The What's For Dinner Thread - Feb '09(recipe index in OP)

Dinner tonight is my good old stand-by, chicken strips! :rotfl: It's okay though, I haven't had them for a while now. Unless, that is, my DM's friend makes corned beef and cabbage. She was going to call her and see if she was planning on making it this week.
 
Maria - No, I haven't had my ear drum pierced, but just the sound of it makes me squeamish. That has to hurt something awful.

Aimee - That pork tenderloin receipe sounds good. I'll have to print a copy of that recipe.

Kathy - No hurry, but when you get a chance to update the first page, please change my resort for F&W. We're still going 10/17 - 10/24, but we will be staying at Bay Lake Tower.

Tonight's dinner is roasted turkey breast with rice and gravy and one of Kenny's requests, corn pudding. I know, nothing but starch, but I'm feeling guilty about leaving everyone behind for my mother daughter weekend.

Kathy- I just saw your message from last week, thanks for thinking of us.

Sheryl- I look so young, on a good day I might look 20. I know that sounds great, but when I'm out with my daughter I really get a lot of comments from people and feel like I need to defend my age, which is really none of there business. I'll be at the grocery store and people ask my why I'm not in school. Really, if I was skipping school do they think I'd go grocery shopping? I just hope I don't go from looking really young to really old overnight!

Lauren- I loved the pictures, your really making me want to hop on a plane and meet my little nephew who was born in July.

Glynis- Congratulations to little Timothy!!

Aimee- How is Ace enjoying being inside? I remember when we brought our pup home he had never seen a sliding glass door and it took him a few bumps to figure that one out. He must enjoy having a full tummy.

Scotlass- What do you put in your chicken casserole? All the recipes I see have cream of something soup and that's not for me, but casseroles always look so good.

Tonight's dinner is black bean soup, hopefully it's good because my daughter finished off the cornflakes for breakfast. Keilbasa and pierogies for a back up I think. Kiddo has a half day today for parent conferences so I'm off to do the work I usually stretch out all day. Have a good day all.

Thank you for all the kind words about the pics I posted. We are really enjoying the baby and Andrew is so good with him. We have gotten into the routine of the boys waking up around the same time in the AM and while I take care of a couple things that I need to, Andrew snuggles with Thomas. It really is sweet! :cloud9:

I have my corned beef on the stove. I am making that now and then reheating in the oven later. I will cook the cabbage, potatoes and carrots in the reserved liquid later (after the doctor's).

I Nanatized Glynis, Kat and Maria's recipes. I boiled the beef for the first hour the way Glynis does but added beer like Maria and added some peppercorns. I then drained and put new water in and the spice packet. I made Kat's glaze and added 2 tsp horseradish, black pepper and about 6 dashes of soy sauce...it tastes really good.

I also have some soda bread. Yummy! I can't wait for later!!!

Maybe you can get some ideas from the Raglan Road menu...I could go for some of that chowder and I am sure you would make that really really good!

That's a good idea. I'll head over to allears in a bit. I was considering mussels, but I have not had them in such a long time, I don't know if I still like them or not!

Here is a photo of last night's dinner. The chicken and asparagus stir fry is a weight watchers recipe that I was testing for someone. It was pretty good--if I made it again I would cut the chicken into smaller pieces, as it was kind of hard to eat. Additionally, I did not think that there was enough vegetables for the amount of chicken. For four servings, the recipe called for 1 lb. of chicken and 12 asparagus spears. I used the entire bunch of asparagus (probably about 30 spears) and I still thought that the ratio of vegetables to chicken was off--it should have had double the amount of vegetables that I put in, I think.

Note that the fried rice next to it is not a weight watchers recipe!! :laughing:

If you are worried about the mayo on the pork chops I have used mustard and they were really good.

Dinner tonight is going to be some spinach ravioli that I picked up at Costco. I'm going to make a spinach, mushroom cream sauce to go on top of it and have some green beans or asparagus with it.

I love those things! I cannot buy them anymore, not WW friendly, but I do sample them becasue at least I can have one. If I had them at home one would just be the first ;)

Did I ever tell y'all about the woman I met at JFK while we were waiting for our flight home from London?

I tend to be an emotion jerk and to sensitive sometimes. DH is smart and tells me I just have to realize people are not going to change so stop expecting for a miracle , I guess. Thanks for always being there for me in a pinch Kat!:hug:

An Emotional jerk is that female on Jerry Springer with the wild hair and the halter top trying to pull her best friends hair out for fooling around with her boyfriend. I agree that ice cream is the best remedy for sensitive women whose hormones are in overdrive. Now why am I craving Chocolate Chocolate Chip?????

I love your Jerry Springer visual :rotfl: . You girls always make me feel better, and the ice cream helped too. I went to the store craving strawberry, but then I could not decide what I wanted. I opted for Strawberry/Vanilla/Chocolate combo...it did hit the spot, I threw a banana in the bowl to.

DH is working tonight as a fill in for someone. I am going to stay home with DS instead of going to my parents. I hate being on the road with the holiday drinkers.

Ok, this may be adding insult to injury considering I haven't posted pictures in a while, but I have to share this: TIMOTHY JUST ROLLED OVER FROM HIS BACK TO HIS STOMACH!!!! I can't believe my baby is big enough to figure that out! Of course, once he got on his stomach, he couldn't figure out how to get back over, and was really mad!

Just had to share with my family!

Ladies, so far I seem to be the old gal at 52.


The Leprechaun visited during the night and what a mischief he was! Kady has been trying to catch him and she made a trap. Well the crafty little guy was not falling for it so he left her a Shamrock Lolly pop, a pin and $5. He also left her some books about Leprechauns so maybe she will read some more to learn how to bait them. Chocolate wrapped gold coins did not fool him, he just ate the chocolate and left the foil behind. He made quite a mess with his "dust" falling out from his coattails so Nana has work ion front of her.

Dinner is corned beef a cabbage, carrots, turnips and potatoes. I also have a daisy ham for Marisa so she can enjoy our dinner. Irish soda bread and rye bread as well.

I am going to try to tint a lemon or pineapple cake mix green. Kady does not like the texture of the white cakes I can make for her so maybe this will work, if not her cupcakes may turn blue :confused3 Green Angel cake for the girls.

He has decided he doesn't want to go to summer school, so he is at least attempting to do his homework, etc.

That is an encouraging sign that he is making an effort. I hope he can pull the grades up...for his sake and yours.

Maria -- Thank goodness I never had to have my eardrums pierced, but I did have very painful ear infections as a child. Having an ear drum burst must be worse.

I opted for Strawberry/Vanilla/Chocolate combo...it did hit the spot, I threw a banana in the bowl to.

The banana made it healthy, right? ;)

Robin -- I have always looked young for my age. I would get funny looks and some comments from people when Liam was younger, and it wasn't until about two years ago that I stopped getting carded at liquor stores. It does end up being a good thing. Don't let the rude people make you think it isn't.

I am thinking I might make fish chowder tonight, but I'm not 100 percent certain. My stomach hasn't forgiven me yet for the Chinese food, so I am kind of waiting to see what it feels like eating later. I also have to go get Caili new skates this afternoon, so I am trying to figure out the timing of dinner.

I love Daisy ham. It reminds me of my Nana and my DM. DM boiled one in pineapple juice recently and she serves it with a white onion gravy!!! So good now you have me craving it!!! Enjoy your Irish feast, it sounds wonderful.

Dinner tonight is corned beef and cabbage, colcannon with bacon, Irish soda bread and "pots 'o gold" (lemon jello in cubes).

After dinner we're going to watch "Finnian's Rainbow". Last year we tried watching "Darby O'Gill and the Little People", but the banshee scared my kids to death and I ended up with a bed full of my own little people.

Off to the store to pick up buttermilk!

Since we're telling ages guess I'll play along. I'm 42 as well. Sometimes I feel young and sometimes I feel a lot older!
 
Thanks again for all the warm welcomes. I knew I was in the right place for that, and if I need to vent again anytime soon, I will definitely do it. Things are OK for the moment, though. Tonight we will not get home until nearly 8:00-soccer practice for DD-and my plan is to make individual pizzas for us: ground beef for DH, cheese for DD, and artichoke hearts, sundried tomatoes, mushrooms, olives and feta cheese for me. That will only happen, though, if I can stick to my new rule of not eating out during the week, because when we get home that late the temptation is really there to just pick up takeout on the way home. We'll see what happens...I'll try to be good. Wish me luck with that!

He's feeling better now that he's home. Orlando was extremely dry and that's what was causing his problems.

He's accepted the fact that he won't be getting much playing time until next year. Hopefully he won't be redshirted, I think we'll all be OK with just accepting he won't get much playing time this year.

I know that I am feeling my age lately. I have no idea how Mom's carry that bucket thing...........i look for any reason not to. Nola liked to swing in it and that was one of the times I was happy that Buddy was home. He is a "swinger" ;)
