The What's For Dinner Thread - Feb '09(recipe index in OP)

Just when I was about to give up posting, the page came up.

Gretchen -- Glad to see you back! I hope the worst of tax season is behind you. Your Hailey stories always make me smile. It's nice of your new family member to help out in the mornings. :thumbsup2

Glynis -- Your honey curried chicken recipe sounds good. I wonder if I could sneak it by my two?

I'm not going to get much DIS time in the next few days. Liam's birthday is Saturday, so we have a dinner with my ILs tomorrow after school; a party here on Friday with the neighbors; gymnastics and then a party at my parents' on Saturday, and Caili has a skating competition on Sunday. :upsidedow I will try to check in, but I apologize in advance if I miss some things.

Oh...here is my planned party menu for Friday:
For the kids: pizza, chicken nuggets, fries, carrot sticks.
For the adults: mini pan bagnats, carmelized onion tartlets, curried chicken salad served in puffed pastry shells, spinach and artichoke dip, crudite with dip, and brie and crackers. (It is a picnic theme...except for the spinach dip. I just wanted to make that.)
Dessert: Cupcakes, ice cream, and strawberries and clotted cream
Beverages: Juice boxes and water for the kids; beaujolais, margaritas or beer for the adults (I am guessing/hoping no one will have all three ;) )

Well, after our beautiful 80 degree day yesterday (when I was working), it's in the 30s and raining today. Blech! Gonna go snuggle up with the kids and watch some movies!


What you said! Blech! We had the Spring for the past few days and now it is raw and was rainy. Yuch!

We just got home from dinner at my parents. Have I ever mentioned what wonderful parents I have, I am truly blessed. Dinner was great as usual.
Baked potatoes, fresh french style green beans, ratatouille, and steak.

Going to try to get DS to bed and watch AI. Shhhhhhh, 3 nights in a row.
He has been going to bed late but sleeping all the way through.

What is it with the heat? It was in the 50s outside, and really humid. Basically, it was comfortable. But NOOOOOOO. They had to go turn on the heat really high at work. It was blasting out all day. The fridge said the room temperature was in the high 80s. Opening the windows didn't help today because the air was stagnant.

High 80s + High humidity + stagnant air + WINTER CLOTHES = :headache:

Monday and Tuesday they had the AC on at work and it was nice. Friday it was worse because of the way our building sits. The sun hits our side of the building in the afternoon so that, combined with the heat cranked up, made it horrid!


Ended up having pizza for dinner instead. I had taken a crust out of the freezer with the fish for dinner tomorrow night and decided to switch them. It was pretty good, I put mushrooms, Kalamata olives, green olives and red onions on it. :cloud9:

It is easy to see how you feel about your parents from your posts. You are all truly blessed, as a parent I can tell you that your Mom and Dad feel blessed that you share your life and that of your son with them.

you could try sneaking it past them. They're pretty smart, though. They might surprise you and enjoy it. It's pretty sweet, and you can vary the amount of the curry. I always use the most posted, because I love curry.

Your party sounds good. We have a party for the twins coming up on the 21st. It's tough to do parties for them together, since they are vastly different in their likes. Leslie always wants a Princess or dress up party, and Mary wants something more boyish. This year we compromised. They are having a mini chef party. The kids will decorate small aprons, make chef hats, and decorate place mats. They will each make an individual pizza, a fruit salad on a skewer, and frost a cookie. While they eat, I'll put on Ratatouille. The cake will look like an apron (we hope, I'm not very good at that, but I'll try!). Luckily, I don't have to provide food for any adults except my DH. Here parents drop their kids off at a party and then leave. I'm hopeful it will go ok. I'll post pictures (if I can find the cord. I'm still looking for it).

Yep, we are! The church even more so. They had a watch party at the church last night with the local news there and everything. Too bad I have to work every Tuesday night. But my DH and Dsis made sure to call and give me the number to vote--then I watched on DVR after work.

Laura--Happy Early Birthday to Liam! Sounds like a birthday party I'd love to attend!

Speaking of bday parties--We've been invited to 4 bday parties for 5 kids in the next 3 weeks! AAAAHHH!!! The joys of preschool!

It's beyond miserable here. Pouring hard rain for 10-12 hours straight and temp in the 30s. And of course I had to get the church van out and there is a moat around the building so I was wet up part my ankle - I would literally ring out my socks. I was wet for 4 hours tonight before I finally go home. Stripped before I even got completely into the house and put on warm fuzzy clothes. Yuck!!! Where is that 80 degree weather?!

Here's my recipe for Curried Honey Chicken:

1/4 cup butter, melted
1/4 cup orange juice
1/4 cup honey
2 Tbs. lemon juice
1-2 tsp. curry powder
1 tsp. salt
6 bone in chicken breast halves (I use boneless skinless)
1 tsp. cornstarch
1/3 cup cold water

In a large bowl, combine the first 7 ingredients; set aside 1/3 cup for basting. Dip chicken in remaining butter mixture; place in a well-greased 9X13-inch baking dish. Bake, uncovered, at 350 degrees for 1 hour, basting occasionally with reserved butter mixture. Remove chicken and keep warm. In a small saucepan, combine cornstarch and water until smooth. Stir in the pan drippings. Bring to a boil; cook and stir for 2 minutes or until thickened. Drizzle over chicken.

YUM! I'll be making that soon. Do you serve it with rice or something?

I like to serve the chicken with brown rice and spoon the sauce over the top.
 
Mucinex is my friend! Took it for the first time 3 hours ago and the urge to cough has almost stopped. :woohoo: Decided to try it because the cough syrup and Dayquil I had been using (not at the same time;) ) were both making me loopy and buzzed. :hippie: :hyper: I had to stop using anything last night because it was messing with my ability to sleep.

The last thing you need is something that interferes with your sleep. I was hoping that you were sleeping better but it sounds like that cough got in the way. :hug:

Glynis - I think I am going to make that curried chicken this evening. So you think boneless thighs will be okay? No one here but Jeff likes the white meat.

The :tiptoe: worked...he slept till 8:10 this morning. Four nights in a row, :woohoo: now if I can just get him to bed before 9:30.

Gretchen- What's your new little lady's name? There's nothing like a dog, I can't look at mine and not smile. I'm glad she already feels at home.

Glynis- See, everyone else is getting a dog, you need one too. I'm just joking, we waited until my daughter was old enough to remember getting him and I felt safe leaving her in the house a couple of minutes to take the dog out. I will always remember her face when she asked if we could get a dog and we were able to say yes.

Merle- I'm glad the mucinex is working well for you, I just made my husband take some this morning. He's having a lot of trouble with his lung and he has a bit of "goop" in his throat (your welcome to anyone who just had breakfast) and the coughing really hurts. I'm hoping the mucinex will keep things more fluid and less coughing.

Laura- Happy birthday to my birthday buddy! We are having copycat olive garden sausage and kale soup, salad, and breadsticks. I also have a cake in the freezer that came with the omaha steaks my inlaws gave us for Christmas. I'm not really a cake person, but my daughter thinks birthdays need a cake, so it's really for her. I didn't realize how important the cake part was to her until last year we had make your own ice cream sundaes at her kids party and smores at her family party. If my husbads lung gets really bad and we end up at the hospital, I'll bring the cake and get TGIFridays take out. I really hope we get to have the soup.

I don't really know how my day is going to turn out, part of me hopes we end up at the doctor because I know something is wrong with him, but he's really scared to have surgery again. The other part of me hopes it get's a little better and we can put it off longer. I'm sure everything will be fine- plan for the worst, hope for the best.
