The What's For Dinner Thread - March '11 (recipe index in OP)

Marilyn- That's stinky, we used to never lock our doors at home and then something similiar happened to us.

I usually lock my van up every night but the one time I forget this happens. :headache:

It really ticks me off because I had a brand new pair of work out pants and a new Brita bottle in there. :sad2: Not to mention the only pair of tennis shoes I have which I bought about 5 years ago at Kohl's on clearance for $15. Nice K-Swiss ones that I only wear to the gym.

And of course I just went to the podiatrist who told me not to buy new shoes until my orthotics come in. Although, I did buy new flip flops Saturday. :rolleyes1
 
Tried something new and super easy tonight an it was a HUGE hit at my home.... But the only place I know to get the sauce is at California Tortilla, a chain Mexican place. The sauce is called Hickory Heaven. And it indeed, tastes a lot like hickory smoke.

Hickory Heaven Chicken Salad:

About 2 pounds of chicken parts - I used skinless / boneless thighs

1 onion, diced

~ 6 TBS Hickory Heaven

Mayo

Salt, pepper to taste


I cooked the chicken on an oiled cast iron skillet because it can really take the heat to give a nice char to the outside of the chicken. It was SUPER MOIST.... take care to not overcook. No, really, do not over cook. :)

When you take the chicken off the pan, let it rest in a big bowl, and make sure you keep any juices from the chicken. When cool, put the chicken in a food processor and use the PLASTIC blade. If you use the metal blade it will overprocess, IMO.... but to each their own.

Take the chicken from the processor bowl and put it back in the big bowl with and chicken juices collected from when it rested. Add all the rest of the ingredients, and stir. Chill it til ready to use.

Now what I did was make lettuce wraps with it with some diced tomato, but my family ate it on a roll with lettuce and tomato.

BTW, a nice substitution, if you can't fund Hickory Heaven - but not as good, IMO - is to use a hickory BBQ sauce. BBQ sauce adds a little more sweetness to this chicken salad than I like for this use. ( I tried a little with BBQ sauce )

Morning, all! It's another grey, rainy day here. I'm not too upset, as the forecast says it's supposed to stop by tomorrow. As long as it doesn't turn to snow, I'll be happy.

Gretchen - Your story about Paige and the cemetery reminded me of a news story Alan covered a month ago. Things kept disappearing from a local cemetery: small statues, floral arrangements, etc. The police put a GPS tracker on an item, and sure enough the item was stolen. They tracked it to a woman's house. She had rooms full of stuff taken from the cemetery! She said that she was in desperate need, and was selling things on ebay! Too bad her records showed that she was NOT in desperate need. We were floored! I just can't imagine stealing from a cemetery!

Nancy - Sometimes the worst looking cakes taste the best! Nola is a crack up! She may just have a future on the stage!

Kathy - Woohoo for your trip getting close!!! We have finalized our Disneyland dates and will be heading out on July 31-August 5!!! Can't wait!!!

Ellen - How fun that you have Matthew for a whole week. I know someone who will be getting a lot of spoiling!

Bethany - Are things kind of winding down, now? Our school has 19 more days, and things are either in panic mode (Katie), or laid back mode (elementary).

Dinner tonight will be the tuna salad that I never got around to making last week. No fooling! I'm serious, now! It will happen!
 
She said she did much better than she thought she would but as you can imagine, it was a rough few days. Especially when she went to the cemetery and someone had stolen the arrangement from her mother's grave. :headache: I mean, who would do that?!?

Last night we went out for Jay's birthday. He loves Mexican food so that is what we had. Matthew is finished with school and his internship with the bank doesn't start till next Monday so he is home all week. I had no idea he would stay, so this is a BIG and wonderful suprise. We are having a ball.

I hope the flood waters down that are going down the Mississippi river don't reach any one. The flood waters are one problem but snakes and alligators that is just rude:scared1:

Tonight is just a greek salad for me and a leftover burger for Mr A. Somehow we went from 50 to 90 degrees in 2 days.

It has been crazy here trying to adjust to working and still keep up with the kids' busy schedules. I am exhausted! Right now, I have to be on full brain power the whole time at work to learn everything. Eventually, some things will be pretty routine, but until then, I come home ready to crash, but then it is time for ballet, skating, baseball, dinner...

I don't think I can remember everything now, although I did read. I do thank all of you for the good wishes and thoughts. I appreciate it!

A few things:

Nancy -- Your Nola stories really made me laugh. Thank you for sharing! She seems like quite the character.

Marilyn -- Sorry about the theft. That's frustrating, but at least they did not get anything too valuable.

Gretchen -- I can't believe anyone would steal from a cemetery. That's awful. Paige seems like a strong young woman.

Glynis -- I'm glad Alan got home for Mother's Day. I knew he would.

Kathy -- I'm excited for you! The trip is getting really close. Kyle must be looking forward to it as well.

Okay, my brain is mush. The rest of the week is crazy since Caili has her ballet production this weekend (on top of everything else) but I will at least check in again on Friday, if not before then.

There is a local story about 2 neighbors 1 of whom took a dislike to the others landscaping and listed it on Craigslist. :sad2:
 
Nancy - I'm glad the strike was averted and that everyone ended up relatively happy. And I've never had a Malibu Bay Breeze either.

Glynis - I was so happy to read that your Mother's Day turned out great! :thumbsup2 I have 2 asparagus crowns in my garden. One is reasonably productive, but not enough to feed a family of 3...the other...:sad2:...well...the spindly ferns are very pretty to look at. And congrats on being an aunt!

Bigmerle1966 - I'm sorry that your gym bag got stolen. At least you get to go shopping for new gym clothes....again! Does insurance cover any of this?

Today is Wednesday and it's to mum's for dinner. But this was from two nights ago.

The last time I posted a noodle dish, someone (and I forget who) mentioned that they could only get the flat rice noodles; not the rice vermicelli. So, here's a favourite South East Asian hawker meal of mine to share.

Char Koay Teow

My Starting ingredients:

  • Rice Noodles, about 100g per person
  • Shrimp, peeled, about 4 or 5 per person
  • Chinese sausage (lap cheong), 1 per person
  • Fish Cake
  • Bean shoots
  • Chives
  • Eggs, 1 per person
  • Garlic
  • Oil

For the sauce, mix together:
  • 1 tablespoon thick soya sauce
  • 2 tablespoons light soya sauce
  • 1 tablespoon water


In a moderately hot wok, I fried the shrimp in some oil for about 30 seconds on each side until the shrimp just changed colour. Remove from the wok and put to one side.
I also pre-cooked the Chinese sausage in the same way. I fried the Chinese sausage for 1 – 2 minutes and removed from the wok.

Put the garlic and fish cake in the hot wok and stir fry in some oil (I think I normally use about 1 tablespoon) for about 30 seconds.

Add the rice noodles and a handful of bean shoots to the wok and stir fry together for about 2 minutes.

Push the contents to one side and crack open an egg into the wok (you can add a little bit more oil if needed). Fry/lightly scramble the egg with the rice noodles.

Add about 1 – 1 ½ tablespoons of sauce to the noodles and quickly stir fry for 30 seconds to a minute to mix it all in.

Add the shrimp and the Chinese sausage to the wok and quickly fry for another 30 minute. Add the chives and another handful of bean shoots to the wok and fry for another 1 – 2 minutes.

Place on a plate and serve.

Your cake story sounds like a cake I made for A's class when he was little we call it the Hurricane cake. I decorated it like a camp along a river anyway while putting it the frig I bumped it and everything shifted. A thought it was too funny he had to tell everyone it was a hurricane that hit the campsite.:confused3

I am one of the only people on my street who has not gotten into the gardens for Spring. I used to work outdoors regardless of the weather but the past few years have changed my work ethic. I refuse to go out until it is warm and sunny.....no matter that everyone else has their gardens all pretty and new mulch on them. Buddy dropped a huge load off and ther it sits...........just looking at me. I know that I should let him help me, it sure moves faster when he is carting it, but he and my plants do not get along! We have reached an agreement.....I will put it down and spread it out after my beds are ready and he can go back and even it all out and make it neat. My idea of finished and his are two different thing :rotfl2:

Princess in Oz, what kind of fish is in that fishcake? I am familiar with the other ingredients, but not that one. On the screen it looks like tofu.

Dinner was good last night, but I did not have time to upload the pictures yet.

WFD: I was hoping to make grilled ratatouille, but it is cold and raining here...AGAIN! Grrr.
 
Morning, all! The sun is peeking through here for the first time in 2 days. Timothy and I are off to the library in a few minutes. Guess I'd better figure out dinner before we go so I can stop at the store if I need to.

The tuna salad from last night hit the spot! Even the kids liked it. Well, all except Leslie. She claims not to like tuna. Oh well. Her loss! I'm hoping Alan didn't take all the leftovers for his lunch. It was really yummy!

Katie had her last orchestra concert last night, and it was really good! She's looking forward to orchestra next year, as she will be one of the older kids, and will have a shot at being in the first violin section. Need to get her signed up for lessons this summer! The best news on the Katie front, is that she's no longer failing 4 of her 8 classes. She's only failing 1. Of course, her algebra grade is only a D, but she is retaking a couple of tests this afternoon, which should bring her up. It's been a struggle, but I think she now realizes that grades are something that she needs to think about every day, not just when the failing notices come out.

Jacob's teacher contacted me a couple of days ago to let me know that he has improved his math grade significantly. At the beginning of the year he was testing at a 4th grade 5th month level (he's in 5th grade), and at the end of year testing he was testing at a 6th grade 9th month level. He's the only student in her class that improved that much! That was sure good to hear! At this rate, he'll be tutoring Katie before long!

So, things here are going quite well, and we are all doing much better, now that the white stuff is melting. Of course, now we have to worry about flooding. Our snowpack in the mountains is at 200-400% of normal. It's all got to go somewhere when it melts. There are several communities about 2 hours north of us that are already experiencing flooding. It could get ugly this summer. Luckily, we are not on a flood plain, but still! Yikes!

My wee niece (6) loves Dolly Parton and she was watchin her on TV earlier.She asked my sister how old Dolly was and my sisiter said in her 60's and she thought older than her grandma.

To which my wee niece replied...." Really,that old,I thought she was about the same age as my Auntie Vickie !!! "

Now Im not entirely sure how to take that.

How about LUNCH today? Yet another smoothie... and this one scared me when I read it in a magazine, but I adjusted it to my tastes.

Jalapeno - Mint Smoothie

1//2 jalapeno seeds removed
1 cup plain yogurt - but I bet vanilla would work
1/4 cup mint
1 TBS honey
1 Splenda
pinch of salt
pinch of cumin powder
1 cup ice

Blend away and enjoy. BTW, this isn't actually would I would call spicy. It does have a little "zip" to it, though.

And I really enjoy this one, but it isn't one to have all the time, IMO.... just a change of pace.
 
How long had it been there? That happened at my grandmothers grave once and the cemetary "cleaning" crew had gone through and took everything, old and new, and had dumped it in the trash. :headache:

It had only been there for two days. So it still looked nice and new.

This isn't one of those newer, fancy cemeteries like that. This is an older place. Heck, her mother's funeral was in March but I saw lots and lots of obvious Christmas arrangements on other graves. But other than the initial upset, she has taken it pretty well.

Well then Buddy was certainly happy. Kenny would have been thrilled just to start with ice cream.

Hailey is doing really well. She loves her room and there are several mornings that she will wake up and doesn't come out. Kenny can hear her humming to herself and playing with her toys in bed. She even loves her therapy room. But I still think her favorite part of the new house is a toss-up between the jacuzzi and the swimming pool. She has certainly spent a lot of time in both.

We've had the rain too, but we've had the heat and humidity to go with it. We have already begun the "bad hair season" down here.

Kenny and I were talking last night about how late you get snow. It's hard to believe we feel like we are melting and your snow hasn't melted yet.

I'm proud that both kids have improved so much. Katie will get it together, I'm sure of it. Especially if she thinks she's in any danger of being tutored by her younger brother. ;) But seriously, I think you have wonderful kids and I know that Katie will figure it all out. She has a lot on her plate and it gets harder and harder for them to work it all in as school gets harder and harder. Amanda, who is normally a very good student, is having a difficult time this grading period because of softball. But she'll get it together too. (I hope).

:lmao: You just never know what they are thinking, do you? :lmao: And as I've said before, they all think once you're over 25 or so, you're roughly the same age - old. Sad, but true.

I'm with you on the grave visiting thing too Vick, I don't go to my Dad's grave very often either. Since his funeral, I've only been there twice to put flowers down. It isn't that it's too hard, it's just that my Dad isn't there so I don't see much point beyond making sure the space is cared for and looks ok.

Tonight's dinner is steak with potato casserole and maybe some green beans. I'll see what I have left in the fridge.

Gretchen- That's my kiddo's favorite thing to do on a Saturday! She is either whistling or singing in bed playing with her stuffed animals. I don't think she'd do is if she knew we could here her, but I'm glad she's still just a little kid at times.

Vickie- I don't think it's terrible that you leave your car open, you just feel safe to do it. We live in such a quiet town I think we'd be okay to go back to leaving them locked, but now I'm in the habbit.

Glynis- I didn't realize Katie had that much work to bring her grades up, I'm sure she'll learn it's easier to do it right the first time around. That's fantastic her teacher's are willing to work with her, I'm sure they know she's a good kid that just slipped up.

Just saw the time, gotta go. I'll try and get back later to finish catching up. If not, some spicy honey chicken thing for dinner.
