The What's For Dinner Thread - March '11 (recipe index in OP)

Lauri- I also hate job worries so I am sending lots of :wizard: your way!

Janice- Welby spends more time trying to hide her laughing, she thinks that Nola is hysterical! Today when she came to wish me a Happy mother's Day I asked her if she was going to say "Happy Mother's Day" to her Grammy and was informed that it is "Mommy's Mother's Day. It is Nola's Mother's Day too because I take good care feeding my baby" :goodvibes" Brian had given her a little yellow tulip to celebrate how much she takes care of her little baby doll.

Glynis- nice day!

Lunch was so good! WE have leftover pizza for dinner tonight. Buddy brought one home yesterday from his friends restaurant.

Lauri - I'm so sorry there are job worries. That's never any fun! Crossing my fingers that it all works out.

Laura - I hope that your day goes well. I know you'll do well!

Dinner tonight is a recipe from Tasty Kitchen: Hawaiian BBQ Pulled Chicken Sandwiches. I thought it sounded really good, and it will give my crock pot a good workout. I still need to get the stuff to make coleslaw to go with it, though. I don't want to go to the store, as it's raining quite hard, so I'll put that off until later this afternoon. We are also not having it on buns, but over brown rice. Hope it's good!

Timothy and I are planning on staying home, warm and dry today!

Oh, I almost forgot! My brother and his wife are the proud parents of a new baby boy as of this morning!!! Cooper Robert was 7 pounds 12 ounces at birth. He's about 2 weeks early, and mom is doing just fine! I can't wait to see him!!!

Have a great day everyone!

Nola is on fire lately. Welby said that she had to take something away from her and when Nola asked for it back she asked her if she was going to behave with it. After a little thought Nola said "Probably not" :rotfl2:

:rotfl2::rotfl2::rotfl2:

Lauri, I hope everything works out OK with your job.

WFD: the local asparagus is in! So, a big plate of asparagus. Mine will be topped with a poached egg and parmesean shavings, and John's with butter poached lobster.

Glynis- congratulations.

Dinner last night was a salmon burger and roasted potatoes and onions. Tonight it will be chicken wings and roasted veggies. We have asparagus and green squash in the fridge to use up.

DM worked yesterday so I gave her her Mother's Day presents Saturday night. Got her the usual GC to Starbucks, she has to have one for every holiday and her birthday, flowers and a chicks and hens flower pot that I got her at a pottery place in Ohio on the college road trip.

Funny thing is it's been in the trunk of her car for the last couple of weeks. :rolleyes1 She decided to clean all of the stuff out of the back of my van, she forgot we were taking my sisters van to visit my DB, before we left for his house and never put it back. And as nosey as she is she never asked what it was and why was it in my van. It was just sitting in the box, not wrapped or anything.

And speaking of my van, someone got into it and stole my gym bag. Friday morning I went to get in it and noticed that the cup holder was closed, the rubber mat in the cubby below that was pulled out, a bottle of water was laying on the floor and dirty tissues that were in another cup holder were all over the floor too. And it's my own fault, I forgot to lock it the night before.

I didn't realize the bag was gone until last night when I went to check it to make sure it was ready for the gym today. It was in the way back seat before and I never thought to check on it when I realized someone has been in there. They also got in to my DM's unlocked car and stole two 24 ounce 6-packs of Pepsi.

Gretchen :lmao:I thought you had a new recipe "Tory's heartworm' I thought yuck, poor kids!!

:rotfl: I would have clarified a bit better but my computer was zoning in and out and I was afraid I would lose my whole post so I sent it without really being finished. Our office server sits under my desk with my cpu and it shares my monitor. So every so often when the server is doing some sort of maintenance, my monitor goes nuts. The joys of my IT people.

Sheryl ~ How did last night go? Did you put him down at all? :lmao: I already know the answer to that one - I wouldn't have either. Don't they just smell wonderful and those little soft heads. Oh man we need another baby in our family!! :rolleyes1

I'm just that bad myself. The young man who works for my mother and his wife are expecting their first baby, a girl, in October. Neither have parents living nearby so I hope that means I get to babysit lots and lots. I've already put dibs in on the first babysitting. :rotfl:

Jacob came home from school yesterday with a cute Mother's day present. I'll have to post a picture of it. It's a layer of bath salts in a large sundae glass, with a bath pouf on top of it. It looks like an ice cream soda. So cute! He was so pleased with himself that he just couldn't wait until Sunday to give it to me! Darling boy!!! He knows how I like my bath!!!

That sounds precious! And what a sweet boy not to be able to wait. I remember being so excited that I couldn't keep those sort of secrets either. I'm so glad you had a good Mother's Day and that Alan was able to make it back to help make your day so special. And congrats on the new baby in your family. :cloud9:

We have reservations for a five course dinner (including champagne;)) for Sunday evening, BUT Kyle informed me they may have practice. I’m so sad about that.

I'm so glad Kyle was able to make dinner last night. I hope it was wonderful!

Mother's Day Dinner

Grilled Rib-Eye... already marinating
BBQ chicken
Cream of Asparagus soup
Corn on the cob
Salad
Desserts

That sounds yummy!

Princess- Thankyou for asking about the strike. Yesterday about 1500 Teamsters and Engineers converged on the meeting site. They did vote to strike and Buddy was teasing that we would live on spaghetti. Within 3 hours we got the call that there was an agreement and they can work on Monday. Believe it or not, the main sticking point was with one company that engaged in some very unsafe practices which resulted in a major accident. They are mad at everyone and refused to sign. Buddy said for once it was not the rank and file who everyone was peeved with...it was in the management house. I am glad it is settled, our little group of neighborhood dinner buddies all work together so it would not have been fun. Buddy is a company man for 40 years in the address and felt terrible. His boss and wife were so worried that this would affect us but that would never happen.

That's wonderful news Nancy. I'm so glad it all worked out this well. For Buddy and for all the other workers. And for your sanity. :rolleyes1

Dinner last night was grilled chicken, mashed sweet potatoes and corn. I made pudding for dessert. I had Welby's girls so she and Brian could go to dinner. Nola is on fire lately. Welby said that she had to take something away from her and when Nola asked for it back she asked her if she was going to behave with it. After a little thought Nola said "Probably not"

Now for an important question.............Why has no one told me how good a Malibu Bay Breeze is???????????????? Holy Smokes!

:lmao: What a scream!! :lmao:

Happy Mothers Day to all.
Sorry havent been around much I have a lot going on here. Just pray I have a job by me after all the dust settles. Buget cuts and new superintendent cant say much more right now sorry.

Lauri, I hope that things work out with your job. I'll be praying for you.

Kat, glad Kyle is home and you are packing. I dont think I mentioned but you will be meeting all of my sisters in October. They all decided to go to F&W! < That is Jane, Patty and Nancy dancing and the banana is me! :rotfl:

How fun! I hope we overlap some too! I'd love to meet some of your family.

:rotfl2:

Lauri, I hope everything works out OK with your job.

WFD: the local asparagus is in! So, a big plate of asparagus. Mine will be topped with a poached egg and parmesean shavings, and John's with butter poached lobster.

That sounds amazing! I love asparagus but no one eats it in my house but me. It's so expensive that I can't justify the expense just for me. So I'll dream longingly about your dinner.

That stinks! We had someone break into Kenny's truck one Friday night in our driveway. My car was locked and they didn't break into it, but Kenny's wasn't and he lost his GPS (the 2nd one he has had stolen). It is so aggravating. I'm so sorry.

I had a busy weekend. Saturday mid-day we went to see Mary, the lady who took care of Hailey when she was younger. We had a nice visit with her and Saturday evening I made dinner for Kenny's mother. I was supposed to cook lunch for my mother yesterday but her business got busy and I ended up cooking dinner instead.

Kenny got me a gift certificate for a massage, which I love but will never spend the money on for myself. Amanda, bless her heart, handed me a floral nail file and said she bought it herself. She then went on to tell me that she got her mother the same thing and that they were $3.50 each. I didn't have the heart to tell her why you shouldn't tell someone that, but I have to remember to teach her that before her next gift giving moment arrives.

Tonight is going to be take out. Kenny and I are having a business meeting tonight at 7:00 and hopefully this will be a good one.

Lauri – I’m so sorry you’re having job issues. I will keep you in my prayers.

Lauren – I’m so excited about meeting all of your sisters!!

Glynis – Congrats to your brother and his wife on the birth of their baby!!

Marilyn – I’m sorry to hear both of your vehicles were vandalized.

Gretchen – I’ll be praying all goes well tonight.

It sounds like everyone had a nice Mother’s Day!

Popping in some pictures of meals from the weekend. On Friday I made cedar-planked rainbow trout with a lemon buerre blanc, Pioneer Woman's crash hot potatoes, and (non-local) asparagus:

Saturday we grilled a huge piece of grouper in between the torrential rainshowers:

This was the entire side of a fish, it weighed almost 3 pounds! I also made a cheesy baked rice casserole that went over really well with everyone, but it did not make for a good picture.

Yesterday I went to my inlaws and made them lobster rolls, caprese salad, and cole slaw. No pictures. The leftover lobster tails are being made into John's butter-poached lobster tonight.

Good afternoon all, hope everyone had a nice mother's day. We didn't do much, but that's what we like to do on Sundays. We went to see Thor in 3D, it was the first 3D movie we've seen and none of us really cared for it. It was black and fuzzy at the top and bottom. The credits were a space scene and that was pretty neat in 3d.

Gretchen- Glad you had a nice visit this weekend. How is Paige doing?

Marilyn- That's stinky, we used to never lock our doors at home and then something similiar happened to us.

Glynis- Congratulations to your brother and family! I gave my mother aspargus one year, it takes a few years before you can harvest it I think. Hers are staring to come up now, it's a fun plant to watch.

Lauri- I hope everything works out with your job.

Kathy- Glad you had a great dinner and Kyle was able to make it. I love that you are already packing for your trip, I would be too!

Sorry, I'm sure I've missed a bunch. Dinner tonight is kielbasa, roast potatoes, and green beans.

Okay, I have been doing terrible at keeping up again. :guilty: I jumped back in at page 50.

It looks like everybody had a great Mother's Day! :grouphug:

One of our NOLA gals had emergency surgery yesterday so we all got together and purchased some gift cards to a local supermarket and pizza place to hopefully cover a few days of meals for her, her DH and her 3 boys. I’m waiting for her to get home so I can run them over to her and see her!

That was a great idea you had. She really appreciated the gift cards. And, I am so glad I got to see you the other day when you came over to drop them off for her!

Wow...craziness. I am glad it is worked out.

And the story about Nola had me laughing! :lmao:

Sorry havent been around much I have a lot going on here. Just pray I have a job by me after all the dust settles. Buget cuts and new superintendent cant say much more right now sorry. :sad2:

I hope and pray you have a job!

Well, that's rotten.

We have started going up on the levee every day to look at the water. It just keeps going up. :sad2:

Tried something new and super easy tonight an it was a HUGE hit at my home.... But the only place I know to get the sauce is at California Tortilla, a chain Mexican place. The sauce is called Hickory Heaven. And it indeed, tastes a lot like hickory smoke.

Hickory Heaven Chicken Salad:

About 2 pounds of chicken parts - I used skinless / boneless thighs

1 onion, diced

~ 6 TBS Hickory Heaven

Mayo

Salt, pepper to taste

I cooked the chicken on an oiled cast iron skillet because it can really take the heat to give a nice char to the outside of the chicken. It was SUPER MOIST.... take care to not overcook. No, really, do not over cook. :)

When you take the chicken off the pan, let it rest in a big bowl, and make sure you keep any juices from the chicken. When cool, put the chicken in a food processor and use the PLASTIC blade. If you use the metal blade it will overprocess, IMO.... but to each their own.

Take the chicken from the processor bowl and put it back in the big bowl with and chicken juices collected from when it rested. Add all the rest of the ingredients, and stir. Chill it til ready to use.

Now what I did was make lettuce wraps with it with some diced tomato, but my family ate it on a roll with lettuce and tomato.

BTW, a nice substitution, if you can't fund Hickory Heaven - but not as good, IMO - is to use a hickory BBQ sauce. BBQ sauce adds a little more sweetness to this chicken salad than I like for this use. ( I tried a little with BBQ sauce )

Good Morning! Quick fly by...I need to get straightened and head to the gym. I haven't been since Tommy has had a runny nose. He was one big snotty mess!

Dinner will be Grilled pork chops with apricot sauce, brown rice, green beans and salad.

Have a great day~! BBL

Good morning!

Becky - That grilled grouper has my mouth watering!:thumbsup2

I just did our online check-in, it's getting close now!:yay:

WFD - Chicken Marsala, pasta and green beans.

Good Morning!

Gretchen- hope all turned out well!

Marilyn- GRRRRRRRRRRRRRRRR! I have never understood why people take things like that!

Becky- I always chuckle when you post that you cook at your IL's :rotfl: They are smart though..........getting lunch that you cooked is a treat!

Bethany- I have not idea how you keep up with anything, you are one busy gal!

Last night was Erica's birthday. We had a smoked shoulder, potatoes and carrots, green beans and garlic bread. Chocolate cherry cake for dessert. I have decided that I really hate frozen green beans.

My cake tasted good but if Erica used how it looked as a sign of how I love her :sad2:. I added a fudgy cherry filling with a chocolate whipped butter cream frosting. The entire top layer slid off and the only thing that kept in from landing on the fridge shelf was the lip of the cake plate. It was really ugly!

Welby brought the girls down and joined us for dinner. Nola did not eat...she sang to everyone at the table, she asked everyone how their dinner was, she made sure she told everyone how good Nana cooked, she is the Belle of out Ball!

I am thrilled today. Marisa is sick and working from home but I am still picking Kady up from her 1/2 day at school. I have a luncheon date :cutie: with my girl so I think dinner will be leftovers!

She's too stinking cute!:rotfl:

Nancy that Nola :lmao: I could just eat her up she sounds soo cute. Sorry to hear that Marisa is sick. Your cake story sounds like a cake I made for A's class when he was little we call it the Hurricane cake. I decorated it like a camp along a river anyway while putting it the frig I bumped it and everything shifted. A thought it was too funny he had to tell everyone it was a hurricane that hit the campsite.:confused3

I just forgot everything else I was going to say so I guess I'll be back :rolleyes1

Gretchen- Glad you had a nice visit this weekend. How is Paige doing?

She said she did much better than she thought she would but as you can imagine, it was a rough few days. Especially when she went to the cemetery and someone had stolen the arrangement from her mother's grave. :headache: I mean, who would do that?!?

Wow, that does mean it's close.

Sorry about Risa not being well. But enjoy your lunch with Kady. Those are the best times. :lovestruc

:rotfl: I'm sorry Janice, I shouldn't laugh, but that is hysterical!

Last night's meeting went well. Hopefully I'll have some news in the coming months. Anyway, dinner tonight will be baked chicken and fresh corn on the cob.

Morning everyone!!

I am swamped at work - what's new right? Today is payroll and bill day so I have LOTS to do but wanted to pop in and say hey!!

For Mother's Day all of the kids were home. Matthew, Stephanie and Marty had just flew in from Vegas (they were a bit tired ) and Jay and Elizabeth and Ethan popped in for a bit too. Doug's Dad was here also. We grilled burgers and hot dogs and I fixed a few salads. Fun fun day.

Doug and I worked out literaly all day on Saturday. The flower beds and yard look wonderful. I love when that is finished, now all I have to do is sit back and admire our work.

Last night we went out for Jay's birthday. He loves Mexican food so that is what we had. Matthew is finished with school and his internship with the bank doesn't start till next Monday so he is home all week. I had no idea he would stay, so this is a BIG and wonderful suprise. We are having a ball.

WFDT ~ Grilled pork chops, sweet potatoes and leftover salads.

I really need to get to work now. Sorry I can't catch up but I will later, I promise!!

Make it a great day all!!!

Good morning!

Nancy, have fun with Kady! Your Nola story made me smile.

Kathy, you must be SOOO excited! First trip as an owner!

Ellen, Happy Birthday to Jay!

John decided he did not want the lobster after all, so I froze it. Hopefully it will be OK. I'll probably just make a bisque with it or something. Here's the asparagus:

5706288567_f09d3a5b35.jpg

WFD: something with chicken. Hopefully grilled but that will depend on the weather. Right now it is cold and damp.

Marilyn- GRRRRRRRRRRRRRRRR! I have never understood why people take things like that!

I'm thinking it was teenagers. I can't imagine an adult looking for stuff to steal is going to take an old beat up backpack and two 6 packs of soda. :confused3 I am going to have my godson go look around the neighborhood to see if they threw it away once they realized there wasn't anything of value in it. My i-Pod was in the house thankfully.

She said she did much better than she thought she would but as you can imagine, it was a rough few days. Especially when she went to the cemetery and someone had stolen the arrangement from her mother's grave. :headache: I mean, who would do that?!?

That stinks.

How long had it been there? That happened at my grandmothers grave once and the cemetary "cleaning" crew had gone through and took everything, old and new, and had dumped it in the trash. :headache:
