The What's For Dinner Thread - October'11 (recipe index in OP)

Hello ladies.

Didn't get anything done this weekend that I wanted although I did make 9 "jersey's" for the football baquet. They are made out of tagboard and card stock. Each year we do something special for the seniors and wanted to do them last year but didn't have time, there were 22 of them. I told them I would start at the beginning of the season next year because we are going to have about that many again.

Ellen, it's just the three of us for Thanksgiving so every year I contemplate going out to a local hotel for a nice meal but my guys complain there aren't any leftovers so I'll be doing:

Roast turkey and roasted turkey gravy
Cornbread stuffing with oysters and andouille sausage
Scallion sweet potatoes
Baked macaroni & cheese
Broccoli & cheese casserole
Emeril's cranberry sauce
Pumpkin cheesecake

We are going to my Aunt and Uncle's for dinner. We usually get a doggy bag. I was thinking of cooking a small turkey breast so we will have leftovers but I'll see.

Jen ~ I will be sure and wave at Mom while in Alb. We have family there so we have a wonderful time. We switch every year - next year they will come to Nebraska.

Are you all ready for your Thanksgiving Dinners? Please share - last year I got some really neat ideas.

Can you deliver some Christmas presents for us? :lmao: Have fun in Albuquerque. Take pictures of my mountains for me. My mother lives in the far northeast heights up on the mountain. I love her view!

Turkey
Sage sausage stuffing
Sweet potato casserole topped with bacon
Green bean casserole...with a li'l spice added to it...
Cranberry sauce
Kugel (jewish noodle pudding)
Giblet gravy

Chocolate chip pecan pie
Pumpkin pie
Sweet potato pie

Today is over. Thank goodness!

I was slammed with kids at work, including picking up a new one. And then after work, I headed to two different grocery stores to finish up most of the shopping for Thanksgiving. I have one more store to hit up later in the week and then we have to run around like mad getting ready for dad.

Tomorrow is supposed to cool down quite drastically and rain! So I'm glad I got what I needed to get done finished today!

Tonight's dinner was chicken piccata and PW's olive cheese bread. It was easy and yummy!

Hi all! Sorry I didn't get online until now. It's been crazy hectic the last couple of days! Cleaning is going well, now, but we have to up the pace. My SIL is coming to stay with us this Thursday night, as she has to take my 5 year old nephew to a doctor's appointment. So, we'll kick it into high gear, and see what we can accomplish!

Ellen - I'm laughing so hard, right now. I just got my dinner in the oven, and came in to catch up here. When I read your crockpot recipe, I thought to myself that it sounds really good... but familiar, then I realized I had just made the exact thing to put in the oven tonight! Great minds, I guess.

As for my Thanksgiving dinner, we are having a really basic meal:

Turkey (with an extra smoked turkey breast for leftovers)
Mashed potatoes and gravy
Cranberry sauce (from the can, as my kids expect the ridges)
Sweet potato casserole (with mini marshmallows on top)
Green salad
Jello Salad
Rolls, butter, homemade jam
Corn
Gingerbread trifle
Pumpkin pie

The sweet potato is one I got from Soldier's Sweeties and we're trying it for the first time this year. But, basically it's your standard sweet potato casserole topped with bacon, rather than marshmallow. How can that be bad?? I'll have her come post her recipe too!

We're also having a fruit salad dressed with a lemon poppy seed dressing. This is also UncleR's creation. :lovestruc





We've been decorating for Christmas this evening. So far, I have a garland trimmed with chili pepper lights on the mantle. You can see the pic on FB.

Ok...here it is...

(This isn't an exact recipe...so I'll just tell ya'll how I do it)

I whip some sweet potatoes with butter, brown sugar(or syrup), and some pumpkin pie spices...basically until it tastes good and has a good texture.
(If I'm too lazy to roast fresh sweet potatoes, I use the canned yams and I just cut back on the sugar)

Then I fry up a bunch of bacon(amount depends on how much potatoes you make) until it is nice and crispy. (I GET that some people don't like crispy bacon
but it really is texture thing...chewy bacon in smooth potatoes...no thank you. :rotfl:) Then crumble it over the top before serving.

Don't put the bacon on until serving because it can get soft...if you have to top it in advance, I would cook the bacon a little less crispy and then warm it in the oven to heat the potatoes and crsip the bacon.

I just like it better then the marshmallow topping.:cloud9:

I love oysters, when they are prepared well and small and briny!

We haven't even figured out Thanksgiving other than it will probably be Turkey, but my folks are coming down instead of us going up there.

Tonight's dinner....Spinach and Ricotta Crepes.

OK you got me, I ended up influenced by you tonight!

I ended up buying Manicotti noodles and made a canneloni stuffing with beef and italian sausage. I put in some pepper, minced onions and salt. Then I made Ricotta (bought new since the other expired two weeks ago), spinach, egg and mozarella with some salt and pepper. I filled the noodles in pairs with cheese and meat. I stuffed a little mozzarella in the meat filled noodles, but next time I will mix the motz in with the meat.

Now I'm just full and feeling fat. Here was dinner tonight.

Kat - Can you post your red beans and rice recipe? I think DH might appreciate it.


Ellen - Chatty Cathy's seemed to have been the buzz toy about 30 or 40 (or more) years in the US. Being brought up in Asia, I never had anything quite so fancy. It was all I could do to get me a Barbie doll!

Janice - Raw Oysters are something that I eat but am really indifferent to. But leave them in the shell and cook them in the oven for about 8 minutes with either:
  • Worchester sauce and BACON; or
  • Fish Sauce, Palm Sugar, galangal and lemon grass
and I go bananas for it!

Jen- Hope that your day at work is better tomorrow....and cooler.

Alison - Your Manicotti looks great. Next time DH decides he's "not hungry", I think I'm going to do a meat version for DS and myself.




Well, I'm formally back on a client site today. I'm back with an old client and he and I are so pleased to be working together again. It was a mutual love-fest today. :laughing:
And I think I'm going to be a very busy person between now and Christmas. :sad2:
