The What's for Dinner Thread- June 2012 (recipe index in OP)

Morning all, I gained 2 pounds over the weekend :confused3, I have no idea how that happened, except maybe from the salt in the corned beef.... But it has to go.

So tonight is Salad, Grilled Chicken and brown rice! Doesn't that just sound so appetizing.

...actually, I roasted a whole chicken and served it with brown rice and broccoli and it was really delicious!
 

I'm going to make meatballs and mushroom sauce over white rice (can't stand the brown stuff) and probably steamed cabbage.

Fran and I REALLY need to get an exercise program going!

ok last night for dinner I threw stuff in the skillet and into a bowl and it came out great...

I cut up chicken in strips, red bell pepper,, and onion, I cooked them on hig and mixed in a cup of brown rice, then added chili powder, garlic powder, salt, and cumin, added a little water and let everything mix up well.

Then in the bowl i made a salad, Romain, cucumber, tomato, and piled the chicken fajita stuff on top of the salad.

Then I mixed greek yogurt and salsa together, to make a dressing and poured it over the salad.

YUMMY!

I need ideas for cheap dinners. I don't like to whine about $$$, but DH & I are feds and so far have to take 26 unpaid days off work... 'nuff said...

I served Hamburger Helper for the first time ever last night. Gag for me, but the boys loved it. ;)

One thing for sure, is to cute out all the boxed, pre packaged stuff, it is much cheaper to make your own and you control what goes in.

Rice, potatoes, and Pasta are nice fillers, makes it seem like you are eating a lot, without much protein ($$$). Lots of fresh vegetables helps too. Try and serve a soup or salad, and that will fill everyone up too.

It's hard with my boys. They ate a 2 pound meatloaf in one sitting! :scared1: And I refuse to eat cheap ground beef, so I would have been better off $$$ wise with steaks!!! :eek: :faint:

That is why I always serve Potatoes or Pasta with it, b/c it will fill them up. That is why most churches serve spaghetti, it is cheap and filling.
 
Anything that you cook with potatoes is good. You can usually find a 10 lb sack around here for about $3.

I usually like to roast a whole chicken for a good cheap meal. They go on sale for less than $1 a pound here and I'll pick up a few and keep them in the freezer. I suppose though, your crowd would finish off a whole chicken in one meal. For us we usually get 3-4 meals out of it, since we eat the chicken as such and then use the leftover meat for chicken and dumplings, chicken salad sandwiches, Jambalaya, casseroles, etc.

Check out Hams this time of year. They usually go on sale for Easter and we can get them for about $.79 per pound. I would imagine that a 14 lb ham would last you guys for a few meals. They're super easy to cook, just roast it in the oven for about two hours. In the last half and hour pour a simple glaze over the ham.

I make the glaze with a jar of apricot, pineapple or peach jam, a tablespoon of mustard, and 2 teaspoons horseradish. Just heat the jam, mustard and horseradish in a saucepan until warmed and pour it over the ham.

You can make ham sandwiches, ham and eggs, chef's salad, all sorts of things with the leftovers. You can even make scallopped potatoes for pretty cheap as long as you don't use Gruyere cheese to top the potatoes.
