The What's For Dinner Thread - March '11 (recipe index in OP)

Nan - That was too funny about the Lamb cake!:lmao:

Glynis – Congrats to Katie for working so hard and improving her grades and also to Jacob, that was a huge improvement!:thumbsup2 We’re also dealing with flooding issues down here, it’s a mess.

Vickie – Kids truly have no concept of age, too funny!

Gretchen – Here’s a link to the pork chop recipe, it’s really good:

Aimee – Welcome home! I’m glad y’all had a great time, can’t wait to hear about it!

I was going to grill but it is getting dark and the sky is getting very grumbly, so change of plans. Ground beef enchiladas and rice and a salad.

It went from winter to summer in just a couple of days. It is in the high 80's and humid again. The weekend is supposed to be in the 50's WTH.:confused3

Aimee Glad you are back and had a great time.

Nancy The 2 times I attempted to make a lamb cake it came out with the head separate. I never tried again after A was born, I didn't want him thinking lambs are headless and scaring him for life.:rotfl2:

Big Cuddly Bear Your smoothies sound really good.

PrincessInOz I love the wide rice noodles. The stores around here sell "wide" noodles that look like fettucine. I am going to have to go to asian market

Glynis- it is so hard when the kids have to work to bring their grades up. I know that this is probably the wrong attitude but I think that some kids need to get those notices in order to figure out how to better manage their time. Better that they learn at Katie's age and take the study habits that they have learned with them. Better when tehy are young and can turn it around. Good for both of your kids for taking the time to develop better study habits!

Vickie- I am :rotfl2::rotfl2::rotfl2: at the Dolly Parton comparison!

Dinner is a simple hot dog on the grill and chips. Buddy is at the farm and will not be home for a while and I cleaned all day.

You are so right, Nancy! She did need that wake up call. I'm just glad it came this year, when her grades don't count towards college, rather than next year. She's really learned that when you are absent, you are still responsible for the assignments, and it would have been much easier to do them sooner rather than later. Hopefully, that lesson will stick!

Dinner plans changed. The kids requested egg salad sandwiches. So, that's what we're having with cut up cucumbers and tomatoes. Nice and Spring-y.

Good morning!

Kyle is off to Manhattan, Kansas for their last road trip of the season. He's never done so much traveling before and has thoroughly enjoyed the season.

WFD - Taco Pasta Toss! bbl......

Hey Friends! We had a great trip and I posted pics on FB over the last few days. Good to be home, though!

.
What a great year for him!

Good Morning! I am really gonna try and catch up later...baseball has really got me running crazy and I have not been feeling well (not serious - woman things). I have a follow up with my GP today so hopefully she will give me something.

Dinner tonight will be something with chicken breast. We had meatball subs last night (I made the Rao meatballs again...so good!).

Have a great day my friends!

Aimee, welcome home! I've enjoyed looking at your NYC pictures on facebook.

Vickie...:lmao: Laura's kids still get confused when I ask them how old they think we all are. One time (some years ago) Liam declared that John was 12!

Will finish catching up later, but wanted to pop in some pics before heading out the door. Two very good meals this week, both from the current Fine Cooking magazine. Tea-crusted fried chicken with pickled shalllots, carrots, and green beans:

Spaghetti with grilled ratatouille--this was excellent!:

Back from the doctor...all is well. I have to go to the gyno and I got a name for a plastic surgeon. I really want to have this stupid mole removed from my nose but it is in a bad place.

Dinner is bourbon chicken, brown rice and inside out egg roll with snow peas added.

BBL...off to the gym!

Hello everyone. What a week of contrasts for me!

Princess – I hope you enjoy your dinner with Mum!

Thanks. I did. It's my birthday today; and we had an early celebration with the family at Mum's. Both my brothers and their families were there, and one of my cousins, my parents and us. We had chocolate cake and an ice cream cake (one of my nephews has an egg allergy, so it is always an excuse for an ice cream cake :cutie:).

Princess in Oz, what kind of fish is in that fishcake? I am familiar with the other ingredients, but not that one. On the screen it looks like tofu.

I get it from my asian/chinese grocer. They make it with a white fish and mince the fish meat until it is really, really smooth. You can get it as fish balls, either boiled or fried, or as fish cake, which is usually an oblong shape. I'll try and take a picture next time I get some. I have seen them selling the fish cake and the fish balls in the Asian grocers in the US.

Katie had her last orchestra concert last night, and it was really good! She's looking forward to orchestra next year, as she will be one of the older kids, and will have a shot at being in the first violin section. Need to get her signed up for lessons this summer! The best news on the Katie front, is that she's no longer failing 4 of her 8 classes. She's only failing 1. Of course, her algebra grade is only a D, but she is retaking a couple of tests this afternoon, which should bring her up. It's been a struggle, but I think she now realizes that grades are something that she needs to think about every day, not just when the failing notices come out.

Jacob's teacher contacted me a couple of days ago to let me know that he has improved his math grade significantly. At the beginning of the year he was testing at a 4th grade 5th month level (he's in 5th grade), and at the end of year testing he was testing at a 6th grade 9th month level. He's the only student in her class that improved that much! That was sure good to hear! At this rate, he'll be tutoring Katie before long!

Glad your kids are improving at school.

Hey Friends! We had a great trip and I posted pics on FB over the last few days. Good to be home, though!

Welcome back. Glad to see you had a great trip to the Big Apple.

I attended a funeral this week...my uncle's. He was only 63 and had been suffering from motor neuron disease for the last 7 years or so. He had been wheelchair bound for the last 3 years and really deteriorated over the last 4 weeks. It was sad for those of us left; but a blessing for him. He is no longer in pain.

WFDT - Waiting for DH and DS to come home with fish and chips. It's Friday night!

Princess Happy belated Birthday to you! Glad that you enjoyed your special day. Kady had an egg and dairy allergy so making cakes was sometimes a trial but we do have some good recipes as well as some egg substitutes if you are interested.

Lauren- you have had one heck of a year! I had two moles removed from my face and my Dr insisted that I see a plastic surgeon for the removals. I am happy with the results. So far it has been about one month and the scars are already blending in with the,, indulge me please............. "laugh lines" in my face

Today is a great day! I am going with Kady to Sunrise Park for a field day. The kids are doing experiments. Then I have her and one of her friends while I get ready for a tasting here. My soon to be DDIL is selling Partylite candles adn quite frankly, they are wicked expensive so I have bought all of them that I can justify. There is a specialty foods line that they carry so I am making a variety of foods to sample. I think we can say our weekly neighbor nights will start tonight :woohoo:

I will share some of the recipes I have Nanatized a little later on today.

Have a great day all!

Good morning, everyone! Gorgeous day here in Utah! The sun is shining, and the temps are supposed to soar to 80 degrees!

Princess - HAPPY BIRTHDAY!!! How fun to be able to celebrate with so much family! I'm so sorry for the loss of your uncle, though. It's always hard, even though we know it's for the best, to deal with the loss of a loved one.

Nancy - Enjoy your day!

Lauren - Good luck with the removal. I've had several removed from my back (skin cancer due to sunbathing as a youth), but never from my face. You'll be in my prayers!

This morning I get to shove the kids out the door to school, take Timothy to my sister's house, and then go to our annual bowling breakfast banquet! This year, my team placed second, so it ought to be great fun for us! We'll get a trophy for sure! After that, I'm stopping in at Barnes and Noble for a little me time, and a quick trip to the mall next door for some Bath and Body Works.

Alan has been out of town since yesterday morning, but will hopefully make it home late afternoon. I'm thinking we'll grill some hamburgers tonight. If not that, we'll do whatever he wants to do. His mother had an angioplasty yesterday, and a stint was placed. She is doing well, but he is anxious to see her. We are going to drive to her place tomorrow (she's about an hour and a half away). It should be interesting, to say the least. Just remind me to keep smiling!

Happy birthday, Princess!!!

I'm sorry about your uncle

I have an all night movie thing tonight that starts at 8pm so we're going to grab dinner before that. Nothing like jumping right back in after vacation! It's a crazy busy weekend.

Hi Everyone,

Today is a day off from work for me, so I am going to try to get caught up before our crazy weekend starts. Caili has her ballet production tomorrow, so she has to be at rehearsal from 4-7:30 tonight, and then the shows are at 1 and 6 tomorrow. Liam has a baseball practice tomorrow afternoon, so he will miss the show. He actually was looking forward to it and is disappointed he can't be there. I thought it was kind of sweet. He asked me if I could videotape it. I don't think I can, but the ballet school usually does and sells copies. Anyway, dinners are going to be grab-and-go for the next couple of days.

Princess -- Happy Birthday! I'm sorry about the loss of your uncle. Liam has an egg allergy too, so his cake is always ice cream cake.

Today is a great day!

Have fun! I look forward to seeing the recipes. The demise of the lamb cake made me laugh.

Glynis -- I'm glad Katie is getting back on track. Congratulations to Jacob too!

Aimee -- Welcome back! I haven't been on FB in a few days, but I'll check out your pictures soon.

Gretchen -- Does Hailey still get doughnuts with her tub? Even without the doughnuts, I can't blame her for hanging out in the jacuzzi and pool.

Kathy -- I'm so glad Kyle had a great season.

Vickie -- :rotfl: about Dolly Parton!

It's a beautiful day here, so I am going to go enjoy some sunshine before the Mom Express has to leave. Have a great weekend!

Princess- Happy Birthday. Sorry about your uncle.

Dinner last night was good. I made Swai fillets that I rubbed with lemon zest and salt, then coated in Panko and pan fried in olive oil. I squeezed on some lemon juice when it was done. Had it with cous cous and green beans. Dinner tonight might be ribs.

Busy day tomorrow myself. I planned on getting some work done but that went out the window, will probably come in on Sunday for a little while.

My middle godson was pulled up to play varsity lacrosse for playoffs and has a game tomorrow. He had a playoff game yesterday, which they won, and got to play a good amount. He was hoping for at least a little bit so he could get his letter.

After that he is going to prom with a friend at her school and I have been tagged as Photographer. We are starting at one house for pics of just them, then on to another house for group pics.

After that I am going to get some stuff done at home then I will come in to work for a little on Sunday.

Lauren – Good luck with the mole removal, do you have an appt scheduled?

Princess – Happy Birthday! I hope you had a magical day! Sorry about the loss of your uncle.

Nan – I don’t recall you having surgery but am happy to hear you’re healing so well! Enjoy your day, sounds like fun!

Glynis – I will keep Alan’s Mom in my prayers, hoping she has a speedy recovery!

Laura – That Liam is such a sweet boy!

Marilyn – Good luck to your godson and I hope he has a great time at the prom!

Everyone down here is on pins and needles with the anticipated flooding. Looks like the opening of the spillway will divert the water and NOLA/Baton Rouge will be spared at the expense of flooding thousands of others. It's a lose-lose situation.:sad1:

WFD - Going out for seafood! (Lauri - yes we're going to Acme;))

That stinks Kat.

They should have spillways that are like deep lakes along the river so that water can be diverted without causing flooding.

Thanks everyone

Kat - stay safe and I hope that it's the best of the worst lose-lose situation for everyone! There is nothing worse that being in a flood.

WFDT - We're going out with friends to celebrate my birthday and having Asian. Looking forward to it.
