The What's For Dinner Thread - Feb '09(recipe index in OP)

Sheryl- I usually just put in a bag of frozen mixed vegetables and a couple of potatoes I pre cook, I'm actually doing that right now. I had some carrots in the fridge that needed to be used so they are going in. I just boiled them, but I bet they would be good roasted. I also have some frozen peas. I'm basically cleaning out the fridge and freezer so I don't have to go to the store. I got a great deal on pillsbury pie crust and I have a few in the freezer so I'll use those. After thanksgiving, I made a couple of turkey pot pies, but I first lined the pie plate with plastic. Then when they were frozen I popped them out of the plate and wrapped well. Then when I took them out of the freezer I just put them back in the pie plate. I like to sprinkle a little salt and pepper over the crust before I bake it. Well that was long, to answer your question I used frozen mixed veg and potato, but I think leeks would be really good.
 
Sheryl, I put carrots, onions, peas, pearl onions and parsley in my pot pie. I think Laura and I use the same recipe. I think. It's Ina Garten's.

I have lots of bits of leftovers in the fridge--some more of the eh chicken, some meatballs and sauce from the other night, various cheese ends, etc. All this adds up to making panini I think--one meatball one and the other with the leftover chicken.

I did not go food shopping this week, so dinners are going to be (ahem) interesting.

Thanks Robin! There was no need to rush on the answer, I'll do the pot pies tomorrow. Do you do your's with a top & bottom crust? I'm thinking for my 1st shot, I'd just do a top crust with puff pastry like Laura's. Less likely to end up with a gooey bottom crust.
 
Becky, I'll go check out Ina Garten's recipe too! :thumbsup2 Laura posted her version for me a while back & I was going to "wing" it like she does!

Sheryl, I usually use the bisquick recipe for pot pie (I bought too big of a box and need to use it up) and that uses only the top crust. I would love to try Laura's recipe someday but I am not so good at using puff pastry.
 
Dinner tonight might be shrimp. I have to go to TJ's and they are supposed to have large shrimp for $6.99 a pound, have to see what they look like. If not I may just pick something else up.

If I get the shrimp I may just broil them in some barbeque sauce. :cloud9:

CONGRATULATIONS!!! Saturday is going to be a great day! I had a csection and would do it 10 times over! I was up and running in no time at all. Plus Nan cooked for me! All is well with little Emma. Heartbeat was 152, and I am measuring properly.
I had be diabetic screen done but wont know those results for a couple of days. I am up a pound since I got pregnant. I am at 24 weeks.

WFD- pork chops with balsamic sauteed onions, carrots and mashed.

I have some great news too! NO I'm not pregnant! That would be a miracle.

DH & DD went to the MDA Clinic today. With new genetic information & more of DD/SIL's background the dr. said that there is very little chance of them passing on muscular dystrophy!!!! .00000001 or so chance!!! :dance3: :banana: :yay: The dr. suggested one easy bloodtest for DD & if that's good, NOO WORRIES!!!! :goodvibes

You can't imagine what a relief this is to hear!!! :cloud9:
 
How are the road conditions up there?

Everything has been cleared here. I don't know where the town is going to get the money for the snow budget this year though.

As for other vegetables, my mom puts mushrooms in her potpie. I'm not a fan of that though. I've tried spinach, and that was only okay. I am sure leeks would be good. Oh, and I am pretty sure the recipe I posted is not the Ina Garten recipe (which I am sure is delicious too) but I did get the idea to use the puff pastry for the crust from Becky's potpie pictures.

Today it is my goal to find an outfit for Jacob.

I have an unheated sunporch with sliding doors, I have my grill right out one of the doors. I just open the door and there's my grill, I do need a flashlight though.

Are you thinking of phyllo dough, Lauren? For the puff pastry I just take it out of the freezer, put it on top of my baking dish, cut around the edges, brush with butter and bake.

I used to make bisquick biscuits, partially bake them and then top my pot pies. So good!

No cooking for me tonight. I had planned on chicken of some kind but I have an assortment of leftovers in the refrigerator so we will use them up tonight.

yup we did it again. We decided to be practical instead of splurging, and we have gone full circle and will resting our heads this trip at CSR again. No more changes to report I promise ... we saved ourselves $1,300 by doing this downgrade. Neither of us have stayed here, so I am still excited.

I can't believe how much we do this. I told DH you girls are going to start think I am nuts if you don't already!:rotfl:

Wow, great news all around today.

Ann- Emma sounds perfect already, it must be the name! I think you made a great choice changing, but I tend to be cheap. My parents stayed there years ago and enjoyed. $1300 is a lot of baby clothes.

Sheryl- I'm so happy for all of you, you all deserved some good medical news.

Lauren- how exciting, Andrew must be so excited to be a big brother in only days!
