The kids want to have tacos for dinner tonight. Their idea of a taco is lettuce, shredded carrots and cheese. Liam says he wants black beans in his too. This doesn't sound appealing to me, so I will make myself something else.


Where's the meat?! :laughing: I could go with Liam's without the carrots!
 
Lauren -- I'm not sure if brownies would work in cupcake liners. I have seen recipes for brownies in mini cupcake pans, but there were no liners. I am sorry your sister and mom aren't coming.

You would not believe how excited they are for this meal either. When I said I went to the store yesterday, the first thing they asked about was the tacos. Then they asked me again this morning if that was what we were having tonight. :confused3

For the potpie, if you prefer a pie crust, I would just do the top crust. The bottom crust gets really soggy.

Okay, now I have to go get Caili's skates sharpened and get back here before they arrive home. It is a half day today.
 
Hey all, not sure if Mom and sis are coming. My sister is not sure she can get my Mom out of the house...

I just got an update on my brother. He has started Chemo here at a cancer center in NJ and hopefully that will help a bit. The cancer is also in his colon...not good. Thank you for your prayers he can really use continued one.

OK, I have a question...

Andrew wants to bring Brownies to school for his bday. I cannot believe they can do this since for holiday parties it has to be all healthy stuff. Anyway, I was thinking of an easy way to bake them and I was thinking of doing them in cupcake papers.

Have any of you done this? Do I need to do anything different than if I were using cake batter? Spray the paper?

I make little brownies like that no spraying the paper. I have a recipe at home if you can wait till tonight. Other wise you can use a brownie recipe but cook for 20 minutes.
 
Hey all! Yesterday was a very busy day. Meeting with Emma's school principal for next year (nothing bad, she just meets with all incoming new families) And then work, where our computers were messing up every 5-10 minutes. Made what should have been an easy night into a terror. Oh well. It's over.

WFD tonight is RR's Christmas Pasta. Never tried it before, but it sounds really yummy. I needed some Romano cheese for this recipe and there wasn't any cut at the cheese counter, so b/c of this recipe I got to make friends with our cheese man b/c he had to cut me a piece special. Could become a very expensive friendship. Love me some good cheese!

Lauren--enjoy the day with your family. Can't wait to see pics of that little bean! Not long now!

scotlass--my ds had really bad issues with constipation for a while. Have you tried Miralax with him? It worked wonders in our house.

Okay, time to get everyone dressed and off to school

Is the Christmas pasta recipe posted? If it's good will you post it? I usually like RR's stuff. I'm anxious to hear about this one!

Laura, At least their favorite meal is easy! Alexis was actually griping because she had tacos for lunch at school yesterday. I said " I thought you loved tacos?" She replied " Taco day, Taco day, Taco day all the time, when is it going to be Steak Day? " :eek: :confused3 :lmao: Now that would be a good school lunch!

Lauren - your brother is still in my prayers. As for the brownies, I can't believe that you can bring in home made treats! We are forbidden to do that. Everything has to be store bought here. You can definitely do brownies in cupcake liners. I like to spray them for easier release. I like to make them in my mini muffin pans with small paper liners. They are like a 2 bite brownie.

Someone asked about Lori/BeadPirate. I've had a couple of very brief pm's from her, she says she is fine but super busy. I hope that is all that it is. We are having our 1st Ever NOLA Girl's Meet this weekend:banana: & she won't be attending.:sad1: That has me worried.

Sheryl- That is one smart kid! My daughter loves tacos, but hates school tacos- they're to "drippy." It's a good thing she doesn't like them, somehow she ended up with all booksmarts and no common sense. I can only imagine the mess she would make without someone reminding her she has a taco in her hand.

To add to the pot pie confusion, I used a top and bottom crust, but it was a really thick filling. It was also premade, but it didn't get soggy. I think a homemade crust would. There was only a little gravy compared to chicken and veg though. Taste wise, I would use puff pastry.

Laura- I get the same excitment for burritos. The are just meat, beans, and cheese. They'd eat them every night if I let them.

Lauren- I'm sure having a new nephew will really brighten your brother's day!

Bethany- Maybe you could stay with one of those lovely families you talk about! Good luck finding a place to stay, I'm sure something will turn up.

Tonight's dinner is chicken cordon bleu, sweet potato, and broccoli.

Off to pay the stupid excise tax on our cars, stupid MA. (I know stupid not a good word to use, but I think we are the only state with an excise tax.)
 
Robin, Don't worry it will be premade whatever! puff or pie crust, it's not coming from scratch over here! :laughing: Why spend that time on something I'd probably just screw up, when the store bought stuff is so good!

I started on this pot pie trek because DH came home raving over a co-worker's wife homemade pot pie & asked if I would make one! So last night I was questioning him about that darned pie. Sounds like your's, very thick filling, lots of chicken & veggies. So I think I'll concentrate on making the filling really good & top it with the puff pastry. If the man doesn't like it, after all the thought I've put into it, he'll be going into the freezer in place of the puff pastries & pie crusts! :rotfl:
 
As for the brownies, I can't believe that you can bring in home made treats! We are forbidden to do that. Everything has to be store bought here.

I think it depends on the school and the amount of children who have food allergies. Some of the schools here are allowed homemade and some are not.


Dinner tonight will be eggplant parmesan with spaghetti, and creamed mushrooms and spinach.
 
Lauren I forgot to mention I use the foil liners. Ok back to work for me.
 
Sheryl- I make my pot pie filling with sourcream added at the end. I make my own stock if I have time but you don't need to. As long as there is enough chicken flavor from concentrating stock or adding some stock paste it will be good. I also add sauteed onions, cooked potato chunks, carrots and peas. The sour cream is added after it is all incorporated. I use frozen pie crust but have used a phyllo crust as well. It was very good but not as substancial as a pie or biscuit crust.

I hope that the good feeling you have lasts adn lasts!

Lauren- I'm sorry that you may not have a visit with your Mom today. I also hav inclused your DB in my prayers and hope that the therapies used are helping him


Laura- I wish I could figure out what food excites Kady. She has been asking for nuggets every night :headache::headache: and as soon as she gets home from school. And then complains about dinner, she knows tha nuggets are not dinner unless I have nothing else she can eat....that almost never happens ;).

Oh well, back to ironing.

All this talk of chicken pot pie - DH hates it and I really like it! :sad2:

Today is Wed, typical marathon day and we'll be taking kids out tonight for something.
 
Aimee- When I find out what an excise tax is, I'll let you know. As far as I can tell, it's $500 (total for our 2 cars) that I would have been more than happy to save for a rainy day. We are taxed $25 per $1000 of your cars value. Fortunatly, I really think they under evaluate. I almost threw up last year after we bought my husbands brand new truck. The amount drops quickly, but it's still stupid. Thank you for giving me a reason to whine about it more.

Another small request for prayer from me. DD has an appt today, to find out if she is a candidate for a less invasive disc repair. Something called nucleoplasty done with a needle & laser thing instead going under a knife. I'm hopin the dr can do it, but I'm also hoping he can tell her yes or no with some assurance without further testing. The next test called a discography is supposed to be very painful! :scared:

Another pot pie tip for you--if you are going to use the puff pastry, don't put the pastry on the pie before baking, instead cut the puff to the size of your baking dish and bake it alongside the pot pie. That way the pastry puffs really high and is crispy on both sides. Like this! (This is a mushroom pot pie)

Dinner tonight is going to be a warm brie and apple salad with pistachios and honey balsamic dressing, and some baguette.

Someone asked about Lori/BeadPirate. I've had a couple of very brief pm's from her, she says she is fine but super busy. I hope that is all that it is. We are having our 1st Ever NOLA Girl's Meet this weekend:banana: & she won't be attending.:sad1: That has me worried.

There are lots of reasons given as to why we can't do homemade treats anymore. There is fear of kitchen cleanliness, allergies, etc. I've taken to getting small pencils and erasers from Oriental Trading for my kids to bring in on their birthdays. It's a lot cheaper than Krispy Kreme donuts, or something like that.

I used to love making cupcakes to take in on my birthday, but it's a big no-no now.
