can put the prepared patties on a plate in the oven to keep them warm.

What do you guys all think? Sound ok?

Today is a HUGE errand day for me, and Katie just came in to tell me that her stomach and throat are hurting. Looks like she'll be staying home from school today. If she's fever free, I'll probably leave Timothy with her while I do errands. It will be much easier, at least on me! I've got to do his birthday shopping... my little guy will be 3 on the 27th of this month!

How is Katie today? How did Timmy get to be three so fast????????????????

Glynis ~ I just had to laugh at you trying to keep the house clean. When my kids were little, my SIL gave me a pillow that said - "Cleaning House with children is like shoveling the driveway when it's still snowing." So true!!

I wanted to tell you that deer hunting season has started here and my hunter is going full speed ahead this year. Somehow I got involved in a bet and he and our neighbor managed to convince themselves that if in the unlikely event they catch (you notice I said catch??? ASk me why sometime :lmao:) I have to trap a squirrel and cook it. No idea where that came from but there we go. Anyway, Buddy has invested in two cameras and sent Marisa looking for 8 GB memory cards. She convinced him that was overkill and talked him down to 4 GB's. He also has a tree stand which he never bothered with before, a gynormous bag filled with stuff and another new jacket for those long days out there. He aired te thing out for two days but has forgotten that I wash the rest of his clothes and they smell like lavender/vanilla :lmao:

Ellen- Thanks, but I'm going to use Kathy's recipe. But...I do think you should open your mother's recipe box. My mom asked me to look through her box for a recipe while she was away. I ended finding some my Gram wrote or typed up. It was hard, but fun at the same time. Maybe you'd find forgotten recipes and memories.

My Mom gave Erica her cookbook. She only had one, my dad had a lot!!!!!!!!!!!!!!!! I had some of her handwritten recipes in there so I gave her whoopie pie recipe, which Donny loved, to Anna along with the only handwritten recipe I had from my Dad. It was a BBQ frank thing that no one but me liked but I thought that she would like them. She never met my parents so I thought they might be a little closer through their recipes. DOnny once had a bet with a coworker that his Memere made better whoopie pies than the coworkers. GM. My Mom would not take the bet, by then they were way too much work for her but Donny went down insisting his Memere's were so good she did not even need to make them to win! :thumbsup2

I hope that you can write your cards this year. It was very hard for me to send them out the Christmas after my Mom passed on. I was at her house writing them the Christmas before and she passed less than two weeks after that. I kept seeing myself at that table while she was in her chair resting in front of the TV. Sending a hug JIC!

Chris was assigned to Marine 1, the helicopter that accompanies the President everywhere he goes. He left the Corps after ten years in this month. He wanted to do more than what he was doing but his rank combined with the amount of money the Govt had invested in him made that next to impossible. It was a big decision for him, he loves the Corps but he really wanted to be in a deployable unit and this was nto going to happen.

Lindsay- breakfast looks good! I try to accommodate guests in my home but if they don't like the beverages I offer and cannot find another they are welcome to bring whatever they like. Kevin is out of line. Feel better!

DInner was going to be Ellen's chicken casserole but not in the crockpot. I stink at time management so by the time I got to dinner it was too late for that. Anyway, after I got it all put together Nola called and requested Pizza Well okay then!!!!!!!!!!!!!!!!!!!!!!!!! She told us that when Pa gets home from work she stops over to visit, and when she leaves he must visit her and then it starts all over again :goodvibes

So dinner is the casserole with mashed potatoes and broccoli. I hope it comes out okay, I did not have provolone or Swiss cheese so i used mozzarella and I had big chicken breasts so I used two cans of condensed soup. I don't generally use canned soup so I hope it is not too salty.

And just FYI, we once watched a show on "down home cookin'" where the mama made squirrel pot pie. The recipe can be found on the internet. :lmao:

Morning, everyone! Well, it was an interesting night, to say the least!

Katie is doing fine. I actually think it was more of a "mental health" day for her, than anything else. She has been so stressed out over her geometry class, and there is a test coming up tomorrow, so she wanted to study. She's fine, now.

Mary, on the other hand, was up all night worshiping the porcelain goddess. Poor baby! At least she's quiet about it, so it didn't wake anyone up but me. She'll be staying home today.

No idea on dinner for tonight, yet. I need to look here on the index (and the old ones) for some fast, easy ideas. I'll check out Pinterest, too!
