Ann - The bread pudding doesn't have raisins! This is actually a new recipe that I found. I know I shouldn't be experimenting with his bday dinner but I rarely make bread pudding so I just have to try it. If it's good I'll post it!

Well the boy did good last night.

If that boy doesnt end up on the stage I will be amazed.

And his reaction when we told him about WDW was everything I hoped for and more !!

He was so excited,we lay in his bed talking and planning for two hours and at one point he buried his head " because he was gonnae start crying with all his memories ".

The one downer was I had to tell him my nephew and niece were not gonnae be going this time.:sad1:

He woke up this mornin and the first thing he said was he going to save his pocket money to bring them back a wonderful present.....bless.


OMG.....I just about had a heart attack.....there was the biggest flash of lighting and roll of thunder I have ever heard !!

This recipe turned out to be great and easy but oh so not good for you!;)



White Chocolate Bread Pudding

This recipe makes 16 servings - I cut it by half. I didn't do the ganache, I made a rum sauce.

6 c. heavy cream
2 c. whole milk
1 c. sugar
1 1/4 lbs white chocolate morsels
4 large eggs plus 15 egg yolks
one 24 inch loaf stale french bread

White Chocolate Ganache

1/2 c. heavy cream
1/2 lb white chocolate morsels

Bread Pudding:

Stir together the cream, milk, and sugar in a large heavy saucepan. Bring the mixture to a boil then remove from heat and carefully add the white chocolate pieces. Allow the chocolate to melt for several minutes, then stir until smooth.

Whisk together the whole eggs and yolks in a large mixing bowl. Slowly pour the hot cream and chocolate mixture into the eggs in a steady stream, whisking constantly as you pour. Use a rubber spatula to scrape out all of the chocolate from the warm pot. Set the pudding mixture aside.

Preheat the oven to 350. Thinly slice the bread and place in a 9x13 metal baking pan. Pour half of the pudding mixture over the bread and allow it to cool for about 5 minutes. Use your fingers or a rubber spatula to press the bread into the pudding so that the liquid is absorbed and the bread becomes very soggy. Pour the remaining pudding over the bread and stir.

Cover the pan with aluminum foil and bake for 1 hour. Remove the foil and bake, uncovered, for about 20 minutes or golden brown.

Ganache:

Bring the cream to a boil in a small saucepan. Remove from heat and carefully add the white chocolate morsels. Allow the chocolate to melt for several minutes, then stir until smooth.

We went for a long ride today. DS got in about an hour nap. We went to the Wrentham Outlets and walked around, then got Wendy's on the way home. Have you ever been so hungry and then so disappointed after eating?
My chicken sandwich was dry and burn, usually their's is delicous. And my baked potatoe was old and gross...so disappointed. Good thing was I got a nice slow long walk in...more like a wobble!!!

WFD - All of Johnny's faves for his bday....Fried chicken, 'Ohana potatoes, collard greens and white chocolate bread pudding with rum sauce. I'll need to hit the gym pretty hard next week to burn off all those calories.:scared1:

Yummo...is this recipe somewhere!!!! I love bread pudding but white chocolate just put me ovver the edge. Tell me there are no raisins in it. I hate raisins.

I am having a crazy busy day; this is my 45 minute break in between activities. Tonight is a family pool party/fossil hunt at a church member's home and they do burgers and hot dogs, which is what we'll have for dinner. It's miserably hot so I will be getting in that pool.

I'm sorry to make y'all worry about me. I'm just going through a rough time right now financially. Trying to keep up with insurance, taxes, utilities on Mom & Dad's house and budgeting for Kyle going away to school is killing me. I've been steadily draining my retirement account and I'm not sure how much longer I can continue to do that. May need to cancel vacation this year.

Hey, everyone! Sorry I haven't been posting much. Computer died on Thursday, and we finally got it up and running again yesterday. Alan decided to break down and buy the new iMac that he wants now instead of waiting until Christmas. He really needs it for his freelancing, so we gulped hard and bought it.

My thoughts and prayers have been with you. I'm sorry that some of you are going through hard and discouraging times. I send you love and pixie dust!

Hey, I have a VERY odd cooking question for you guys. I was making biscuits last week and they just didn't look right to me, although they tasted fine. After some investigation, I noticed I had bought unbleached self-rising flour instead of bleached. Is there something I needed to do different to my recipe? What is the difference?

Laura- sorry that Liam had a bad day, those are hard, aren't they? Playoffs! More stress for parents but oh so exciting!

Lindsay- I don;t think that unbleached makes a difference. The humidity or lack of would though. Flour absorbs moisture so even a subtle change in the air could change the way the ingredients behave in a recipe.

Kathy- student loans can make all the difference! I hope that your friend can help sort it out with you. Good luck renting your Mom's house. If you can cover the expenses with the rent until the economy changes that stress will be lifted. :hug:

Glynis- I hear you on the computer issues. My sis IL gave me hers when Jeff took his big crankin fast as heck machine home and while I am so grateful that she did, it is not the same. I am so glad that you got your new one, now we will "hear" from you often! We are saving to get a new on maybe in the Fall. It totally goes against how we both are, it's not broken so we usually would not even consider replacing it, but oh my goodness.....I really want a new one!

Dinner tonight will be turkey cutlets somehow, mashed potatoes adn stuffing with gravy and a veggie.
 
Nancy, my mom said the same thing about the humidity. It was a crazy hot day and it was humid out. I guess that's all it was. Thanks for the info!
 
I have got to say that our mini meet was awesome! Marisa and I were so looking forward to talking to everyone, we already know that we know you! It was funny, kind of like when friends who have know each other for forever get together...you just start talking wherever you left off? That was how it felt for the two of us. Maria and Lauren are just like they post, friendly and chatty and warm. Bethany is as sweet and as funny as her stories and Charlene has laughing eyes and so much fun!

We had brunch at the Chart House, directly across from the NYC skyline. It was a lovely way to relax and enjoy the company of friends. Sailboats and cruise ships in the background, a warm breeze and marvelous mojitos on the deck and the company of lovely women made a lovely day!


I do have to cook a good meal tonight. Buddy kept Kady for the day adn it was a long day for him. He loves her to pieces but is not used to "girl" stuff. He picked her BF Miranda up and they made an entire day of it. Now you know girls can make you :dance3: and they did :rotfl2:. He thinks that they are all :cloud9: princess: and :lovestrucbut we all know better :lmao:He also thought that taking them to breakfast, then to miniature golf and buying them matching shirts adn hats, heading to a movie and feeding them movie stuff, and then off to get ice cream, fgeed the animals and more ice cream would be the answer to keeping them occupied. It was. But all that sugar, salt, more sugar and more salt coupled with only one real meal made them even more :jumping1: than they normally are. He had a ball but was exhausted.

I called when we got to Waterbury and told him we would be home shortly....now Buddy drives for a living, we call him "The Map" becasue he always can get us home whenever we hit a detour....so he know tha tshortly actually meant tha Kady needed to get in the bath and put her jammies on...he had over and hour more of bliss.
