The What's For Dinner Thread - November '09(recipe index in OP)

Ellen, I know you remember this pain....UGH it stinks. Thank you for the prayers & thoughts. Is Jay's contact info. the same? We would like to reach out to Jay as well.
I haven't taken a pain pill since last night but feel like the time is approaching quickly.
How many days did you have to take antibiotics?

Yes, Jay's info is the same. Thanks so very much. Please let him know that you are a friend of mine.
How is your pain today sweetie? I was on - actually am still on an antibiotic -Clindamycin/12 mgs. for 14 days. The infection/inflammation was so bad it was in the bone. I am feeling so much better. I pray that you get some much needed relief real soon. You have a wonderful vacation here pretty soon. You will love Greece. Where else are you going? Have you been before? I have cruised the Agean Sea and all around Europe, if you have any questions please ask.

It's actually a Pioneer Woman recipe. Here's the link for you.... step into the dark side. ;)

http://thepioneerwoman.com/cooking/2009/05/baked-lemon-pasta/

OMG I tried this a while back and it is soooooo good.

Checking in, feeling better. Think it was just a migraine coming on, been there done that. Thanks for the well wishes.

I am glad you are feeling better but I still worry about you. You haven't felt good for a long time. Please take care of you.

I've had a busy day but am not as worn out as I thought! My massage this morning was nice - the falling snow out the window helped too! I feel a lot looser. I worked a few hours then saw the GI.

We have lots of leftovers so I assume we'll just reheat whatever looks good.

So glad you are feeling better, but please rest and take it easy when you can. When are you going back to work?

Tonight was one of my concoctions of cabbage leftover pork roast and onion with paprika. I don't experiment with Alex he does not appreciate culinary genius.:rolleyes1.

Once my kids got older and out on their own, my cooking strangely got much better. They actually ask for my meatloaf now. :rotfl2:

Sheryl ~ so sorry A is sick. Please let us know. Poor thing. I am glad your knee is feeling better though today.

To tell you the truth, I have no idea what is going on with Jake. He has a very strong personality so it is hard to tell what he is saying. His Mom wonders if it is more teeth and for her sake I hope so. He is fine if he is where he wants to be but if he is not he has a reaction that is odd. He clenches his fists, stiffens up, clenches his mouth and lets out a wail. I have seen temper tantrums but do not remember this kind in a ten month old baby. I seldom loose patience with babies but yesterday I was on my last nerve. There is a level of frustration in the baby that I have no experience with so I hope that as he gets a little older he is able to channel it. When I put him in his high chair to feed him he shreaked when I buckled him in so I told him enough...no temper and he stopped. But i had to repeat this mantra several times while feeding him. Welby and marisa say he is spoiled but I don't remember babies that young becoming spoiled.

Any ideas Ladies?

I agree with the others, just keep on doing what you are and know that this to shall pass. It does sound like he is coddled, held and never let to play or learn to entertain himself so he expects you to do the same. He will get past this. Just thank the Lord that he goes home at night and he isn't YOUR responsibility 24/7. Ya know what I mean? ;)

Thanks for not giving up on me! I promise I'll try to be better!!!

NEVER will we give up on you!! You are our friend through thick and thin and we love you sweetie!!

So, I ended up not heating the mushroom soup up last night because John had to go to a client dinner last minute. So I made myself a turkey rueben. I took a picture but haven't uploaded it yet.

WFD: probably the mushroom soup!

Did you happen to see my request for this recipe? I would really appreciate it if you would please share. Thanks!

DH just took the dog out in the monsoon in the back yard. Sure they wont be long...the dog and DH hate the rain.

Dinner at my parents was good as usual. Dad is going today to have blood taken for his surgery. So stubborn I told them DH or I would take them and they did not want to hear it.

Lunch is white clam chowder....WFD ravioli per DH request.

Hope your Dad's surgery goes good and he DOES let you help him as he is going to need you. Enjoy the rain - that's better than snow.

Laura ~ I am so glad to hear that Greg is doing better. If there is anyway we could send a care package to him please let me know. This is something I would love to do with Ethan. He knows of all of them sent to his Dad that it would be neat to let him return the favor. Let me know.

Tonight is date night and I hope they have a good soup, as I can't seem to get warm and feel cold to the bone today. We have Lenten service tonight here at the church so I won't be home till late. This truly is my favorite time of the year in the church. Each Wednesday night we are doing a Drama - "At the Foot of the Cross". Next week I am portraying Mary.

Have a good night all my dear friends.

Augh, sounds so frustrating. I was a colic baby - obviously not the same thing but my mother said there were days when she seriously contemplated killing herself or me because I screamed non stop. My dad would come home from work and she would throw me at him and go for a looooooooong drive. We've had a few really difficult babies and it can become overwhelming so quickly. I think you did the right thing in simply repeating what needed to happen - at 10 months, he can start to understand what gets him a reaction and what doesn't.

Aimee - so glad you were able to get out and have that massage. Did you actually go into work, or you did work from home?

I went in - but for only about 4 hours, and almost an hour of that was at lunch

Dinner tonight is something very soft & overcooked~
Back on the couch I go.

My knee is feeling a little better today, so I didn't go to the dr. I have to take Alexis this afternoon & I really wasn't in the mood for spending the whole day in the doctors office.

Alexis was able to go to school, she's not running any fever which is weird considering her throat looks just awful. Chris talked to an ENT about some other very gross stuff that happened last night & she said to take her in. That she can have acute tonsillitis or even hemorragic tonsillitis without running fever. She said she does need to see the dr today.

 for your knee and Alexis' throat. Poor child! Update us once she sees the doc.

We have Lenten service tonight here at the church so I won't be home till late. This truly is my favorite time of the year in the church. Each Wednesday night we are doing a Drama - "At the Foot of the Cross". Next week I am portraying Mary.

How cool! Because of how our fiscal year falls, we have to do budget discussion tonight  I hate when that falls in Lent and throws off the Lent studies.

I am getting tired of seeing doctors! Saw the hematologist this morning, went well, then stopped at a few stores, hit Costco, and had lunch with DH and his two girls. I am tired but not as worn out as I would think. Good sign! I am going to go back to the office tomorrow for a few hours and take Friday off. Just easing back into things since I have the ability to do so.

We had someone call and offer a meal tonight but honestly, we have SO many leftovers (and I froze a bunch last night) and I feel up to cooking again so I turned them down.

Oh - did I tell y'all that my baby sister is having a GIRL? I'm getting excited - I bought a bunch of Carter's outfits at Costco today. I am the girly one and she's always been the tomboy so I had to buy the girliest, frillest stuff for my niece since I know my sister won't be buying that stuff

Nancy my cousins were evil children. One of the devils spawn cried so hard she passed out. Of course as soon as she passed out she started to breath again. When she came too I just asked as calmly as I could if she was done with that. I love telling them now how evil they were :rotfl2: I hope for your sake he calms down. Does it seem he gets overstimulated easily? Has he always had that reaction since he was very little? He sound a little like Alex. He wasn't a bad baby just when he was mad he was mad all over. The nurses in the hospital would laugh cause he would "stomp" his little foot when he got mad.

Aimee I hope you are still resting? :cheer2: on your sister's baby. Little girls are so much fun to shop for.

Ellen I will get Jay's box out this weekend:thumbsup2

Glynis Don't beat yourself up. I don't have nearly what you have going on and I have a hard time.

Babies learn pretty quickly about cause and effect. Just keep doing what you were doing. :thumbsup2 They will also feed off of an adults tension, if you're tense it causes them to be tense too, so try to keep calm. :hippie:

I am not tense but I admit i was pretty frazzled by the time he went home. I always have a little more of a difficult day on TUesday which is his first day back.

Speaking of snow, guess what we're getting? :thumbsup2 5 or more inches starting tonight into Friday morning. :dance3:

:scared1:

We are supposed to get a foot of snow Thursday night into Friday. I have to say I'm happy about it. I missed the last 2 storms.
Marilyn, please don't throw a snowball at me.

Dinner tonight is something very soft & overcooked~
Back on the couch I go.

I will admit I would like at least one decent snow. We keep getting messy stuff...today was heavy snow, then sleet and then rain. YUCH!

How are you feeling today?

Thanks, Nancy. He is doing okay. He is still adjusting to his new position as commander, and he doesn't like some of the things he has to figure out how to handle. He also has not felt great since his surgery, so he had some tests done yesterday. That said, he has received some positive reviews of his performance so far, and his soldiers all seem to like him, so that has helped his spirits.
.

I know he is going to be a wonderfulk commander! I really was wondering how he is feeeling. i cannot imagine having to have surgery so far from home and had hoped he was feeling good.

Maria, I too am jealous of your upcoming cruise! Congratulations!!! Please help me live vicariously through you! More details please, what cruise line, ports, etc., etc..... ;)

.

Okay! Now enough is enough for poor Alexis! That baby has had way too much this year! Prayers for my little Drama Queen! You too

I am going to follow all this advice. i think I just need to keep consistant. I am generally very good at this, the little ones all know "the rule" at nana's.

Have a great time tonight. I think the Lenten tradition is a lovely way to reflect during this Holy time of year.

Maria- I have to once again apologize. i missed your cruise! I am a little jealous.

Kat- Are you better today?

I am actually cooking tonight. I roasted chicken off and am making a garlic sauce over over orzo with veggies. Corn on the side.

Glynis Don't beat yourself up. I don't have nearly what you have going on and I have a hard time.

I almost forgot to post dinner again. Moroccan spiced chicken breast with couscous and salad.

I'm back from the dr. she has a really bad case of infected tonsillitis. The dr didn't see any signs of strep & since she hasn't run fever she didn't test for it. She put her on antibiotics, told Chris to have her use Afrin to shrink the blood vessels. If the bleeding doesn't stop in a couple of days, she'll need to go back in. We're praying that this isn't the start of acute tonisillitis. She asked the dr if she was going to have to cut her again! :sad1:

Ellen, Have a fun date night!

I'm making breakfast for dinner, maple sausages, hash browns & maybe Becky's baked eggs.

Oh, your poor baby :sad1:

Dinner was really good. I cooked the WW orzo kind of like a rissotto.

OMG I tried this a while back and it is soooooo good.

Oh they were. She was on the Fox morning show today and will be on GMA tomorrow morning. She has a link on her site to the video. She was making her cinnamon rolls, now I want to make them. :cloud9:

Poor baby.

Just wanted to pop in quickly and say hello. It was another busy day. We leave for the Bahamas on Saturday and I feel like I've barely been home to pack and I feel so disorganized. Usually I'm already packed a few days before we go anywhere.

Nancy- I'm going to say that based on his physical reaction he might also be in pain sometimes. He's a little old for colic but maybe reflux, possibly silent reflux. Sometime infants have ear infections with no symptoms either. Have they discussed his behavior with a pediatrician? Also how does he sleep? If he's overtired his ability to cope when things aren't just as he wants them may be diminished. Z had a phase where even though he slept he was always tired and cranky. It was very frustrating, they checked him for enlarged tonsils/apnea but they were fine and it did resolve on its own. I have to say that age was probably the most challenging for me. There's so much going on with separation anxiety and they're starting to develop their own wants in addition to their basic needs but without any ability to communicate it. I've also found that for me sometimes extra attention and cuddles can be effective in stopping tantrums as long as I'm not being manipulated.

Sheryl- prayers for Alexis, the poor thing. Her question to the doctor makes me so sad.

Aimee- I'm glad you can feel your strength returning.

Ellen- enjoy your date night!

Laura- we got hammered with about a foot of snow before the rain came. Such a mess right now.

Maria- I haven't heard anyone say they were looking forward to snow in quite a while.

Glynis- hi!

Hi to everyone else. Dinner tonight was leftover meatballs I had in the freezer with parmesan noodles and baby carrots.

Hoping Alexis gets quick relief with her medication.

Dinner tonight was black beans & rice.

Thanks all!! We're hoping the meds work quickly.

Michelle, Oh the Bahamas, that sounds wonderful!

Becky, You are the EGG QUEEN!!! :worship: I fixed your baked eggs & while not nearly as pretty or as perfectly cooked as your eggs, they were absolutely wonderful!! Thank you, Thank you for that recipe!!!! I will need to work on perfecting it, but man they were good!

Here's a pic, with hash browns, maple sausage & maple syrup for dipping.

Nancy While dinner was really tasty. It was nothing more than chicken breast pounded with a Moroccan spice that I bought from Target and roasted garlic pearled couscous out a box. Juess I was tired after all that cooking so many dishes to wash you know :rotfl2::rotfl2:

That reminds me to go and get more spices.

We got some more snow last night. Did I mention I am ready for spring? :rolleyes1

Today is going to be a busy one. I am not sure if I'll get back here. Have a good day everyone.

Sheryl/Becky - Could someone direct me to or re-post the baked egg recipe? I can't seem to find it.

WFD - I'm trying a new (easy) chicken & cheese enchilada recipe. Sides will be refried beans and salsa rice.

I just wanted to say that I am keeping Janices friends in my prayers, and that I feel badly for Lori......get better girl!

Michelle- the first thing I thought was reflux. Kady was treated for reflux and was very sick with it. They asked the Dr, who happens to be Kady and Nola's as well, and he did not think reflux was the problem. He is laughing when he comes here, does not fuss when his mommy leaves and seems to be good natured until he is not. Does that make sense? I gave him Tylenol yesterday because I cannot stand to think he is in pain. I talked to his dad last night, he had been up with him from 3 AM yet the little guy only slept less than one hour for his nap. Buddy and I talked about his size this morning. Maybe we are confusing his age with his size, he is a big big boy. He also may be teething, they have been very hard on him up til now.\

Thanks Ladies for helping me think this through. I am going to continue making sure I am consistant as Marilyn suggested. He is very bright and Welby has said that she noticed that he does get what he wants elsewhere when he cries.

DInner is up in the air. I think i may have leftovers becasue we will not be able to have it on Friday.

.

Nan, I'm sorry I have no words to help you but I know I could think of nobody better to have as a "Nan" for a baby, he is one lucky little boy.

I don't feel good....thank you for asking. stopped the pain medication yesterday morning & slept like crap so I might have to start it again. The antibiotics aren't bothering my stomach so that's good news.

Janice, so your ready for Spring? I never knew;)
Our 2 feet have started to fall & it's beautiful.

Sheryl how is Miss "A" this morning?
That plate is pretty impressive.

Kat, I just looked for the baked egg recipe as well. Something both Greg & I could eat.

I'm hoping to cook tonight for Greg......he hasn't had a meal since my surgery Monday. I'm feeling guilty. I figure I will cook for a few days & then I have more surgery Monday so poor guy will be back to take out.

Aimee -- Congratulations to your sister! Buying things for girls is so fun. When Caili was a baby, Becky was determined not to buy anything pink, so Caili had all these beautiful outfits in purple, green, blue, etc. Of course, as soon as Caili could have any say in what she wore, she refused to wear anything other than pink. Have fun shopping! I'm so glad to hear you are feeling so well too.

I really was wondering how he is feeeling. i cannot imagine having to have surgery so far from home and had hoped he was feeling good.

I think his neck is okay now (although he calls what they did a "hatchet job") but he is having some pain in his arm and numbness and tingling in his hand, so he had some tests to see what was going on with that.

How many teeth does Jake have at this point? I know Liam had an awful time cutting some of his teeth. That would be an easy answer to the problem. Whatever is wrong, I am sure you will handle it well.

Sheryl -- I feel so sorry for A. Her question just brought tears to my eyes. I hope she feels better quickly. Your dinner looked delicious!

She was making her cinnamon rolls, now I want to make them. :cloud9:

Those do look good, but I could never put as much icing on them as she does.

Michelle -- I hope you have a great trip! I did hear that parts of the state got a lot of snow. It was just rain the whole day here...in fact, it's still raining. Very dreary.

Maria -- I'm sorry you are still in pain. I hope the surgery Monday brings relief.

I didn't end up having the eggplant parmesan last night because I forgot to set the oven before leaving for gymnastics. That's okay, it is frozen, so I'll have it another night. I just ended up having huevos rancheros. I'm not sure what we're having tonight. I am going to go to the store.

Morning Y'all,

After I got in bed last night, I realized that I've had that recipe saved for a very long time & I should have posted it. This was a quickie post from Becky, when I asked her for specifics on how to do her eggs. I was kind of chicken about using the garlic but I went ahead with it & it was yummy! ( I let the whites firm up a bit under the broiler then sprinkled the garlic on top & cooked the whites a little more. I only had fresh parsley, so that's what I used.)

Becky’s Baked Eggs

A version of it was posted on the old wfd thread. This way is my futzy way of making them. I like my eggs cooked through but the yolks runny, so this is what I do:

For each serving, you will need three eggs, 2 tsp. butter, 2 tsp. cream, 1/2 clove garlic, minced very fine, 1 tbsp. minced herbs of your choice (I use thyme and parsley), and 2 tbsp. finely grated parmesan cheese.

1. Preheat broiler.

2. Put cream and butter into ramekin and place under broiler until cream is bubbling and butter is melted.

3. Meanwhile, separate your eggs. Discard one egg white.

4. When the cream is bubbly, pour the egg whites into the ramekin and place back under the broiler. Broil until almost cooked through--about 4 minutes.

5. Now take the ramekin out of the oven, and place the egg yolks on top of the whites. Sprinkle with the herbs and cheese, and season with salt and pepper to taste.

6. Place back under the broiler and broil until the cheese is just melted and the yolks are done to your liking--2-3 minutes more.

Let rest for a minute or so before serving.
