The What's For Dinner Thread - May '09(recipe index in OP)

If anyone can say an extra prayer for my mother-in-law it would be greatly apprciated.

Prayers are being said, my friend.

Well, Liam's team lost tonight. He was really disappointed, mostly because he wanted to pitch in the championship game Thursday. The letdown will be brief...summer baseball begins Thursday. Thanks for cheering him on.

Oh that's a bummer!! I am sure summer ball will help. But I so wanted you to beat "that" team. Bad Ellen, bad Ellen. :lmao:

Glynis ~ again I have to tell you how much I am enjoying your trip report. I hate to see it come to an end. As soon as I get back I will start mine.

Nan ~ OMG I love the story of your neighboor. She SO reminds me of my Momma.

Kat ~ Thanks so much for always taking such good care of us. I thought you were leaving yesterday for some reason, but I guess it is today, so I will again say - YOU can do this. I know it will be hard - been there done that - if you need to talk please call me. You will be alright and in my prayers.

Sheryl ~ You my dear friend are in my thoughts. I know you are going through he** right now with all of these decisions, but please just take one at a time and I promise you it will all work out in the end. Take care.

Maria ~ Hey you!! I am so glad you had such a great time. I can't wait to hear all about it.

Bethany ~ Welcome home~~

Ann, Ron, Luke and baby Emma ~ Congratulations!!!:cloud9:

Lauren ~ have ypu posted your Swiss Chicken Casserole. That sounds heavenly!!

Gretchen ~ Good luck with the floor. Your are a better woman than me. I have NO patience. Hey, how is Hailey feeling? Better I hope.

I am sure I have missed someone. If so, please know I am thinking of you all.

I'll BBL to check in again before I leave.

I feel like I would bore you gals with a trip report. I'm trying to figure out how to write one & post a link. That should take me 2-3 months to figure out!

Gretchen- 7 PM!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! I know you needed to keep hiom there but Oh my Goodness!!!!!!!!!!!!!!!!

Jean never made sandwiches for dinner and never cereal. Oh no, she cooked but she could make cabbage soup sound like a gourmet meal. She made that creamed chopped beef sound like manna from Heaven. Yup...she was that good! No doubt her food was outstanding, I still make "Mrs B's Punch and her lemon cake was to die for but she could do this until a trip to Hawaii was paid for :thumbsup2. Somehow she managed balanced nutritious meals and they were right in line with whatever budget she created. She was a child of the Depression so she knew how to make a dollar go very far!

She went too far one time, Bill was a printer after he retired from the PD so he purchased paper. He was wrapping a peanut Butter sandwich and she told him to be careful with the waxed paper...it was very expensive. He told her that he may not know how much his Pecan Sandies cost and he did not have any idea how much his peanut butter was but he for darn sure knew he could afford the waxed paper. :lmao: I had never seen that lovely lady at a loss for words but this was priceless.

Donny told me that he knew all along what she was up to but he did not want to spoil her fun. He knew that she loved trying to see how much she could pull and he let her :rotfl: I miss him so much!

Morning all, hope everyone is well.

Welcome Emma! Congratulations to Ann, Ron, and Luke, I'm sure she is worth the very long wait.

Thanks Kathy for keeping us up to date.

Maria- I see your back, I hope you enjoyed the cruise.

Have a great day all, I'm spending mine doing minimal housework and relaxing. I'll try to check back later.

Good morning, everyone! It's a crazy busy day here! We are leaving tomorrow for my dad's house, so today is my day to get ready! I need to do laundry and pack, clean out the car, do some shopping, get to the library, and get the house clean. Not to mention finish writing my TR and post that and the pictures! Should keep me going!!!

Dinner tonight will be Hawaiian Haystacks. These are fast, easy and everyone fixes their own, so I can't be blamed if they don't like them!

BBL!

another quick check in...gotta get in the shower and then pick A up at noon.

Stephanie, Kathy had posted a oven rib recipe but I do not have time to look it up. I know she did them in foil for a while and then opened them and crisped them in the oven/broiler. Maybe google oven ribs...HTH...

Maria, I would love a in a nutshell TR and pics of the top. say, 10 things...if you have time of course. ;)

Ellen, I think the recipe was posted by someone else. Here is the one I am using:

Swiss Chicken:
6 skinless, boneless chicken breast halves
6 slices Swiss cheese
1 (10.75 ounce) can condensed cream of chicken soup
1/4 cup milk
1 (8 ounce) package dry bread stuffing mix
1/2 cup melted butter
Add to Recipe Box

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
Arrange chicken breasts in the baking dish. Place one slice of Swiss cheese on top of each chicken breast. Combine cream of chicken soup and milk in a medium bowl, and pour over chicken breasts. Sprinkle with stuffing mix. Pour melted butter over top, and cover with foil.
Bake 50 minutes, or until chicken is no longer pink and juices run clear.

Thanks

Hey Y'all,

Working on cleaning out my towel/linen shelf so aides can find stuff! Somehow purses, scarfs, etc., etc., ended up shoved in with the towels & sheets. :confused3 I don't know who comes into my house & does that stuff!

I had plans for my time with Alexis this summer & pretty much none of it happened. Other than lots of swimming. So this morning I asked her if she wanted to go to the aqaurium or swim & have a play date with the little girl next door. Sadly she chose play date. But we might do aquarium next week with the neighbor & her Mom.

Don't know what's for dinner, but it will be light! Last night was one grilled chicken breast shared with DH, arugula & tomato salad and watermelon salad.

Sheryl- try to let the weight gain go, I think stress can have a lot to do with it, and your life has been stressfilled lately. I don't blame you for teh CP surgery decision. In a perfect world we all schedule procedures as soon as possible. In the real world everything is prioritized. I would put this one off for a bit too, you need to keep your options open incase you need to schedule your back procedures sooner ratehr than later.

Once again I am so sorry I am so far away. I have not figured out how I got so close to a group of women scattered all over the country but there you go.

Dinner is going to be a beef and bulgar casserole I think. I was going to make pork chops or grill that steak but I think Buddy needs more grains and he won't eat them on the side so I need to tuck them in a meal. I am going to hide them in the ground turkey so we'll see how later.

Nan, You are so kind! I wish I had all of y'all down here with me too!!! :grouphug: I was telling Chris about the weight & she said the steroid injections I've had are probably catching up with me. Fluid retention & increased appetite, of course I just had another one yesterday. Honestly I can't to do much, but eat right the next 2 weeks. I'm mad at myself, but I'm not stressing about it.

Sheryl - Like Nancy, I wish I were closer.

Ladies, I have no idea what I'm making for dinner tonight but I know it's going to be easy. I planned to get in the bed last night early but the floor guy showed up at 7. Kenny asked if I wanted him to send him away, but I said "NO WAY". I figured I could catch up on my sleep tonight, but I want my floor done. He worked until around 10 and is almost finished with everything. He has some "cut work" :confused3 left and the threshhold work. Also, he needs to do the molding, but said we needed to paint first.

As I told Nancy, I wish I had you down here too!

I really hope you are getting a good price on your floor. That guy has been a real pain! Makes me mad for you!

Sheryl, you know your in my prayers. Sending love & comfort.

I know! :hug::lovestruc

Sheryl ~ You my dear friend are in my thoughts. I know you are going through he** right now with all of these decisions, but please just take one at a time and I promise you it will all work out in the end. Take care.

.

Don't worry about me. The decisions are now made & that he** is over. I just have to get my house cleaned up now before surgery. :scared:

I feel like I would bore you gals with a trip report. I'm trying to figure out how to write one & post a link. That should take me 2-3 months to figure out!

BORED??? Are you kidding me????!!!! A dream trip like that, no way would could I be bored hearing every single little detail! Maria, that is something I will never get to do, so please do tell! :goodvibes

Kat, check my post to you on the nola thread!:hug:

BBL!

Welcome baby Emma!

Lauri, I will keep you and your MIL in my thoughts.

Laura, it was just an overall BAD night for baseball last night.

Hey Y'all,

Working on cleaning out my towel/linen shelf so aides can find stuff! Somehow purses, scarfs, etc., etc., ended up shoved in with the towels & sheets. :confused3 I don't know who comes into my house & does that stuff!!

When you find out who it is, you let me know, because they keep coming to my house and doing that to my linen closet too! :rotfl:

WFD tonight: Chicken picatta and roasted asparagus.

Well we are all packed and ready to go. We celebrated the 4th of July last night with Elizabeth and Ethan as we are all going to be gone over the 4th. She is going to see Jay and we will be out of the Country. What a nice evening we had. So much fun. I took these as a snack and everyone loved them. Maybe you could use them for your celebrations this weekend.

Mexican Fruit Tortillas

INGREDIENTS:
1 (21 ounce) can apple pie filling or any of your choice. I fixed cherry.
6 (8 inch) flour tortillas
1 teaspoon ground cinnamon
1/3 cup margarine
1/2 cup white sugar
1/2 cup packed brown sugar
1/2 cup water

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Spoon fruit evenly onto all tortillas, sprinkle with
cinnamon. Roll up tortillas and place seam side down
on lightly greased 8x8 baking pan.
Bring margarine, sugars and water to a boil in a
medium sauce pan. Reduce heat and simmer, stirring
constantly for 3 minutes.
Pour sauce evenly over tortillas; sprinkle with extra
cinnamon on top if desired. Bake in preheated oven for
20 minutes.
Makes 6 large tortillas; may be cut in half to serve 12.

As far as healthy I will be a picture post card for health the next 12 days as the food we are served down in Panama is very healthy. And most of it is not anything I enjoy, so I usually only eat enough to keep myself going. Don't get me wrong it isn't because it's healthy -It's just REALLY different. Goat, Veal ( I DON'T do Veal), rabbit, and lots of Chicken (and we're talking fresh off of the road and 5 minutes later in the pan fresh). It is just really funny how different cultures fix things. The seasoning or lack there of are just horrible. And I am NOT a picky eater by any means. Oh well I will survive.

You all play nice while I am gone. I will be back on the 13th. I will miss you all so much!!!

Prayers and love to you all.

Hey all! Another quick fly by...it was supposed to storm today so I planned to clean this mess of a house. It turned out to be gorgeous out and I am really not motivated. I vacuumed, that is about it. While I was vacuuming, Andrew, my wonderful boy, watched T. He is so good with him. Well, Andrew was bringing me the phone and fell down the steps. I almost cried as I watched him bounce down about 6 steps. He is OK...just very achy.

Sheryl, I have the same problem here with closets...:sad2: I am sorry that you are having a tough time getting it all together to prepare for surgery. I, too, wish I was closer.

Ellen, that recipe looks so good! Thanks for posting. Have a safe trip.

Robin, Nice to see you pop in!

Laura, Sorry for the team's loss.

Gretchen, sorry the floor guy is a PITA. My contractor (Tom ;)) is almost done with the bathroom. It's only will be 2 years this coming Oct!

I am pretty far behind with catching up but I hope everyone is doing well. Hugs to all!

Ellen, Have a safe & good trip! :goodvibes Don't get too skinny from not eating in Panama! ;)

Lauren, I'm so sad that Andrew fell!! Poor kid! You've done well raising such a good older brother. Thank God he wasn't holding T when he fell, that would have been a real disaster.

The stuff coming out of that closet is growing! I need to go get more garbage bags to put it all in!

Argggh, I'm rethinking my cp surgery. My SisIL Chris (surgery nurse) spoke to the head neuro nurse, who worked with my dr- Dr Thomas when he was at Ochsner. She said he is every bit as fast and as good as the ortho docs. If it were her, she'd have him do the surgery.
Yesterday Chris had said she thought it would be better to have an ortho dr do it later which wouldn't need general anesthesia. But she also thought that neuro docs took an hour to do it, compared to an ortho dr who can do it in 10minutes. The nuero nurse told her that dr thomas can do them just as quick. So now I don't know what to do again!

My daughter & sonIL think that even if I do it later, after the neck, I will still need help to take care of Bob. Things like buttoning would be still be too difficult. :confused3

??? Anyone here have carpal tunnel surgery?

Sheryl, dumb question...have you tried wearing a brace on your wrist/hand to see if that would help get rid of the carpal tunnel pain? I did not have carpal tunnel but did have symptoms for a while and a brace did the trick. I am sure that you have exhausted everything else since you are planning surgery but I thought I would mention it. I would not be good at making the decision that you have to make but I would discuss with Bob and see what he says...

Lauren!!!!! Poor A!!!! Thank the Lord he is only sore.

Sheryl, I don't know what to tell you....My cousin had the surgery but used the brace first for several months. I could ask her what type of doc she used.

Ellen, have a wonderful safe journey!!!!!!

I can't believe it's starting to thunder here again, better take Lily out before the sky opens.

Lauren, I have worn the brace it helped some with the pain & not the numbness. That's part of the problem making the decision, the dr can't tell me how much of the numbness is coming from the neck & how much is cp.

He did say the cp is bad and he believes I will need surgery on it sometime soon.

So I guess what I'm wondering is how much the cp surgery limits your use & if I can handle dealing with that along with the neck pain & severe restrictions from that. But if I'm going to need help later on to take care of Bob, for just the cp surgery, I guess I should just get it all done at one time.

If you can find some chocolate Cool Whip, that is super with strawberry shortcake on the chocolate cups!:lovestruc

I thought of that but was only going to Target and they don't carry that in the regular store, only the Super T's. I did get caramel sauce to put in the cup and over the whole thing. Tonight I might have it with a little Kahlua poured in it instead. :cloud9:

??? Anyone here have carpal tunnel surgery?

I have not but my BFF did and her recovery from it was fast, they actually went in through the palm of her hand instead of through the wrist. She had that and another surgery on her hand at the same time.

She has a skin condition, basically her skin cells reproduce and die off at a faster pace then ours does, and because of this her skin does not have the oils in it that ours does. It causes tightening in the joints of her fingers and she has to go in several times a year and have surgery to alleviate it. They do that by just slicing her finger open at the stricture and letting it heal. :scared: She had one of the alleviation surgeries at the same time as the CP surgery.

Just wanted to pop in here and let all my f&w buddies know that my waitlist came through and we'll be at bc fri and sat night! Can't wait! Souch eaisier to stumble back from epcot to bc!
