The What's For Dinner Thread - March '11 (recipe index in OP)

She did good. This was a really fast meet. Her first event was at 2:30 and the last was at a little after 3 with one in between.

As for the phone, will get it on Thursday, they were sold out and will get the new ones in that day. I am getting the Samsung Sidekick G4.

We had basic hamburgers, hot dogs, potato salad, etc today.

Tomorrow is my oldest godsons graduation. :sad1:

A day down the salt mines today and it was Tuesday. Dinner was baked jacket potatoes with the trimmings. And we're having dinner at Mum's tomorrow :thumbsup2

I basically spent the weekend eating. Beck made enough food for an army. It was good though. I am sure she will post pics and details.

Ellen -- I am so glad everything is okay with Elizabeth and baby!

Nancy -- Congratulations to Debbie!

Kat -- Welcome home! We went to Disney in June once. Never again. I guess we'll have to put Kouzzina on our must-try list!

Princess -- Nice pictures, as always.

marie -- Most of your menus this week sound like salad would be a natural side. My kids love salad with olive oil and a little lemon juice. For the pork roast, you could have baked apples (apples cut up, sprinkled with a little cinnamon and dotted with butter and cooked in the microwave until soft) and wild rice. You could sprinkle toasted almonds on the rice. Kids like plates that have lots of color and lots of different textures. I'll put dried cranberries in salads; raw carrots and cucumbers are good for crunch, and nuts (if not allergic) or cheese are a good salty component. My kids also love green beans with toasted almonds, broccoli or sugar snap peas with sesame seeds, and roasted asparagus with parmesan cheese. Of course, the thing they love the most is starch! Bread, mac and cheese, pasta...etc. Let us know more about your tastes, and I'll have better suggestions.

We have a busy week ahead. I definitely won't get back here tomorrow. I am working a long day, Liam has an event after school, and then he has a baseball game tomorrow night. He is pitching. Wish him luck! They are playing the league's best team, and the kids are huge. It would be really good for him if he pitches a good game. The last time he pitched, he pitched a shut out into the sixth inning. Unfortunately, the other team's pitcher also pitched a shut out, so Liam's team lost 1-0. Liam was so disappointed.

Thank God! I have to tell you I am a bit emotional so your good news is making me teary! I am so happy but will not let Elizabeth out of my prayers. I confess I called out my Big Guns last night.

Kat ~ welcome home - you were so missed. It just doesn't seem the same in there without you. I can't wait to hear more about your trip. You just had to be over the moon being with your boys. You so deserved it my friend.

You all sound like you had a great weekend. Ours went way to fast. Saturday we were able to get 18 holes in at the CC. Sunday we had our BBQ and Doug's sister and hubby even joined us. I totally felt like we were celebrating. :woohoo: with everything ok with Elizabeth and the baby.

On Monday we were up early and on the road. We finally got home around 4:00. I got in the shower around 7 and when I got out the wind was just howling. By 7:30 we were under tornado warnings. We had no idea it was even bad out. It looked sunny when I got in the shower. It turned ugly real fast. We didn't even have time to get in the crawl space. Cooper and I hunkered down in the stairwell going upstairs. The walls were rumbling and the roof was banging. After all was said and done - the airport reported 92 mph winds and we got the brunt of it. We lost our front window, a bedroom window, shingles off 3 sides of the roof, water was seeping in to the upstairs bedrooms already, along with the cupboards in the kitchen and the living room window was blown out - water and mud, leaves and such all over my new living room and the carpet was soaked. We had just painted the exterior 2 years ago and the siding looks as if rocks went over it - holes and no paint on parts of the siding. It was so scary. Nothing I know, like Joplin and other places, but it sure hurts the heart when you go out finally and see your house so hurt. Thank GOD for insurance - the adjusters are on their way. I will keep you posted.

I think my manta should be - "If we didn't have bad luck we wouldn't have any luck at all"

WFDT ~ Elizabeth and Jay are cooking for us so I have no idea.

OMG Ellen, I am so sorry y'all got the brunt of the storm. Tornadoes are my biggest fear. At least with hurricanes we have enough warning time to evacuate but tornadoes don't afford that. THANK GOD y'all are safe.:hug: The cleanup and dealing with adjustors is a PITA but thankful to be insured. Tomorrow is the beginning of hurricane season and my new roof will be going up.

Ellen- I'm so sorry you had such a scare with Elizabeth, but I'm so thankful things turned out well. Didn't you have storm damage just a little while ago? I'm sure with the baby doing well at the end of the day a few broken windows are an easy problem to conquer. My manta lately is "oh well, it is what it is."

Kathy- I'm so glad you had such a great trip! We've only stayed in a studio, but I've heard the one bedrooms are nice. I can't imagine how hot it was if your saying it was hot.

Becky- I love cranberry or blueberry buckle (I use the recipe from King Arthur flour), but I'm the only one in my family that likes it. Enjoy your leftovers!

Laura- I know you are extra busy, but I hope your enjoying the new job! Good luck to Liam!

I'm sure Sheryl's busy with the little guy, but she hasn't been around in a while- hoping everything is okay with her.

Grilled chicken with peanut dipping sauce, rice, and broccoli for dinner.
 
Ellen I am so glad you and Cooper are ok. That had to be very scary hearing the wind and the window being blown out. Again thank God you are safe.:hug:

They do grow up too quickly, they need to stop that. :sad1: The graduation went well but it was hotter than Hades out there. They hold them at an outdoor venue here because the school auditoriums are too small.

:scared1: How terrifying! I am so glad you were not hurt. I am so glad you were home for that and not out on the streets. That is a lot of damage. I hope the insurance does the right thing for you. :hug:

figaro - When my kids were little, I was lucky if I could get them to eat baby carrots. They always loved the starches, so we had a lot of rice and pasta. Your weekly menu sounds yummy!

Kat - WELCOME BACK!!! Sounds like you had a good and yummy time! Can't wait to hear more about it!

Becky - Those pics are to die for!!! Laura is one lucky sister!

Laura - Congrats to Liam on his award! Good luck keeping up with all the activities this summer.

Our anniversary turned out pretty well. We agreed to no gifts this year, as the only things we really NEED are things that are just not in the budget, so we decided to save our money. Alan took me to Rodizio Grill for dinner, and we had a lovely evening, except for the fact that they sat us under the air conditioner and I froze!

We were able to get the documentary in a rough "showing" condition, and it went over well. We've got another couple of hard weeks of work left to do and then we'll turn it over to them. I feel really good about it!

Dinner tonight is taquitos with avocado slices.

Our anniversary turned out pretty well. We agreed to no gifts this year, as the only things we really NEED are things that are just not in the budget, so we decided to save our money. .


Welcome Home!!!!!!!!!!!!! Bud and I do not buy gifts for our anniversary either. Or birthdays for that matter. Buddy will sometimes call Marisa and ask her to pick something out for me but just as often we pass.

I miss Sheryl too :sad1:

I forgot to post our dinners. Saturday we had food at Gails, Sunday Donny and Anna came by and my neighbors stopped in so I just ordered pizza. I was exhausted so no cooking. Sunday was leftovers from Gail,s picnic. Tonight I took home chicken from Sharon's and made huge salads and topped them with the chicken.

I want to update you all on Joanie. We went to the Dr today and she is doing well. She is still in pain and is sleeping on the recliner, and has to wear a brace for three months but is really well considering. Thank you all for the prayers and well wishes for her!

Nan just to let you know I also slept in recliner for quit a while after my back surgery Still keeping Joanie in my prayers thanks for the update. The wearing a brace is common also although its no fun.

Yes, in case you haven't noticed we love recipes. I would also like to know how you made the pizza. I have a friend who had to put her family on a modified gluten free diet because of multiple allergies.

Nancy I am glad Joanie is doing as well as can be expected. Having to wear a brace can be a burden but it may not be for very long.

Lauri How are you fairing with all this rain. After my initial scare my basement is staying dry. I need to figure something out for that window well.
