I REMEMBER dinner is breakfast stuff. I found a recipe for a lemon ricotta pancake on PW"s site that sounds really good you make in a cast iron skillet instead of individual cakes.
 
Glynis ~ I so hope your weekend is special. You have to be one of the BEST Mothers I know. Alan had better make it home and do something wonderful. I just know he will!! ;)

What I had planned for dinner last night went out the window when I got home. Elizabeth and Jay took us out for Mexican at our favorite place. Afterall it was Cinco De Mayo. Oh it was yummy!! NOTHING like Becky's, but it was good.

What are your plans for Mother's Day? I think all of the kids and Doug's Dad will be here. I think we will grill hamburgers and I want to make a potato salad and Baked beans. I love it when we all can be together. My day will be a blast.

Beautiful here again today. We are dog sitting our grand doggie Addie. Stephanie, Marty & Matthew are in Vegas. I took both on a long walk yesterday - really pooped them out. They and I loved getting out in this weather. It is suppose to be in the 80's tomorrow. I plan on working in my flower beds all day. I can't wait!!

I just got a call from Alan. He may, actually, be on his way home by 6:30 tonight. Keep your fingers crossed. If not, he will leave by 6:00 tomorrow morning, and will be here by noon. I'm hopeful. Jacob came home from school yesterday with a cute Mother's day present. I'll have to post a picture of it. It's a layer of bath salts in a large sundae glass, with a bath pouf on top of it. It looks like an ice cream soda. So cute! He was so pleased with himself that he just couldn't wait until Sunday to give it to me! Darling boy!!! He knows how I like my bath!!!

Dinner tonight is still up in the air. I've pulled out some hamburger so I can throw together a casserole, but it's so beautiful here, and is supposed to get to about 75 degrees. I'd love to throw together a picnic dinner and take the kids to the new park for dinner and some play time. We'll see. If that's the case, it will be sandwiches, potato salad and some pickles. Either way, I'm covered!

One of our NOLA gals had emergency surgery yesterday so we all got together and purchased some gift cards to a local supermarket and pizza place to hopefully cover a few days of meals for her, her DH and her 3 boys. I’m waiting for her to get home so I can run them over to her and see her!

We have reservations for a five course dinner (including champagne;)) for Sunday evening, BUT Kyle informed me they may have practice. I’m so sad about that.:sad1:
 

Lemon Ricotta Souffle pancake

•¾ cups All-purpose, Unbleached Flour
•⅓ cups Granulated Sugar
•½ teaspoons Salt
•4 whole Eggs (separated)
•⅔ cups Ricotta, Whole Or Part Skim
•2 Tablespoons Butter, Melted
•¼ cups Lemon Juice
•1 whole Lemon Zested
•½ teaspoons Vanilla Extract
•2 Tablespoons Butter
•¼ cups Fresh Or Frozen Berries
•1 Tablespoon Turbinado Or Raw Sugar For Sprinkling Over Top
•1 Tablespoon Confectioner's Sugar (for Dusting)
•Light Maple Syrup Or Lyle's Golden Syrup, To Serve
Preparation Instructions
Preheat the oven to 375ºF and preheat a 10-inch iron skillet or saute pan.

Mix flour, sugar and salt in a bowl.

Mix eggs yolks, ricotta, butter, lemon juice, zest, and vanilla in a large bowl and mix well.

Place the separated egg whites in a mixing bowl and whisk to stiff peaks.

Add the flour mixture to the wet mixture and combine well. Add a small dollop of the egg whites and mix in to lighten the batter. Add the remaining egg whites and fold in with a spatula until combined.

Remove the pan from the oven and put the butter in it. When the butter has melted, add the batter, sprinkle a few berries across the top and sprinkle on about a tablespoon or 2 of turbinado sugar. Return the pan to the oven. Bake for 20 to 25 minutes. When the pancake is puffed and lightly browned on top, it is ready.

Serve with a light sprinkling of confectioner’s sugar and serve with syrup of choice.

This was sooo good. Don't let the "souffle" part scare you, It is very easy.
 
He is working today, the management worked it out that the carpenters will walk the front gate so that Buddy's work can use the back gate. These guys are furious........they do not have any carpenters employed at their workplace and cannot understand why the strikers have not just gone to a site if they want to make a point.

DInner last night was grilled steak, salad and corn. Simple but delicious! I planned on grilled chicken but Welby called and asked if the girls could nap here while she did yard work and dug perrenials from her SIL's yard. Her girls are light sleepers so all needed to be quiet here when they finally fell asleep. Then they woke up and :woohoo::dance3:they were wired for sound! She had meat that was thawed and marinated adn way too much for just them so she sent some here. Well, it was a tough decision but Bud and I took one for the team:thumbsup2

DInner this evening is out with friends. We are joining Buddy's boss and his wife and I cannot wait!

Hope things are working out for the strike situation.

How is it when you have a sleepless night the day after is worse than the morning after. I feel like I was hit by a truck.:eek: It is going to be a coffee day since I can't call in today.

Dinner last night was brats and baked potato nachos. I thought the nachos were good but Mr A just thought they were ok. I post the recipe later if anyone is interested.

I forget now what I had planned for dinner:rotfl: I'll be back later when the coffee kicks in.

I actually need the caffeine intake before my eyelashes open enough to hit the top of my head!

Thanks all for the good thought on the outlaws. I really didn't want to say anything here because I was afraid the floodgates would open, besides this is my "happy place." It's really a very sad situation, I'd be happy with being done with them or trying to repair what's left of our relationship- it's this wishy washy in the middle bull that's getting to me. My main concern is my husband will also loose his sisters over this, he has a much younger sister just finishing up college who will be living with them.

I know I'm the newbie on this thread, but if your friendship here with the other Dinner Diners is what I have with the Lasters or the Fogies, then this is exactly what this home is for. Afterall, we all need someplace to vent and share....not just the happy; but the sad. Speaking personally, I always feel much better when a Dis-er offers the electronic shoulder to cry on or support through the written word. I hope it works out for you all. :hug:

Good morning! The cinco de mayo food was good last night. Here is the shrimp seveche with guacamole in the background:

We also had queso fundudo, which we wrapped in tortillas with the guacamole. It is onions, roasted poblano peppers, montery jack cheese, and chicken chorizo sausage. I don't usually like chorizo but I like this kind, it is al fresco brand and it has mango in it. It is spicy and sweet but not overwhelmingly smoky like some chorizo can be:

WFD: John's going to the North End fish market and getting trout. We are going to grill it on a cedar plank along with some new potatoes, asparagus and cherry tomatoes. I'm making a lemon browned butter sauce for the fish.

Thanks, everyone for the congratulations. When I was describing the job to my dad, he couldn't believe how well it fit with my interests. It's part-time, 20 hours/week to start, but that could increase. I'll be able to pick my own hours, so it really is perfect!

I think I'm having croissants for breakfast tomorrow....preferably in bed. My mother has been on holiday in Auckland, NZ this week and she (and my dad) come home tomorrow. So, I'm hoping to visit her and find out how her trip was. She landed in Auckland on the day they had a tornado (I don't know if it made the news in the US...but it is extremely unusual for Auckland to experience a tornado). Other than that, I'm also hoping to get stuck into the garden..weeding!

I am having leftover ricotta pancake thingy with my coffee. That was soo good.

WFD is minestrone soup. I is kind of dreary here today. It is supposed to rain off and on. I made a mistake the other day and opened a can of kidney beans instead of black beans so I have to use up the kidney beans:confused3

Tomorrow I think I am making bacon cheeseburgers with homemade brioche buns.

I'm a rebel but here is what I made for breakfast:

Cucumber - Lime Smoothie


Makes 1 portion - at least for me.


1 cucumber, skin removed, seeds removed, and chopped

Juice of 1 lime

1/2 cup water

1 cup ice

2 TBS honey or your sweetener of choice ( I use 1 TBS honey and 1 Splenda )

TINY PINCH of black pepper

Put it in a blender and let it go until smooth.

Yummo! and even w/o EVOO :rotfl:

Janice- lately you are my reason for no dieting! :lmao: I was salivating over that pancake as I described it to Buddy. He cannot understand how a woman can swoon over any kind of pancake but I figure I will forgive him. For now.

Princess- Thankyou for asking about the strike. Yesterday about 1500 Teamsters and Engineers converged on the meeting site. They did vote to strike and Buddy was teasing that we would live on spaghetti ;). Within 3 hours we got the call that there was an agreement and they can work on Monday. Believe it or not, the main sticking point was with one company that engaged in some very unsafe practices which resulted in a major accident. They are mad at everyone and refused to sign. Buddy said for once it was not the rank and file who everyone was peeved with...it was in the management house. I am glad it is settled, our little group of neighborhood dinner buddies all work together so it would not have been fun. Buddy is a company man for 40 years in the address and felt terrible. His boss and wife were so worried that this would affect us but that would never happen.

Ellen- I hope that your day is wonderful!

Liam sisters- Every time I think of special days I think of the two of you. I hope that you enjoy the day with your Mom/ I must say that I have shared her Sunday beef roast guide with anyone who wants a perfect oven roast so please wish her a Happy Mother's Day for me!

Big Cuddly Bear- Welcome and thank you for the cucumber smoothie recipe. I love that combination but never made one myself. I am going to use this as an incentive to try once again to lose weight!

Marisa is having us for a cookout at her house. I was told not to bring anything but I am going to make some sort of side.

In support of Nola at least she is honest :lmao::lmao:. I hope Welby is able to step back and enjoy these small thorns because it doesn't last long. I miss Mr A's little "adventures' when we would go flower shopping. He liked to go in and out of the huts to find teasures (the flower heads that would fall off) Ok now I feel weepy.

Don't blame me for the no dieting. That pancake is not bad calorie wise. I did not have mine with syrup. However those breadpudding pancakes are sinfulpirate:

Today is beautiful here. I have all the windows open. I have a orange pound cake in the oven. Today is really nice.:thumbsup2

WFD is burgers on the grill, grilled zucchini, Bacon and fried onion strings for the burgers. And of course the cake for dessert.

Yes, Alan made it home late Friday night!!! After a late sleep in on Saturday, he gave me the best present... a new faucet for our Master bathroom! It is so beautiful, and it works without dripping!!! After lunch, the kids cleaned the house (yay), and then went shopping with Alan. They brought home all the fixin's for a bbq in our new town park. We met up with Alan's brother and his family and grilled burgers and hot dogs. We also grilled up some corn on the cob. Yummy! The kids played and laughed, and the adults talked and laughed! It was a perfect evening!!!

Today we went to church, and the men served a Mother's Day Brunch. It was delightful! Lots of fresh fruit, yogurt and granola, and pastries. Nice job, men!!!

Now we are home, and I'm relaxing while Alan cooks dinner. He's making beef tips over rice with steamed broccoli. It smells good. The kids are trying to get along and not fight. If that happens, it will be a miraculous Mother's Day!

I hope everyone else is having a great day! Oh, I forgot to mention that Alan bought me some asparagus starters, and some lavender for my garden. 2 things I've really wanted! Can't wait until they grow enough to look good (and the asparagus can be eaten!).

Nancy, We LOVE Malibu Bay Breezes! That is one of the pink drinks that Tom loves...that and Cosmos...so manly! He just got back from Puerto Rico and brought back some really good rum so we have been enjoying rum and diets. It is really good rum!

Janice, can you share the pound cake recipe? It is nice here today too...for a change. I guess I have to get used to this Pittsburgh weather.
 
Perfect Poundcake ala PW

Ingredients
•3 sticks Butter
•3 cups Sugar
•5 whole Eggs
•1 teaspoon Butter Flavoring
•2 teaspoons Lemon Flavoring
•3 cups All-purpose Flour
•1 cup Sprite, 7-UP, Or Sierra Mist

Preparation Instructions

Preheat oven to 325 degrees.

Cream butter. Add sugar, 1 cup at a time, mixing after each addition. Add eggs, 1 at a time, mixing after each addition. Add butter and lemon extracts and mix well. Add flour, 1 cup at a time, mixing well after each addition. Add soft drink, then mix together until combined. Scrape sides of bowl, then mix briefly.

Pour into a greased Bundt pan and bake for 1 hour to 1 hour 10 minutes, until the cake is no longer jiggly.

Remove cake from oven and invert pan until cake drops out. Slice and chow down


I used Orange soda this time with vanilla and orange extracts.:thumbsup2
